Shagbark nuts store well once cured. In-shell and cured, they keep for several months to a year in a cool, dry, ventilated place (the hard shell protects the kernel), and much longer refrigerated. Because the kernels are high in oil, once shelled they turn rancid if kept warm, so store shelled hickory nuts in the refrigerator for a few months or the freezer for a year or more - freezing best preserves their sweet, buttery flavor and is the standard way to bank a big harvest. Always cull floaters and off-smelling nuts, since a few bad ones spoil a batch.

Shagbark offers one other distinctive 'storage' product: hickory syrup. The shaggy bark can be gathered (from prunings or fallen bark), toasted, and simmered to make a fragrant, smoky bark 'tea' that's cooked down with sugar into a rich, amber hickory bark syrup - a genuine regional specialty, shelf-stable like any syrup. Like other tree nuts they're dense in healthy fats, with good protein, fiber, and minerals (magnesium, phosphorus, manganese, and more) and antioxidants - a nourishing, energy-rich nut with an exceptional sweet, buttery flavor. Like all nuts they're calorie-dense, so they're eaten by the handful, and their fine flavor makes them prized for baking and confections.

Ecologically, shagbark is a keystone wildlife tree. Its nuts are a vital fall and winter food for squirrels, chipmunks, wild turkeys, wood ducks, foxes, and many other animals (which also plant the next generation of trees), and its foliage is a larval host for a remarkable number of native caterpillars and moths, including several giant silk moths and the hickory horned devil (the caterpillar of the regal moth) - caterpillars that feed nesting birds. Shagbark hickory has been valued in eastern North America for millennia. Its sweet nuts were a major Indigenous food: peoples across the region gathered them in quantity, pounded the nuts (shell and all) and boiled them, then strained off a rich, nourishing 'hickory milk' or 'pawcohiccora' (the source of the word 'hickory') used to enrich corn dishes and soups - a clever way to extract the nut's oil and nutrition without shelling each one. Settlers adopted the sweet nuts as a wild delicacy, and they remain a treasured (if laborious) forage today.

The tree's wood made an even greater mark. The nuts are hard to crack and the kernel comes out in bits: shagbark's four-ridged shell is genuinely hard - use a heavy cracker or hammer and a nutpick; the flavor rewards the effort. Grubs or holes in some nuts: hickory weevil or shuckworm - do a float test and discard the floaters; sanitation (gathering promptly, removing dropped infested nuts) reduces them.
