Ripe American persimmons are delicious and safe - among the sweetest of native fruits. The one hard rule is ripeness: UNRIPE persimmons are intensely astringent (mouth-puckering) from tannins and are unpleasant, not truly toxic, but eating many unripe fruits has rarely been linked to hard indigestible masses (bezoars) in the stomach, so eat them only fully soft and ripe.
