Overview

The hardy perennial 'pie plant': plant a crown once and harvest tart red-green stalks every spring for a decade or more - just never eat the toxic leaves.

Rhubarb is the reliable perennial of cold-climate gardens: a big, dramatic plant with huge leaves and thick, tart stalks that you cook into pies, crisps, and preserves. Plant a crown once and, with almost no fuss, it comes back every spring for ten to fifteen years or more, often outliving the gardener who planted it. It's one of the first harvests of the year, arriving when little else is ready.

Two things define rhubarb. First, it's a genuine cold-lover — it needs a freezing winter dormancy to thrive, so it excels in the north and struggles where winters are mild. Second, and non-negotiable: only the stalks are edible. The big leaf blades contain toxic levels of oxalic acid and must never be eaten. Cut them off and compost them; eat only the crisp, tart leaf stalks below.

A soil-borne water mold (Phytophthora species) that rots feeder roots and, on many plants, the crown at the soil line whenever the ground stays saturated. Rotted roots cannot take up water, so the plant looks drought-stressed even in wet soil: the canopy thins, leaves go small and pale, growth stalls, and dieback works in from the tips over months or years. It is the commonest cause of death in plants that want moisture but cannot tolerate standing water, and it travels in surface water and on tools, boots and moved soil.

Watch for: Wilting, yellowing and stunting that does not improve with watering, a thinning canopy of small pale leaves, and dieback from the shoot tips. Dig and the feeder roots are dark, soft or brittle rather than white and firm, and on many plants the tissue at the base of the stem is discolored under the bark. Worst in low spots, and wherever a downspout, driveway or compacted path drains into the bed.

Prevent: Drainage is the whole defense. Plant on a mound, berm or raised bed in heavy soil, and never in a hollow that holds winter water. Redirect roof and hard-surface runoff away from the planting, water deeply but infrequently so the surface dries between waterings, do not pile mulch against stems, and do not overwater in cold weather when the plant is using little. Use resistant rootstocks or tolerant varieties where they exist for the crop, and never move soil from an infected area.

Treat: Very hard to reverse once established. Improve the drainage immediately, cut watering back, and mulch with coarse material rather than fine, which stays sodden. Remove severely affected plants and correct the site before replanting - and do not put another susceptible plant back into the same wet spot. Phosphonate (phosphite) treatments can suppress it in a valuable specimen, but drainage and siting do far more.

The main killer of rhubarb, and it takes the crown rather than only the roots: stalks wilt, brown and collapse, and the crown turns soft and foul. Never let water stand over the crown or bury it too deeply. Caught early you can sometimes lift it, cut away the rotted parts, and replant a healthy division into better-drained soil.

Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.

Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.

Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.

Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.

Flower stalks are a favorite aphid site - removing them promptly, which you want to do anyway, takes the colonies with them.

Slugs and snails are nocturnal mollusks that rasp ragged holes in soft leaves, shear off seedlings at ground level, and chew into ripe fruit that touches the soil. They feed at night and in the early morning and spend the day hidden under boards, pots, dense mulch, leaf litter, and low foliage, becoming active in exactly the cool, damp, shaded conditions that suit young plants. Damage is heaviest in wet spells and on tender spring growth: a single wet week can erase a row of seedlings while an established, tough-leaved plant of the same species is barely marked. They lay clusters of small pearly eggs in damp soil and under debris, so a garden with plenty of cover carries a resident population year after year rather than being invaded from outside.

Watch for: Irregular ragged holes chewed out of the middle of leaves and along the edges - not the clean-edged cuts a caterpillar leaves. Seedlings that vanish overnight, or that are cut off at soil level with nothing left behind. Silvery dried slime trails across leaves, soil, pots, and paving in the morning: this is the giveaway that tells you it was mollusks rather than an insect. Chewed pits in ripe fruit, especially where it rests on the ground. Damage that shows up on the lowest, dampest leaves first and gets worse after rain or evening watering. Turn over a board, an upturned pot, or a clump of dense mulch during the day and look for the animals themselves sheltering in the cool underneath.

Prevent: Take away the daytime shelter first: lift boards and upturned pots, clear piles of debris, keep dense mulch pulled back from crowns and stems, and give crowded plantings enough airflow to dry out. Water in the morning rather than the evening so the surface is dry by the time they come out. Copper tape around containers and raised beds gives them a shock they will not cross, and it is the one barrier that reliably works. Get plants past the vulnerable stage quickly - start seedlings in pots and set them out at a decent size rather than direct-sowing into a cold wet bed, since most plants stop being worth defending once the leaves toughen. Leave the ground beetles, frogs, toads, and ground-feeding birds alone, because they eat mollusks all night for free and broad-spectrum slug pellets kill them too. Where thick-leaved or resistant varieties exist for what you are growing, they take far less damage.

Treat: Hand-picking works and costs nothing: go out an hour after dark with a headlamp, drop what you find into soapy water, and repeat nightly for a week or two - persistence is what wins, not any single product. Shallow beer traps sunk to soil level catch them too, but need emptying and refilling daily to be worth anything. Iron-phosphate bait is the standard control and is far lower-risk around pets and wildlife than the old metaldehyde products, but it is not harmless: many formulations include EDTA, and a dog that eats a quantity of pellets can develop iron toxicosis. Scatter it thinly per the label, never in piles, and keep dogs off a baited bed. Clear fallen foliage and debris in autumn, where the eggs are laid. In a wet climate this is a population you manage each season rather than one you eradicate - and on most established plants light grazing is cosmetic and needs nothing at all.

The easy, standard way to start rhubarb is from a crown or division — a piece of root with at least one growing bud — planted in early spring (or fall in milder zones). Choose a permanent spot in full sun (afternoon shade helps in warm regions), because the plant will live there for a decade or more. Rhubarb is a heavy feeder and hates wet feet, so dig in plenty of compost or aged manure and make sure drainage is excellent.

Set the crown so its buds sit just 1-2 inches below the surface, and space plants a generous 3-4 feet apart — a mature rhubarb is enormous. Water it in, mulch, and then practice the hardest part: don't harvest the first year. Let the plant build its root crown all season. You can grow rhubarb from seed, but it's slow and won't come true to type, so crowns are far preferred.

Temperatures in the upper 20s or low 30s usually do little harm, but a hard freeze in the mid-20s°F or lower can damage the plant — extension services advise pulling and discarding any stalk that has gone limp or mushy, or whose leaf is blackened or water-soaked, even if the stalk itself still feels firm. If the plant shows no damage after two or three days, harvest as normal, and stalks that push up after the freeze are fine.

Storage

Refrigerate stalks up to two weeks, or freeze chopped rhubarb raw for year-round pies and sauces; it also cans and makes preserves beautifully.

Fresh rhubarb stalks keep 1-2 weeks in the crisper, unwashed and wrapped loosely; trim and discard the leaves before storing. Stalks that have gone limp in the fridge crisp up again standing in cold water (this does not apply to stalks frost-damaged in the garden — discard those).

Rhubarb is a superb freezer crop and this is how most gardeners handle the spring glut: simply chop the raw stalks into inch pieces and freeze them on a tray, then bag — no blanching needed — ready to drop straight into pies, crisps, and sauces all year. It also cooks down into excellent jams, compotes, and sauces that can or refrigerate well, and pairs classically with strawberries. Because you always cook rhubarb with sweetening, preserved rhubarb loses nothing that fresh would have offered.

Growing across climates

A true cold-lover: superb in zones 3-6, good in 7-8 with afternoon shade, and a real struggle in 9+ where winters don't deliver the required chill.

Rhubarb needs a cold winter dormancy — roughly 500 hours below about 40°F — to form new buds, which makes it the opposite of a warm-climate crop. Zones 3-6: ideal country; rhubarb is one of the most dependable perennials, shrugging off winters to -40°F and surging every spring. Zones 7-8: workable but plant it in a cooler spot with afternoon shade, mulch the crown, and water faithfully through summer heat — the plant may go summer-dormant and revive in fall. Zone 9 and warmer: a genuine struggle — without enough winter chill the crown weakens and declines over a few years, so warm-region gardeners often grow it as a short-lived annual/biennial from fresh crowns, or skip it. Everywhere, sharp drainage is as important as cold; a crown in cold, wet soil rots regardless of zone. Rhubarb's message is simple: the colder your winter, the happier your rhubarb.

Troubleshooting

Thin stalks mean a crowded, stressed, or over-harvested crown; bolting is age or heat; a wilting collapse is crown rot from wet soil.

Small holes in stalks or a wilting single stalk: the rhubarb curculio, a large snout beetle, occasionally bores in; remove affected stalks and clear nearby weedy hosts like dock and thistle. Ragged holes in young leaves: slugs early in spring (see Threats).

Nutrition

Low-calorie and high in vitamin K, fiber, and antioxidants - but very high in oxalates, and almost always eaten with added sugar.

Rhubarb stalks are low in calories and sugar on their own, high in fiber, and a good source of vitamin K, vitamin C, and potassium, plus antioxidant compounds (including anthocyanins in the red types and polyphenols). That said, its real-world nutrition comes with an asterisk: rhubarb is nearly always cooked with substantial sugar to tame its tartness, so a slice of rhubarb pie is a dessert, not a health food.

Two honest caveats. Rhubarb is high in oxalates even in the edible stalks (the leaves are dangerously so), which is worth knowing for anyone prone to kidney stones. And the stalks' tartness is largely malic and oxalic acid, not sugar — the sweetness on your plate is added. Enjoy rhubarb for its bright, tart flavor and its fiber and vitamin K; just don't mistake the sweetened dishes for a light one.

Propagation & seed saving

Divide the crown every several years in early spring - the standard, reliable way to make new plants that come true and rejuvenate old ones.

Rhubarb is propagated almost entirely by crown division, which conveniently doubles as maintenance. Every 5 to 8 years — when a plant gets crowded, woody-centered, and starts making thin stalks — dig up the dormant crown in early spring and split it with a sharp spade or knife into fist-sized pieces, each with at least one healthy bud (an 'eye') and a good chunk of root. Replant the divisions 3-4 feet apart and you've turned one aging plant into several vigorous new ones, all true to the parent.

Division rejuvenates the plant and is the only way to keep a named variety true — because rhubarb grown from seed does not come true to type and takes an extra year or two to establish. Seed-grown rhubarb is a gamble in flavor and color, so it's mostly a curiosity. Stick with division: it's easy, free, keeps your best plant going indefinitely, and gives you extras to share — the reason a good rhubarb variety can be passed down a neighborhood for generations.

Rhubarb has a serious medicinal history — but mostly a different species. The dried root of Chinese/Turkish medicinal rhubarb (Rheum palmatum and relatives) has been a major herb in Traditional Chinese Medicine for over 2,000 years, used chiefly as a laxative and digestive purgative (its anthraquinone compounds are genuinely active), and it was so prized that it was a valuable trade good along the Silk Road. For the plant on your plate, keep it honest: the edible stalks are a fiber- and vitamin-K-rich food, not a medicine, and the folk 'spring tonic' reputation is mild at best. The real health note is a caution rather than a benefit — rhubarb is high in oxalates, so people prone to kidney stones should be moderate, and the leaves are outright toxic and never medicinal. History
