Pineapple
Ripe pineapple is food; green pineapple is not - unripe fruit and its juice are a harsh throat irritant and a strong purgative. Even ripe fruit carries bromelain, a protein-digesting enzyme, alongside calcium oxalate needles, which is why a lot of fresh pineapple leaves the mouth raw; the effect is real, harmless, and destroyed by cooking. Most varieties have hooked spines down every leaf edge that cut skin - wear gloves and long sleeves, and keep spiny plants well back from paths and children.
Overview
A bromeliad, not a tree fruit - a spiny ground rosette that you can start from the top of a supermarket pineapple. It fruits once, in about two years, then hands off to its suckers. Ripe only: it never sweetens after picking.
The pineapple is the most familiar tropical fruit in America and almost nobody knows what the plant looks like. It is a terrestrial bromeliad — a low, tough rosette of long, stiff, usually spiny leaves sitting on the ground, three feet across at most, with a single fruit pushed up on a short stalk from the centre. It is a relative of Spanish moss and of the air plants people keep on shelves, and it behaves like one: it drinks through the cup at the centre of its rosette, it stores water in its leaves, and it tolerates drought that would kill most fruit.
It is also the easiest fruit plant in the world to acquire, because you can start one from the crown of a supermarket pineapple for free. The catch is patience: a crown takes roughly two to three years to reach fruiting size, and a fruit takes another five to seven months to fill after flowering. The plant then fruits once and dies, having already produced suckers around its base and slips on the fruit stalk that carry the line on — and those fruit considerably faster than the original crown did.
Two things everyone should know before growing one. First, a pineapple does not sweeten after it is picked. It softens and gets juicier, but every gram of sugar is made on the plant, so the whole point of growing your own is waiting until the shell has gone gold at the base. Second, most varieties are armed: hooked spines run the length of every leaf edge and they cut. Smooth Cayenne and its descendants are nearly spineless and are what you want anywhere near a path or a child.

Mealybugs High
Soft, slow-moving sap-suckers that coat themselves and their egg masses in a white waxy fluff, so a colony looks like scattered specks of cotton wool rather than like insects. They wedge into the places hardest to see and hardest to spray - leaf axils, crevices, stem joints, leaf undersides, the base of the plant, and sometimes the roots - and feed there for weeks, weakening growth and excreting sticky honeydew that blackens with sooty mold. Ants farm them for that honeydew, carry them from plant to plant, and drive off the predators that would otherwise control them. Populations explode in warm, dry, still air, which is why indoor and greenhouse plants suffer worst.
Watch for: White cottony masses tucked into leaf axils, crevices and stem joints, which smear rather than brush off. A sticky shine on the leaves and on the surface beneath the plant, later blackened with sooty mold. Ants running steadily up and down the stems - often the first thing anyone notices. Yellowing, stunted or distorted growth with no other obvious cause. On a plant that has been treated repeatedly and keeps declining, check the roots, because root-dwelling mealybugs are easy to miss entirely.
Prevent: Inspect new plants thoroughly before you buy, and quarantine anything you bring indoors for a few weeks - mealybugs almost always arrive on another plant rather than flying in. Check leaf axils and crevices every few weeks on anything grown under cover, since a colony found early is trivially dealt with. Control the ants that protect and spread them; a sticky barrier on a pot rim or a stem does a lot of work. Keep plants unstressed, avoid heavy nitrogen feeding, and do not leave them standing in hot, dry, stagnant air.
Treat: Deal with small colonies mechanically: dab them with a cotton bud dipped in rubbing alcohol, wipe them off with a damp cloth, or wash the plant down with a firm jet of water aimed into the crevices where they hide. For anything larger, spray insecticidal soap or horticultural oil directly onto the insects, which means getting into the axils and undersides where they actually live, and repeat every seven to ten days for at least three rounds, because the waxy coat protects them and contact sprays do not kill the eggs. Cut out badly infested growth rather than nursing it, deal with the ants at the same time or the colony rebuilds, and test any oil first, since it can burn foliage in heat.
The single most serious pest of pineapple, and not because of the feeding: the pineapple mealybug transmits the viruses behind mealybug wilt, which kills plants outright. Ant control is the practical lever, since ants carry mealybugs from plant to plant. They shelter deep among the leaf bases, so any treatment must be aimed down into the axils, and plants overwintered indoors need checking monthly.
Mealybug Wilt of Pineapple High
The most destructive disease of pineapple worldwide, and an unusual one: it appears where mealybugs feed on a plant carrying pineapple mealybug wilt-associated viruses, and neither the insect nor the virus alone reliably produces it. Affected plants turn a striking red or pink-bronze, the leaf tips die back and curl inward, the leaf edges roll, growth stops, and the root system collapses so the plant wilts even in moist soil. It usually kills, and any fruit produced is small and worthless. Because the viruses are carried in planting material and moved between plants by mealybugs, which are in turn carried by ants, the disease travels with crowns, slips and suckers taken from affected ground.
Watch for: Leaves reddening or turning a pink-bronze colour across the whole plant, which is dramatic and easily mistaken for sun colouring or a nutrient problem at first. Leaf tips dying back, browning, and curling downward and inward, with the margins rolling. A plant that wilts and looks drought-stressed while the soil is plainly damp - the sign that the roots have gone. Growth stopping entirely, and any fruit staying small. Mealybugs and their attendant ants down in the leaf axils and around the base, which is the necessary precondition.
Prevent: This is a disease you keep out rather than cure. Take crowns, slips and suckers only from healthy, mealybug-free plants, and be wary of planting material from an affected bed. Control mealybugs continuously, and control ants, which are what move mealybugs from plant to plant - a sticky barrier or ant bait around a bed or pot does more than anything you spray on the leaves. Remove and destroy affected plants promptly instead of leaving them among healthy ones, and do not replant pineapple straight back into ground where the disease has appeared. Keep plants growing steadily, since stressed plants show symptoms soonest.
Treat: There is no cure. Remove and destroy affected plants, and treat the mealybug and ant population in the surrounding bed or pots as the real target. Healthy suckers from a plant showing symptoms should not be used as propagation material. Replant clean stock elsewhere.
Rare on a single houseplant pineapple with no mealybugs; a serious risk in old pineapple ground and in warm climates where ants are abundant. If your plant is reddening, curling and wilting in damp soil, look for mealybugs in the leaf axils before blaming the watering.
Heart & Root Rot High
Phytophthora water molds attack pineapple through the base of the plant and the heart of the rosette, and they are the classic killer of pineapples in cold, wet soil or in a container that stays saturated. The centre of the plant rots first: the young leaves go pale or yellow at the base, then soft and water-soaked, and the whole heart can be lifted out of the plant in one piece, leaving a foul-smelling cavity. Root rot from the same organisms produces a plant that wilts and reddens while standing in damp ground because it no longer has functioning roots. Cool weather plus wet soil is the combination that triggers it, which is why it appears in winter, in heavy ground and in overwatered pots.
Watch for: The central cluster of young leaves going pale, yellow or brown at the base and pulling out of the plant with a gentle tug - the definitive test, and the definitive bad news. A sour or foul smell from the centre of the rosette. Water-soaked, translucent, soft tissue at the base of the leaves rather than dry brown damage. A plant that wilts, reddens and stops growing while the soil is clearly moist. Symptoms appearing after a cold snap, a wet winter, or a spell of overwatering in low light.
Prevent: Drainage and restraint. Plant into sandy, sharply draining, slightly acid soil or a cactus-type mix, on raised ground or a mound in heavy soil, and never in a low spot that holds water. Water into the cup and onto the soil, then let the top few inches dry out completely before watering again, and cut back sharply in cool weather and low light when the plant is barely growing. Do not let a pot stand in a full saucer. Let crowns, slips and suckers callus for several days before planting, and keep them on the dry side until rooted. Avoid piling mulch or organic matter against the base of the plant.
Treat: A plant whose heart has rotted cannot be saved - remove it and do not replant pineapple into the same wet spot without fixing the drainage first. If the rot is caught at the base of a plant that still has firm healthy suckers, those suckers can be cut away, allowed to callus, and rooted as clean replacements. Discard rather than compost affected material. Everything else is prevention: this is a disease of conditions, and correcting the drainage and the watering is the only durable answer.
The commonest way a home pineapple dies, and almost always self-inflicted - an overwatered pot in a cool room, or a crown planted fresh and wet. A pineapple would far rather be too dry than too wet.
Root Rot Medium
Root rot is not one organism but a group of soil fungi and water molds - Pythium, Phytophthora, Fusarium, Rhizoctonia and others - that sit harmlessly in most soils and only turn destructive when the ground stays saturated. Waterlogged soil drives the air out, the roots suffocate, and the weakened tissue is invaded and goes soft, brown, and stringy. Because the damage is underground you usually see it first as something that looks like drought: wilting, yellowing, stunting, a plant that does not respond to being watered. Overwatering, heavy compacted ground, a low spot that collects runoff, a pot with no drainage or a saucer left standing full, and cold wet soil in winter are the usual causes. Once roots have actually rotted there is no cure - this is a problem you prevent rather than treat.
Watch for: Wilting in the middle of the day on a plant whose soil is damp - the classic tell, and the reason people water a rotting plant and finish it off. Leaves yellowing from the bottom up, dull off-color foliage, and growth that stalls for no visible reason. Whole shoots, or one side of the plant, collapsing while the rest still looks fine. Soft, dark, or mushy tissue at the base of the stem or at the crown, sometimes with a sour smell. Lift a failing plant and look at the roots: healthy ones are firm and pale, rotted ones are brown or black and slimy, and the outer layer slips off between your fingers leaving a thread of core behind. Seedlings that topple over at soil level are the same problem, called damping-off.
Prevent: Drainage is the whole defense. Match the plant to the site first - something that wants sharp drainage will not survive heavy clay or a low, water-collecting spot however well you tend it. Where the ground is heavy, plant on a raised bed, berm, or slope, or grow in a container. Set plants at the depth they were already growing, since burying the crown or the root flare is a common cause of rot, and keep mulch pulled back a few inches from the stem base instead of piled against it. Water the soil rather than the calendar: check that the top inch or two is dry before watering again, cut back hard in cool weather and winter dormancy, and never leave a pot standing in a full saucer. Do not plant or dig in soggy ground, and go easy on rich amendments for plants that want it lean. Rotate annual crops, and start with clean healthy plants and fresh mix.
Treat: There is no cure for tissue that has already rotted, so act on the conditions rather than looking for a spray. Stop watering at once and fix the drainage - open up compacted soil, or move the plant to a raised, sharply drained position or a container. Lift a badly affected plant, cut away every soft dark root and rotted section with a clean blade back to firm pale tissue, and replant only the healthy parts into fresh free-draining soil or mix. Often the better move is to give up on the plant and save its offspring instead: cuttings, offsets, or divisions taken from firm healthy growth root readily and give you a clean start. Bin the rotted material rather than composting it, and correct the drainage before you replant, because the rot comes straight back in the same wet spot.
Chiefly a problem on newly planted crowns kept wet before they root, and on container plants overwintered indoors in cool, low-light conditions and watered on a summer schedule. Let cuttings callus before planting, keep them barely damp until new growth appears from the centre, and cut winter watering right back.
Scale & Sooty Mold Medium
Scale insects are sap-suckers that spend most of their lives immobile, fixed to a stem, twig, or leaf underside beneath a waxy or shell-like cover. They look far more like bumps, blisters, or crusty encrustations than like insects, which is why an infestation is usually well established before anyone notices it. Soft scales excrete large amounts of sticky honeydew that drips onto everything below and grows a black sooty mold - and those blackened leaves are often the first thing a gardener actually sees. Armored scales produce no honeydew but sit under a hard shield that protects them from most sprays. They spread as tiny mobile crawlers in the weeks after hatching, which is the only stage that moves and the only stage that is easy to kill. Populations build on stressed plants, on crowded shaded growth, and above all on plants kept indoors in dry, still air over winter.
Watch for: Rows of small brown, tan, black, white, or waxy bumps along stems, twigs, leaf midribs, and leaf undersides that do not brush off but can be scraped loose with a fingernail. A sticky shine on the leaves - and on the floor, table, or path beneath the plant - that later turns black with sooty mold. Ants running steadily up and down the stems, since they farm and defend scale for that honeydew; often the first sign anything is wrong. Yellowing leaves, weak thin growth, and dieback of individual branches or canes that are heavily encrusted. On fruit crops, scale covers and sooty mold directly on the fruit. Check the leaf undersides and the shaded inner wood, which is where colonies build up unseen.
Prevent: Inspect. Look over leaf undersides and stems regularly - on a crop you pick, every harvest is a scouting chance - and check every new plant thoroughly before you buy it, plant it, or set it beside anything else, because scale almost always arrives on a plant rather than flying in. Quarantine new houseplants for a few weeks. Keep plants unstressed and not over-fertilized, since soft, forced growth is what populations build on. Prune for airflow and light to open up the shaded inner growth where scale hides, and prune out heavily infested wood as routine maintenance - on anything that gets a hard annual pruning, that alone removes most of any buildup. Leave the lady beetles, lacewings, and parasitic wasps alone, since they normally keep scale down to nothing, and keep ants off the plant where you can, because ants protect the colonies from those predators. Indoors, avoid hot, dry, still winter air.
Treat: Horticultural oil is the main control: it works by smothering, so it has to coat the insects thoroughly - stems, twigs, and leaf undersides - and it usually needs repeating, because the waxy covering shields them and no single pass reaches everything. On deciduous woody plants a dormant-season oil smothers the overwintering stage while the leaves are out of the way, and timing a growing-season spray to the crawler stage, when the young are mobile and uncovered, is far more effective than spraying settled adults. On a small plant or a light infestation, scrub or wipe the scales off by hand, or dab them with a cotton swab of rubbing alcohol. Prune out and destroy badly encrusted wood rather than trying to save it. Wash off the sooty mold once the scale is gone - it lives on the honeydew, not on the plant, and stops once the supply does. Anything you spray must be labeled for the plant, and oils can burn delicate foliage, so test first.
Pineapple scale settles in rows along the leaf undersides and down in the axils, and builds up fastest on plants overwintered indoors in dry, still air. There is no wood to prune out here, so treatment means wiping, washing, and oil sprays aimed down into the leaf bases - and dealing with the ants at the same time.

The pineapple that took over the fresh market in the 1990s and the one most people now think of as normal: noticeably sweeter and lower in acid than Smooth Cayenne, with deep golden flesh, about four times the vitamin C, and better keeping quality. A Cayenne descendant, so it shares the smooth, comfortable leaves. Sold as Gold, Extra Sweet or Del Monte Gold.

The variety that built the industry and still the standard against which pineapples are judged: large cylindrical fruit of four to six pounds, pale yellow, juicy, with a well-balanced sweet-acid flavour and a tough core. Its nearly spineless leaves make it much the most comfortable pineapple to grow at home. This is the pineapple James Dole canned in Hawaii, and the parent of most modern varieties.

It is also the most viciously armed pineapple in common cultivation, with large hooked spines the full length of every leaf, so site it where nobody will walk into it.

A group of low-acid, white to pale-yellow-fleshed pineapples sold under several regional names, prized for exceptional sweetness with almost no acid bite and a core soft enough to eat whole. Kona Sugarloaf from Hawaii is the best-known. Leaf spininess varies between strains sold under this name, so check the plant before you handle it rather than assuming.

Twist (do not cut) the leafy top off a ripe fruit, strip the lowest inch of leaves to expose a stub of stem, and leave it in the shade for a few days until the cut has callused. Then plant it just deep enough to stand up in a free-draining mix and water it sparingly for the first two months, because a crown has no roots yet and cannot use much water. Rotting a crown by keeping it wet is the single commonest failure.
Give it full sun (part sun is tolerated, at the cost of a smaller fruit), and soil that is sandy, acid and sharply drained — a cactus or citrus mix with extra perlite for a container, or a raised sandy bed in the ground. Pineapple genuinely does not want rich, moisture-retentive soil. Feed lightly every four to six weeks in warm weather with a dilute liquid feed poured into the central cup as well as onto the soil, since a bromeliad absorbs a lot through its leaf bases.
Then the honest part: you are growing a plant, not a fruit, for about two years. A pineapple flowers when it reaches size, not age — roughly thirty mature leaves, or a rosette two to three feet across. Until then, nothing you do brings fruit closer except good light, warmth and steady growth. Once it is big enough you can force flowering with the apple-in-a-bag trick described in Care. In zones 10 and 11 grow it in the ground and let a bed renew itself from suckers forever; anywhere colder, grow it in a pot that lives outdoors for the summer and comes in before frost.
Care
Water into the cup and let the soil dry between; feed dilute every few weeks; force flowering with ethylene once the plant is big enough; and keep it above freezing.
Water like a succulent, not a tropical. Fill the central cup, water the soil, then let the top few inches dry out completely before doing it again. A pineapple uses CAM photosynthesis and stores water in its leaves; it shrugs off a dry fortnight and rots in permanently damp soil. In winter, or indoors in low light, cut back sharply. Feed a dilute balanced liquid fertiliser into the cup and over the leaves every four to six weeks in warm weather — never anything strong or undiluted, which burns the growing point.
The trick worth knowing is forcing. A pineapple that has reached fruiting size can be pushed into flower on demand with ethylene: let the soil dry a little, seal a ripe apple or two inside a clear plastic bag over the whole plant for four to seven days out of direct sun, then remove it. A red-purple flower cone appears in the centre six to ten weeks later. It is a genuinely reliable technique — commercial growers do exactly the same thing chemically — but it only works on a plant already big enough, so it is a scheduling tool, not a shortcut.
Cold is the hard limit: damage below about 32°F, death below 28°F, and no root system to resprout from. Outside zones 10 and 11, that means a pot that comes indoors to the brightest available spot. The pests worth watching are mealybugs and scale deep in the leaf axils, especially on plants overwintered indoors, and the ants that farm them; in old pineapple ground, mealybugs also carry the viruses behind mealybug wilt. Wear gloves and long sleeves for any work on a spiny variety.
Harvest
Wait for gold at the base, a strong sweet smell, and a dull solid thump. A pineapple never gains sugar after picking - waiting is the entire advantage of growing your own.
Everything about harvesting a pineapple follows from one fact: it makes no more sugar once it is cut. It will soften, get juicier and go slightly less acidic on the counter, but a pineapple picked green stays a green pineapple in every way that matters. Commercial fruit is picked early so it survives shipping, which is precisely why a homegrown one, left to go gold on the plant, tastes like a different fruit.
Read four signs together. The shell colour turns from green to gold starting at the base and moving upward — wait until at least the bottom third has turned, and further for the sweetest fruit. The smell at the base becomes strongly, obviously sweet. The eyes flatten and fill out, and the fruit gives very slightly under a squeeze. And flicking the side with a finger gives a dull, solid thud rather than a hollow sound. Cut it off with a short length of stalk, wearing gloves and long sleeves.
Leave it too long, though, and it ferments, splits and attracts flies and rats, so a fully gold fruit should come off promptly. When you harvest, look at what the plant has made besides fruit: suckers at the leaf bases and slips on the fruit stalk. The mother plant fruits once and slowly dies, so leaving one or two suckers in place, or potting them up, is how a pineapple bed keeps producing — and a sucker fruits in about half the time a crown takes.
Storage
A few days at room temperature to soften, then about a week refrigerated whole. Cut fruit keeps days; the flesh freezes and dries well, and grilling or canning is the classic way to use a glut.
An uncut pineapple keeps a few days at room temperature, during which it softens and becomes juicier — but remember it is not getting sweeter, so there is no reason to wait beyond convenience. Refrigerated whole it holds for roughly five to seven days. Standing it upside down on its crown for a day before cutting is an old trick to redistribute the sugars, which concentrate at the base, and it does make the top of the fruit taste better.
Once cut, refrigerate the flesh in a sealed container and use it within about three to five days. It freezes well in chunks or as puree and is excellent frozen for smoothies, sorbet and cooking, though the texture goes soft on thawing. It also dries beautifully into chewy rings, and it cans and preserves reliably — canned pineapple is the classic answer to a glut, and canning has the side effect of destroying the bromelain that makes fresh pineapple sting the mouth.
That enzyme is also worth knowing about in the kitchen: fresh pineapple will not let gelatine set, so any jelly, mousse or panna cotta made with it needs cooked or canned fruit instead. A minute of heat deactivates bromelain entirely. If you have a single homegrown pineapple, of course, none of this applies — you will eat it in one sitting, and it will be the best one you have ever had.
In the kitchen
Sweet, acidic and aromatic - superb raw, transformed by grilling, and a natural partner for salt, chilli, pork and coconut. Just remember it will not set gelatine and it tenderises meat.
Fresh, properly ripe pineapple mostly wants to be eaten as it is — cut across into wheels or lengthwise into spears, with the tough core trimmed out on most varieties. A little salt, or salt with chilli and lime the way it is sold on the street across Mexico and Southeast Asia, sharpens the sweetness remarkably. It is a natural in fruit salads, salsas, and anything with coconut, mint, lime, rum or ginger.
Grilling is the transformation worth knowing: heat caramelises the sugars and mellows the acid, and grilled pineapple is a completely different and better thing alongside pork, chicken, fish tacos and burgers. It roasts, it goes into curries and stir-fries in Thai and Filipino cooking, it tops the pizza people argue about, and it is the backbone of the classic upside-down cake. The juice is a cocktail staple.
Two practical quirks come from bromelain, the protein-digesting enzyme in the fresh fruit. First, it is an excellent meat tenderiser — pineapple juice in a marinade works fast, and left too long it turns meat mushy, so half an hour is plenty. Second, fresh pineapple will not let gelatine set, so use cooked or canned fruit for anything jellied. The same enzyme, plus microscopic calcium oxalate needles, is why a lot of raw pineapple makes your mouth and lips feel raw; it is harmless, it passes, and cooking or canning removes it entirely.
Growing across climates
Zones 10-11 outdoors, zone 9 with frost protection and luck. Everywhere else it is a container plant, and a rewarding one - it stays small, tolerates neglect, and survives happily on a bright windowsill.
Zones 10-11: pineapple's home. Plant it in the ground in a sunny, sharply drained bed and let it get on with it; a bed renews itself from suckers indefinitely and needs little water once established. South Florida, coastal southern California, Hawaii and the warmest parts of the Gulf all grow it outdoors. Zone 9: possible in a warm microclimate with frost cloth on cold nights — the plant is damaged around 32°F and dies around 28°F, and unlike a banana it has no underground reserve to resprout from.
Zones 8 and colder: a container plant, and a genuinely good one. Pineapple is unusually well suited to pot life — it stays under three feet, it has a small, shallow root system, it thrives on neglect and infrequent watering, and it does not mind dry indoor air the way a tropical fruit tree does. The routine is simple: outdoors in full sun once nights are reliably above 55°F, back inside to the brightest window or under a grow light before the first frost, watered sparingly all winter. Two or three summers of this will usually get a plant to fruiting size, at which point the apple-in-a-bag trick lets you time the crop.
The real northern limit is not cold but light. A pineapple wintered in a dim corner comes out pale, stretched and set back a whole season, and a plant that never gets enough sun simply grows too slowly to ever reach fruiting size. A bright south window, a sunroom, or a modest grow light is what makes the difference between an ornamental houseplant and a plant that eventually fruits.
Troubleshooting
A crown that rots was planted too wet. A plant that will not flower is too small, not too young. Fruit that tastes sour was picked green - it cannot catch up.
The crown went soft and brown at the base: planted too fresh or kept too wet. Let the stub dry and callus for several days before planting, use a free-draining mix, and water sparingly until new leaves appear from the centre. Two years in and no flower: almost always size rather than age — a pineapple needs around thirty mature leaves and a rosette two to three feet across before it can flower. More light, more warmth and light regular feeding are the fix; forcing a plant that is too small achieves nothing.
Fruit tastes sour, sharp or bland: picked too early. A pineapple makes no further sugar off the plant, so wait for gold at the base, a sweet smell and a dull thud, and next time wait longer. A tiny fruit: the plant flowered while still small, or was drought-stressed or starved while filling — fruit size tracks plant size closely, so grow the rosette bigger before forcing. Translucent, water-soaked patches on the fruit shoulder: sunburn; shade the fruit in fierce heat.
Leaves reddening, turning pink-yellow, then dying back from the tips while the plant wilts: mealybug wilt, spread by mealybugs and their attendant ants — control both, and do not replant into that ground. The centre of the plant pulls out easily and smells foul: heart rot from cold or waterlogging; there is no saving it, but any healthy sucker can be salvaged. White cottony masses down in the leaf axils, sticky leaves, ants: mealybugs — deal with them early, especially on plants wintered indoors. Pale, floppy, stretched leaves: not enough light indoors over winter.
Propagation & seed saving
Four free routes: the crown off a shop-bought fruit, slips from the fruit stalk, suckers from the leaf bases, and the ratoon left in place. Suckers fruit in about half the time a crown takes.
Pineapple gives you several ways to make new plants and all of them are free. The famous one is the crown: twist the leafy top off a ripe fruit, strip the lowest inch of leaves, dry the stub for two to seven days until callused, and plant it. It roots in six to ten weeks and fruits in roughly two to three years. It works on supermarket fruit, which is why this is the classic kitchen-windowsill project.
The faster routes come off a plant you already have. Slips grow from the stalk just below the fruit and can be twisted off at harvest; they fruit in about eighteen months to two years. Suckers (also called pups) grow from the leaf axils on the stem and are the best material of all — take them when they are a third the size of the parent, let them callus, and they fruit in roughly twelve to eighteen months, sometimes less. And the simplest option is to take none of them: leave one or two suckers in place, cut the spent mother plant away, and the ratoon crops where it stands, which is how a pineapple bed keeps going for years.
Seed is not a home method. Commercial pineapples are essentially seedless and self-incompatible, so unless a hummingbird has cross-pollinated your plant with a different variety there is no seed to save — and seedlings would take far longer and not come true. Whatever material you use, the two rules are the same: let the cut end callus before planting, and keep it on the dry side until it roots.
Nutrition
Outstanding vitamin C and manganese, decent fibre, low calories - plus bromelain, an enzyme with genuine protein-digesting activity that is destroyed by cooking and canning.
Pineapple is an excellent source of vitamin C — a cup covers most of a day's requirement — and an outstanding source of manganese, a mineral few foods supply in quantity. It also brings useful fibre, vitamin B6, copper, folate and thiamine, for very few calories. The gold-fleshed modern varieties such as MD-2 carry noticeably more vitamin C than the older Smooth Cayenne types.
The distinctive component is bromelain, a mixture of protein-digesting enzymes concentrated in the stem and present in the flesh and juice. It is genuinely active: it tenderises meat, it prevents gelatine from setting, and it is the reason a lot of fresh pineapple makes the mouth and tongue feel raw — helped along by the microscopic calcium oxalate needles the fruit also contains. That sensation is harmless and passes in an hour or so, and it is entirely absent from cooked, grilled or canned fruit, since heat deactivates the enzyme.
The one genuine restriction is unripe fruit. Green pineapple and its juice are a harsh throat irritant and a strong purgative, and there is a long folk history of using green pineapple juice as an abortifacient. This is not underripe fruit to be eaten cautiously — it is not food. Ripe fruit, in ordinary quantities, raises none of these issues.
Traditional & historical uses
Bromelain is a real enzyme sold as a supplement for inflammation and digestion, and dietary pineapple is not the same thing as a bromelain capsule. The clear rules: ripe only, and cooking removes the sting.

Bromelain is one of the few kitchen-garden compounds with a genuine pharmaceutical career: extracted from pineapple stems, it is sold as a supplement for inflammation, swelling after injury or surgery, sinus congestion and digestion, and it is used industrially in wound debridement and meat processing. The research is real but mixed, and — importantly — the doses studied come from concentrated stem extract, not from eating fruit. Eating pineapple is eating fruit; it is not taking a drug.
Where that distinction matters is in the cautions, which apply to supplements far more than to food. Concentrated bromelain can increase bleeding risk alongside anticoagulants and antiplatelet drugs, may enhance the absorption of some antibiotics, and should be stopped before surgery. People allergic to natural rubber latex, or to celery, carrot, fennel, wheat or grass pollen, sometimes react to bromelain and to pineapple itself. None of this is a reason for most people to avoid the fruit.
The plant's own honest safety rules are simpler, and they are covered elsewhere on this page: ripe fruit only, because green pineapple is a serious irritant and purgative; cooking removes the mouth sting, so anyone bothered by raw pineapple can grill or can it; and the leaves have spines, not medicine. Pineapple is a delicious, vitamin-rich fruit with an interesting enzyme in it, which is quite enough. History
Carried across the Americas by Indigenous peoples, met by Columbus in 1493, and then so rare and costly in Europe that a single fruit was rented for display - which is why pineapples are carved into gateposts.
Pineapple was domesticated in the region of southern Brazil and Paraguay and carried by Indigenous peoples across South America, the Caribbean and Central America long before Europeans arrived; the Tupi word nanas, meaning excellent fruit, survives in almost every language's name for it except English. Columbus's crew encountered it on Guadeloupe in 1493, and it was one of the few New World foods Europe adored immediately.
The problem was getting one home alive. For two centuries a pineapple that survived the Atlantic was a sensation of such value that it became the ultimate symbol of hospitality and wealth — hosts would rent a single fruit as a table centrepiece and return it, and wealthy Europeans built heated glasshouses called pineries to raise their own. That is why the pineapple motif is carved into gateposts, bedposts, stair finials and doorways across Britain and colonial America: it is a boast that outlived the reason for it.
The modern industry belongs largely to Hawaii, where James Dole built canning into a global business in the early twentieth century, made Smooth Cayenne the world's standard variety, and turned the whole island of Lanai into a pineapple plantation. Production has since moved mostly to Southeast Asia and Costa Rica, and the sweeter, lower-acid MD-2 has displaced Cayenne in the fresh market. Growing one at home from a discarded crown is a small piece of that history: the same plant that was once rented by the evening now costs nothing but two years of patience.
