Hollyhock flowers are edible and mild - they're used as an edible garnish and to color herbal teas - but the plant is grown as an ornamental, not a food crop, and flavor is bland. The leaves and stems have coarse hairs that can irritate sensitive skin (contact dermatitis) - wear gloves if you're prone to it. Generally regarded as non-toxic to pets.

Overview

Hollyhocks are the quintessential cottage-garden flower — giant flower spikes, often 5-9 feet tall, lined with wide, open, satiny blooms in every warm color from white to near-black, blooming through high summer. Their natural home is the back of the border or against a sunny wall or fence, where their height reads as architecture and they get a little support. Bumblebees adore them, and they're the picture-book image of an old-fashioned garden.

Hollyhock is classically a biennial: sown one year, it makes a low leafy rosette, then blooms, sets seed, and dies the second year. But it self-sows so freely that a planting perpetuates itself as a 'colony' with no replanting, and some modern strains bloom the first year like short-lived perennials. The one thing every hollyhock grower contends with is hollyhock rust — the orange-pustuled fungal disease that is, without exaggeration, the defining problem of the plant. Manage the rust, let it reseed, and hollyhocks become a permanent, effortless feature.

Watch out for

Hollyhock Rust High DiseaseMay, Jun, Jul, Aug, Sep

The defining hollyhock disease, caused by the fungus Puccinia malvacearum. It produces raised orange-to-brown pustules on the undersides of leaves (with yellow spots on the tops), spreading upward and causing leaves to brown, wither, and drop. It rarely kills the plant but disfigures the foliage badly, and it overwinters on debris and any surviving plant, returning every year.

Watch for: Orange-brown raised pustules on leaf undersides, corresponding yellow-orange spots on the upper surface, leaves browning and dying from the bottom of the plant upward, worst in warm humid weather.

Prevent: Space plants for airflow, water only at the base (never the leaves), strip and destroy infected leaves promptly, and clean up ALL debris in fall. Just as important, remove common mallow (cheeseweed) and other weedy mallows from the surrounding area and lawn edges - the same fungus lives on them and reinfects the planting every spring, so a bed that is otherwise managed perfectly still rusts if mallow is left along the fence line. Grow resistant species (Alcea rugosa, fig-leaf hollyhock Alcea ficifolia) where rust is chronic.

Treat: Remove and destroy infected leaves as they appear; preventive fungicides (sulfur, copper, or myclobutanil) can slow it in bad years but rarely eradicate it. The durable defense is sanitation, spacing, base watering, and resistant varieties.

So characteristic it's named for the host; managing rather than eliminating it is the realistic goal, and the flower show usually continues above the affected lower leaves.

Japanese Beetles Medium PestJun, Jul, Aug

Japanese beetles are metallic green-and-copper beetles about half an inch long that emerge in early summer and feed for six to eight weeks. They feed in aggregating masses - one beetle's feeding releases a scent that draws in more - so a plant goes from untouched to covered in a couple of days. They chew the soft tissue between the leaf veins and leave the veins standing, so the leaf ends up as a brown lace skeleton, and they shred open flowers and sometimes ripening fruit as well. They work the sunniest upper parts of a plant on warm afternoons. The white C-shaped grubs spend the rest of the year in turf and pasture soil eating grass roots, and the adults then fly in from wherever they hatched, which can be some distance away.

Watch for: Clusters of shiny metallic beetles massed together on the upper, sunniest foliage and down inside open blooms, heaviest on warm sunny afternoons from around late June. Leaves reduced to lace, with the veins left intact and the tissue between them gone - unmistakable, and quite different from the ragged chewing of a caterpillar. Ragged, chewed petals and blooms that never open properly. Beetles that let go and drop straight to the ground when you disturb the plant. Feeding damage on ripening fruit, on the plants they also take fruit from. Whole branches going brown and lacy at the top of a plant while the shaded lower growth stays untouched.

Prevent: Hand-picking is genuinely the main defense in a home garden. Go out in the cool of the morning while the beetles are sluggish, hold a tub of soapy water underneath, and knock them in - they drop when disturbed, so most fall straight into it. Do it daily through the flight: because the beetles call each other in, taking them off early stops a plant becoming a beacon. Do not put pheromone or lure traps anywhere near the garden - they demonstrably pull in far more beetles than they catch. And do not count on lawn grub control: milky spore has performed poorly and inconsistently in field trials across most of the US, and treating your own turf does not reduce the adults feeding on your plants, because they fly in from surrounding properties. Where it is practical, row cover or netting through the peak flight excludes them outright. Otherwise riding out the six-to-eight-week wave is a legitimate strategy, since most established plants absorb the damage.

Treat: Persistent morning hand-picking into soapy water is the most effective home control there is, and on a vigorous established plant the damage is usually cosmetic and needs nothing else. Neem deters feeding rather than killing, and has to be reapplied. For heavy pressure, spinosad or a targeted insecticide labeled for the plant will work - but time any spray away from bloom and apply it at dusk to protect bees, and observe the pre-harvest interval on anything you eat. On flowering plants, some gardeners simply shear the blooms off for a couple of weeks and let the plant rebloom once the wave has passed, which removes the lure as well as the damage. Young plants and young trees are the ones worth defending: a mature tree or an established vine tolerates several weeks of leaf loss without lasting harm.

Hollyhock's broad soft leaves are a favorite target, and they chew the blooms too. Damage is usually cosmetic on a vigorous plant.

Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.

Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.

Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.

Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.

Slugs and snails are nocturnal mollusks that rasp ragged holes in soft leaves, shear off seedlings at ground level, and chew into ripe fruit that touches the soil. They feed at night and in the early morning and spend the day hidden under boards, pots, dense mulch, leaf litter, and low foliage, becoming active in exactly the cool, damp, shaded conditions that suit young plants. Damage is heaviest in wet spells and on tender spring growth: a single wet week can erase a row of seedlings while an established, tough-leaved plant of the same species is barely marked. They lay clusters of small pearly eggs in damp soil and under debris, so a garden with plenty of cover carries a resident population year after year rather than being invaded from outside.

Watch for: Irregular ragged holes chewed out of the middle of leaves and along the edges - not the clean-edged cuts a caterpillar leaves. Seedlings that vanish overnight, or that are cut off at soil level with nothing left behind. Silvery dried slime trails across leaves, soil, pots, and paving in the morning: this is the giveaway that tells you it was mollusks rather than an insect. Chewed pits in ripe fruit, especially where it rests on the ground. Damage that shows up on the lowest, dampest leaves first and gets worse after rain or evening watering. Turn over a board, an upturned pot, or a clump of dense mulch during the day and look for the animals themselves sheltering in the cool underneath.

Prevent: Take away the daytime shelter first: lift boards and upturned pots, clear piles of debris, keep dense mulch pulled back from crowns and stems, and give crowded plantings enough airflow to dry out. Water in the morning rather than the evening so the surface is dry by the time they come out. Copper tape around containers and raised beds gives them a shock they will not cross, and it is the one barrier that reliably works. Get plants past the vulnerable stage quickly - start seedlings in pots and set them out at a decent size rather than direct-sowing into a cold wet bed, since most plants stop being worth defending once the leaves toughen. Leave the ground beetles, frogs, toads, and ground-feeding birds alone, because they eat mollusks all night for free and broad-spectrum slug pellets kill them too. Where thick-leaved or resistant varieties exist for what you are growing, they take far less damage.

Treat: Hand-picking works and costs nothing: go out an hour after dark with a headlamp, drop what you find into soapy water, and repeat nightly for a week or two - persistence is what wins, not any single product. Shallow beer traps sunk to soil level catch them too, but need emptying and refilling daily to be worth anything. Iron-phosphate bait is the standard control and is far lower-risk around pets and wildlife than the old metaldehyde products, but it is not harmless: many formulations include EDTA, and a dog that eats a quantity of pellets can develop iron toxicosis. Scatter it thinly per the label, never in piles, and keep dogs off a baited bed. Clear fallen foliage and debris in autumn, where the eggs are laid. In a wet climate this is a population you manage each season rather than one you eradicate - and on most established plants light grazing is cosmetic and needs nothing at all.

Mostly a threat to seedlings and the low first-year rosette. Once the plant is up and flowering it is out of reach.

Grow hollyhocks in full sun and rich, well-drained soil, ideally against a wall, fence, or at the back of the border where their great height is supported and showcased. Because they're biennial, the classic approach is to direct-sow in late spring or early summer: the seed makes a leafy rosette that year and blooms the next. Direct-sowing suits their long taproot, which resents transplanting; if you start indoors, use deep pots and set out early. Some newer 'perennial' strains, started early indoors, will bloom the first summer.

The overriding cultural rule is rust management from day one: space plants 18-24 inches apart for airflow, and water only at the base, never wetting the leaves, which spreads the spores. Give them their spot and they'll self-sow and return for years — but plan around the rust, because in most gardens it's a question of managing it, not avoiding it.

Care

Stake the spikes, strip rust-infected leaves and keep the base clean, water at the soil line, and let some spikes set seed so the patch reseeds itself.

Second-year hollyhocks need staking — the 5-9 foot spikes catch wind and topple — unless they're planted against a wall or fence. Beyond support, care is dominated by hollyhock rust: strip and destroy leaves showing the tell-tale orange-brown pustules as they appear (starting from the bottom), water at the base, keep the ground clear of fallen leaves, and clean up thoroughly in fall — rust overwinters on debris and on any surviving plant. It also overwinters on weedy mallows, so pull common mallow (cheeseweed) and its relatives out of the lawn edges and fence lines around the bed; they host the same fungus and reinfect the planting every spring, which is why a bed that gets everything else right can still rust. The flower show usually carries on above the rusty lower leaves, so the goal is to slow it, not eradicate it.

Because the plant dies after flowering, the other key job is letting it reseed: leave at least a few spent spikes to ripen and drop their papery seed, and you'll have volunteers to carry the colony forward. Deadheading everything for tidiness, on a true biennial, ends the planting. Feed lightly, watch for Japanese beetles and slugs, and choose more rust-resistant types (like Alcea rugosa and fig-leaf hollyhocks) if rust overwhelms you.

Hollyhock is grown for show, not for the table, but its flowers are edible in the mild way many mallow-family blooms are — used as a pretty garnish, floated in drinks, or to tint herbal teas (they're bland, so it's about looks, not flavor). The blooms also make short-lived cut flowers if you cut a partly open spike, though most gardeners leave the towering spikes standing in the garden.

The real 'harvest' is seed. Let the flat, papery seed disks dry on the spike, then collect them to sow exactly where you want next year's plants — a free, endless supply. Saving and directing the seed (rather than only letting it scatter randomly) is how you keep a biennial colony where you want it. Because the plant is grown ornamentally and reseeds so readily, there's little else to gather.

Storage

There's essentially nothing to store from a hollyhock but seed. The large, flat, papery seed disks, gathered dry from the spikes, store cool and dry in an envelope or jar for several years and stay viable well — more than enough for the endless reseeding these plants do on their own. Fresher seed germinates most reliably.

The flowers themselves are fleeting and don't store or dry attractively, and the plant leaves no bulb, tuber, or edible crop to keep. Effectively, a hollyhock 'stores' itself in the soil as self-sown seed, and its colony persists from that seed bank year to year with no intervention from you beyond letting some spikes ripen.

Propagation & seed saving

Almost entirely by seed - collect and sow it, or just let the plant self-sow; the biennial cycle means fresh seed each generation is essential.

Hollyhocks are propagated from seed, and it's easy to the point of automatic. Collect the flat seed disks from dried spikes and sow them in late spring/early summer (for next-year bloom) or in fall (to overwinter and bloom the following summer) — or simply let the plant self-sow, which it does prolifically, so volunteers spring up around the parents and keep the colony going. The straight species and old cottage types come reasonably true from seed; complex hybrids and doubles may vary in the next generation, which is part of their charm.

Because hollyhock is a biennial that dies after flowering, this seed cycle isn't optional — letting at least some plants set and drop seed is the only way the planting persists. Short-lived perennial types (like Alcea rugosa) can sometimes be divided, but for the common hollyhock, saving and sowing seed is the whole game — the definition of a never-buy-it-again flower.

Traditional & historical uses

Hollyhock is a mallow-family cousin of marshmallow and shares its demulcent tradition: the flowers and roots are mucilage-rich and were long brewed into soothing teas and gargles for sore throat, cough, and irritated skin. It is a gentle, well-documented folk remedy, generally safe but unproven in the modern sense - educational only, and no substitute for medical care.

Hollyhock (Alcea rosea) sits in the mallow family (Malvaceae) alongside marshmallow (Althaea officinalis) and common mallow, and it shares their defining herbal quality: a soft, slippery mucilage in the flowers, leaves, and roots that coats and soothes irritated tissue. This is why medieval monastery and cottage gardens kept it among the soothing herbs, and why hollyhock flower and root teas have a long folk history as a demulcent — sipped or gargled for dry cough, sore throat, and hoarseness, and used as a gentle wash or poultice on chapped, inflamed skin. The dark-flowered forms were also traditionally used to tint and flavor herbal teas.

As folk medicine goes, this is a gentle and plausible one: the demulcent action of mallow mucilage on irritated mucous membranes is the same principle behind marshmallow-root remedies still used today. That said, hollyhock itself is little studied clinically, its effects are mild and soothing rather than curative, and the whole tradition is best understood as comfort care for minor irritation. The flowers are non-toxic and mild; the coarse leaf hairs can irritate sensitive skin, so wear gloves when handling. Two caveats come with any mucilage herb: like marshmallow, it can slow the absorption of medicines taken at the same time, so keep it an hour or two apart from any oral medication — and there is no safety data for its use in pregnancy or nursing. History

An ancient cottage-garden and monastery flower likely brought west from Asia via the Holy Land, its very name a nod to that journey, and a symbol of old-fashioned country gardens.

Hollyhocks are old garden flowers with a name that hints at their history: 'hollyhock' is thought to derive from 'holy' plus an old word for mallow, possibly reflecting introduction to Europe from the Holy Land during the Crusades. The species Alcea rosea traces to Asia (China and the Middle East), and it spread through medieval European monastery and cottage gardens, valued both ornamentally and, in the mallow family's tradition, for soothing folk remedies.

By the cottage-garden era they were a beloved fixture — planted along fences, walls, and outhouses (they became almost a symbol of the humble country garden) — and generations of gardeners saved and passed along seed of favorite colors. Victorian breeders produced the doubles and the deep near-black 'Nigra,' and hollyhocks remain a nostalgic emblem of old-fashioned, self-sustaining gardens, endlessly reseeding themselves down the years.

Orange pustules on leaves is the near-universal hollyhock rust; no first-year bloom is normal for a biennial; toppled spikes need staking; a vanished patch never got to reseed.

Orange-brown raised pustules on leaf undersides, yellow spots on top, leaves browning and dropping from the bottom up: hollyhock rust, the near-universal and defining hollyhock disease — strip and destroy infected leaves, water only at the base, space for airflow, clean up all debris in fall, clear common mallow (cheeseweed) and other weedy mallows out of the surrounding lawn and fence lines (they host the same fungus and reinfect the bed each spring), and grow resistant types (Alcea rugosa, fig-leaf hollyhock) if it's overwhelming; fungicides help but rarely eradicate it. The plant usually flowers well above the rust regardless. No flowers the first year: normal — hollyhock is a biennial that blooms the second year (start perennial strains early for first-year bloom). Tall spikes falling over: stake them or plant against a wall. Chewed, holed leaves: Japanese beetles and slugs — hand-pick and bait. The patch disappeared: as a biennial that dies after bloom, it needs to reseed — you deadheaded or cleared every spike before seed set; leave some to ripen. Floppy, few flowers: too much shade or too rich/nitrogen-heavy soil.

Growing across climates

Widely hardy in zones 3-8/9; grown as a reseeding biennial nearly everywhere, with the hot, humid South facing the worst rust pressure and warm zones sowing in fall.

Zones 3-5: fully hardy; grow as a reseeding biennial — sow in summer for next-year bloom, and the cold winters cause no trouble. Rust is present but often less relentless than in humid heat. Zones 6-8: the classic cottage-garden range — excellent bloom and dependable self-sowing, with rust the main ongoing management task; airflow, base watering, and fall cleanup are essential. Zones 8-9 (hot, humid South): hollyhocks grow well but face the heaviest rust pressure in the muggy heat — prioritize resistant species, wide spacing, and sanitation, sow in fall for cool-season growth, and expect to treat the plants as short-lived. Zones 9-10: sow in fall for winter rosette growth and spring/summer bloom; prolonged extreme heat shortens the show and worsens disease. Everywhere, full sun, sharp drainage, air circulation, and letting the plant reseed are the keys.
