No toxic parts. Store only fully dry, sound kernels - visibly moldy grain can carry mycotoxins and should be discarded, not eaten. The edible corn smut fungus (huitlacoche) on ears is a delicacy, not a poison. Nixtamalizing uses food-grade pickling lime (calcium hydroxide) - never quicklime (calcium oxide) or garden/builders' lime; the solution is strongly alkaline, so keep it off skin and out of eyes, and rinse the finished nixtamal well before grinding.

Corn you grow to DRY, not to eat fresh: dent, flint, and flour types for cornmeal and masa, plus popcorn - the original storage grain of the Americas.

Grain corn flips the sweet-corn idea on its head. Instead of racing an ear to the pot at peak sugar, you leave the ears on the stalk all season and harvest them dry — hard, glossy kernels that store for years and become cornmeal, grits, polenta, masa, or popcorn. It's the corn that fed civilizations for millennia; sweet corn is the young upstart. One block of it turns a garden into a small grain field, stalks and all.

The types are old and distinct: dent corn (a dimple forms in each drying kernel) is the classic cornmeal and masa corn; flint corn carries hard, glassy, often jewel-colored kernels and makes the best polenta; flour corn grinds soft and fine, the blue-cornmeal type; and popcorn is its own small-kerneled kind, the only one that pops. They all grow exactly alike — tall, wind-pollinated, block-planted — and differ at the mill and the stove.

Watch out for

European Corn Borer High PestJun, Jul, Aug

A moth larva that bores into stalks, leaf midribs, and ears, weakening stalks so they break and opening the plant to rot.

Watch for: Small entry holes with sawdust-like frass on stalks and leaf axils, broken tassels, and tunneling into the ear from the side.

Prevent: Rotate crops, shred and destroy old cornstalks in fall (larvae overwinter in them), and plant resistant hybrids; Bt-timed sprays target young larvae before they bore in.

Treat: Once inside the stalk, larvae are protected from sprays - control relies on prevention, fall cleanup, and Bt on early larvae.

Grain corn stands months longer than sweet corn, so borer-weakened stalks have far more time to lodge - fall stalk destruction matters double here.

The most common sweet-corn pest: a night-flying moth lays eggs on fresh silks, and the caterpillar tunnels down into the ear tip to feed on developing kernels.

Watch for: Chewed, discolored kernels and dark frass at the ear tip, and a fat caterpillar (green, brown, or pink) inside the husk near the top.

Prevent: Choose varieties with tight husk tips; a few drops of vegetable or mineral oil (with a little Bt) on the silk 5-6 days after silking smothers young larvae; encourage natural enemies.

Treat: Damage is usually confined to the tip - just cut it off. Bt sprayed on silks catches young larvae; the ear below is fine to eat.

Less costly on grain corn than sweet corn - tip damage is trimmed at shelling - but earworm wounds invite ear molds in a wet fall, so tight-husked varieties still pay.

The single greatest threat to home sweet corn: raccoons raid the patch at night, often the very night before the ears are ripe, tearing down stalks and stripping ears.

Watch for: Stalks pulled or broken down overnight, husks torn open, and half-eaten ears scattered on the ground - a whole patch can be lost in one night.

Prevent: A two-strand electric fence (at ~6 and 12 inches) is the most reliable defense; also try bagging individual ears in mesh, a radio playing in the patch, or a dog nearby. The Three Sisters' prickly squash vines underfoot help deter them.

Treat: Reinforce fencing immediately at first sign; once raccoons find a patch they return nightly until it's gone.

Grain corn is vulnerable at the milk stage just like sweet corn; once kernels harden, raccoon pressure fades - defend the milky weeks and the crop mostly defends itself after.

A fungus that turns kernels into swollen, gray-white then black galls on ears, tassels, and stalks, favored by heat, drought stress, and plant injury.

Watch for: Grotesque silvery-gray swollen galls replacing kernels on the ear (or on tassels/stalks), which later burst into masses of black spores.

Prevent: Avoid wounding plants, keep them evenly watered and unstressed, rotate, and remove and destroy galls before they blacken and release spores (don't compost them).

Treat: No spray cure - cut out and destroy galls early. Note: young, firm galls are the prized Mexican delicacy huitlacoche ('corn mushroom'), genuinely delicious cooked.

A smutted ear is lost for grain, and burst galls seed next year's spores - patrol the long season and cut galls young (or eat them as huitlacoche).

Prevent: Plant resistant hybrids (most modern ones are), give good airflow and full sun, and avoid overhead watering; rust blows in on wind so timing helps.

Treat: Usually tolerable on sweet corn maturing before it peaks; remove badly infected lower leaves, and fungicides are rarely needed in home gardens.

Grain corn's long season gives rust more time to build than sweet corn's - healthy leaves into September are what fill heavy ears, so airflow and rotation earn their keep.

The long grain-corn season overlaps the disease's peak, unlike early sweet corn - keep the block airy and rotate ground yearly.

Watch for: Plants leaning or 'goose-necked' from root damage, easy to pull up, and slender striped or spotted beetles feeding on silks and pollen at flowering.

Prevent: Rotate corn to a different bed each year - the larvae starve without corn roots, so rotation nearly eliminates them; this is the classic reason not to grow corn in the same spot two years running.

Treat: No rescue for damaged roots; rotation is the control. Heavy adult silk-clipping at pollination can be reduced by hand-pollinating.

Grow

Direct sow into warm soil in a 4x4 block after frost; give it the full season, rich soil, and distance (or timing) away from sweet corn.

Grow grain corn exactly like sweet corn, just longer. Direct sow 1-2 inches deep once soil reaches 60°F, in a block of at least four short rows (never a single line — corn is wind-pollinated and a block is what fills the ears), plants 8-12 inches apart in rows about 30 inches apart. Give it your richest, sunniest ground and plan on nitrogen side-dressings at knee-high and tasseling.

Two planning rules matter more than for sweet corn. First, time: most dents and popcorns need 100-120 days to maturity plus dry fall weeks afterward, so count back from your first frost and sow on time — short-season gardens should reach for 85-95 day flints instead. Second, isolation: your grain corn's pollen will ruin any supersweet corn within ~250 feet (and stray sweet pollen muddies seed you save), so separate plantings by distance or stagger them so they tassel 2-3 weeks apart.

Care

Feed and water like sweet corn through ear fill, defend milk-stage ears, then stop watering and let the whole field dry standing.

Through midsummer, care is identical to sweet corn: side-dress nitrogen, water an inch a week, hill a little soil around the stalk bases, and never let the block go dry during the two-week pollination window — heat or drought at silking is what causes gap-toothed ears. Watch the stalk bases for European corn borer frass; borer-weakened stalks snap in late-summer storms, and grain corn has to stand months longer than sweet corn.

The finish is where it diverges. Raccoons raid grain corn at the milk stage exactly as they do sweet corn, so fence or bag ears through those weeks — but once kernels harden, pressure fades and your job flips to doing less: stop watering, let stalks, leaves, and husks brown, and leave the ears drying on the stalk as long as fair weather holds. Rain at the end is the real enemy; if a wet spell settles in, pick and finish the drying indoors.

Harvest

Wait for papery husks and rock-hard kernels with a black layer at the base, then pick, husk, and cure 2-4 weeks - popcorn gets a pop test.

Forget the milk stage — grain corn is ready months later, when husks are papery brown, stalks are tan, and the kernels are glossy and so hard a thumbnail can't dent them. The definitive check: pull a kernel and look for the black layer at its base, the plant's own 'finished' stamp. From that point the ear only needs to dry, on the stalk in fair weather or indoors if rain or a hard freeze threatens.

Twist the ears off, husk them, and cure them 2-4 weeks in mesh bags or on racks somewhere warm and airy. Kernels are dry enough when they shell off the cob cleanly and a twisted ear rattles. Popcorn has its own famous finish line: pop a 20-kernel test batch weekly — chewy, tough popcorn is still too moist; lots of unpopped kernels means too dry. It pops best at 13-14% kernel moisture, a number you find by popping, not measuring.

Storage

Fully dry kernels keep for years: shell into airtight jars, guard against rodents and pantry moths, and grind meal fresh in small batches.

This is the whole point of grain corn: properly dried, it is one of the great storage crops. Shell the cured ears (a twist between gloved hands, or an ear over a bucket on a cold evening) and store the kernels in airtight jars or buckets somewhere cool and dark, safe from the rodents and pantry moths that adore corn. Sound dry kernels keep for years; whole kernels keep far better than anything ground, so mill cornmeal and flour fresh in small batches — whole-kernel meal has oils that go stale within weeks at room temperature (refrigerate or freeze ground meal).

Popcorn wants the same airtight jar at room temperature once it passes the pop test — it stays poppable for years. If it dries out and pops small, add a teaspoon of water to a quart jar, shake, and re-test in a few days. Colorful flint and dent ears kept whole on the cob do double duty as fall decoration, then shell and grind just fine afterward.

Propagation & seed saving

The easiest seed-saving in the garden - the crop IS the seed - but only from open-pollinated varieties grown in isolation, saved from many plants.

Grain corn is the rare crop where harvesting and seed saving are the same act: those hard, dry kernels in your jar are fully viable seed. Nearly every classic dent, flint, flour, and popcorn variety is open-pollinated, so it comes true from saved seed — this is the 'never buy seed again' crop, and the reason heirlooms like Reid's Yellow Dent and Hopi Blue have passed through hands for a century or more.

The two rules are corn's usual ones. Isolation: corn crosses on the wind for hundreds of yards, so keep your variety 250+ feet (or 2-3 weeks of tasseling time) from other corn — including the neighbor's sweet corn — or accept some crossing. Numbers: save kernels from the middle of the best ears of many plants (a couple dozen at minimum), never from one or two; small corn populations inbreed and lose vigor fast. Stored cool and dry, corn seed stays viable 1-3 years, so grow it out regularly.

Nutrition

A true whole grain - fiber, B vitamins, minerals, and slow carbohydrates - that becomes a complete staple when nixtamalized and paired with beans.

Dry corn is a whole grain in the fullest sense: complex carbohydrates with fiber, B vitamins, magnesium, phosphorus, and antioxidants that vary with kernel color — blue and red types carry anthocyanins, yellow ones lutein and zeaxanthin. Stone-ground whole cornmeal keeps the germ and bran that industrial degerminated meal throws away, which is why home-ground polenta and cornbread taste richer and feed better.

Two old truths complete the picture. Corn's niacin is locked away until nixtamalization — simmering and soaking kernels in alkaline water (cal, or food-grade pickling lime) — unlocks it, along with corn's protein quality; that's masa and hominy, and it's why cultures that nixtamalized never suffered the pellagra that struck those that didn't. And corn's protein is incomplete alone — paired with beans (the diet the Three Sisters garden literally plants together) it forms a complete protein. Popcorn, for its part, is a genuinely whole-grain snack.

In the kitchen

Grind it into cornbread, grits, and polenta; nixtamalize it into masa, tortillas, and hominy; pop it; or just decorate with it first.

Grain corn has no meaningful herbal tradition of its own — its contribution to health is as a staple whole grain, and history's real lesson is about processing: nixtamalized corn (masa, hominy) releases niacin and prevented the pellagra that plagued corn-dependent diets without it. Blue and red types add anthocyanin antioxidants, but that's nutrition, not treatment.

The one genuine folk remedy from the plant is corn silk — the threads from the ear, dried and brewed as a mild diuretic tea across many cultures. That is ethnobotany, not treatment: corn silk is not a remedy for a urinary-tract infection or any other diagnosed condition, and urinary symptoms need a clinician's assessment rather than a tea. If you do brew it, skip it altogether if you have a corn allergy, and talk to a clinician first if you are pregnant or take diuretic, blood-pressure, or diabetes medication — corn silk is a genuine diuretic and can add to those drugs' effects, including potassium loss. Silk is easy to gather at silking and dry if you are growing grain corn anyway; beyond that, treat this crop as what it is — very good food that stores until spring.

History

This IS the corn of history - the staple bred from teosinte 9,000 years ago that fed the Americas, in the same dent, flint, and flour forms you can still grow.

Every ear of grain corn is living history. Maize was domesticated from teosinte in southern Mexico some 9,000 years ago and moved north and south as dry, storable kernels — flints hardy enough for New England winters, flour corns for the arid Southwest, dents in the Southeast. It anchored the Three Sisters gardens of North America and the civilizations of Mesoamerica, always as dry corn: ground, nixtamalized, parched, and popped (popcorn is among the oldest forms — ancient popped kernels survive in archaeological sites).

The American Corn Belt grew from a 19th-century cross of northern flints with southern dents — Reid's Yellow Dent, still in seed catalogs, won a prize at the 1893 World's Fair and became the ancestor of modern hybrid field corn. Today's heirloom grain corns — Hopi Blue, Bloody Butcher, Glass Gem (bred by Cherokee seedsman Carl Barnes) — are direct threads back through that whole story, and growing a block of them is the closest a garden gets to time travel.

Troubleshooting

Gappy ears mean poor pollination; moldy ears mean a wet finish; chewy popcorn is too moist; starchy sweet corn next door means your pollen escaped.

Ears with scattered missing kernels: incomplete pollination — plant a block, not rows, and hand-pollinate small plantings. Mold on ears: a wet dry-down — pick at black layer and finish indoors with airflow next time; discard moldy grain, don't eat it. Popcorn pops small, chewy, or tough: too moist — cure longer and re-test weekly. Popcorn barely pops at all: too dry — add a teaspoon of water to the jar, shake, wait a few days. The neighbor's supersweet went starchy: your pollen — grain corn must be isolated from sh2 sweet corn by ~250 feet or staggered timing. Stalks snapped before harvest: European corn borer — destroy stalks after harvest to break the cycle. Kernels chewed in storage: rodents or grain moths — airtight containers, always. Ears vanished at milk stage: raccoons — they don't wait for YOUR harvest date.

Growing across climates

Short seasons grow fast flints; the middle zones grow anything; hot zones plant early so dry-down beats the wet - the tropics time it to the dry season.

Zones 3-5: the season is the whole game — choose 85-95 day flints and early dents (Painted Mountain, Nothstine Dent, Mandan Bride, bred exactly for this), sow the week after frost, and let fall frost kill the stalks after black layer; the kernels keep drying regardless. Zones 6-8: classic corn country — any dent, flour, or popcorn finishes with weeks to spare. Zones 9-10: heat at silking and fall rains are the enemies — sow late winter so pollination beats peak heat and dry-down beats the wet season. Zones 11-13: grow it like the tropics always have, timed so the finish lands in the dry season; humid dry-downs mold ears, so cure indoors with moving air.
