Dry beans MUST be cooked (boiled hard for at least 10 minutes) before eating. Raw and undercooked beans contain lectins (phytohaemagglutinin) that cause severe stomach upset - kidney beans especially.

Overview

The pantry crop: grow common beans to full dry seed for storable, protein-rich beans that keep for years - the closest a garden comes to staple food.

Dry beans are the same species as snap beans (Phaseolus vulgaris) grown all the way to the finish: instead of picking tender pods, you let the plants mature, the pods brown and dry, and you shell out the hard seeds — black beans, pinto, kidney, navy, cannellini, and a rainbow of heirlooms. This is the crop that turns a garden into a source of real staple food: shelf-stable, protein-dense, and keepable for years.

They grow almost exactly like bush snap beans — direct-sown after frost into warm soil, self-supporting, nitrogen-fixing — but they hold the bed longer, needing a full 90 to 120 warm days to dry down, and the harvest is a single end-of-season event rather than weeks of picking. The reward is a jar of beans you grew, at pennies of value per plant but enormous value as self-reliance. Plan by the row rather than the plant: a bush plant gives only an ounce or two of shelled seed, so reckon on roughly 3 to 5 pounds of dry beans from a 25-foot row and scale up from there for a winter's soup and chili.

A seed- and splash-borne fungus (Colletotrichum lindemuthianum) causing dark, sunken lesions on pods, stems, and leaf veins - and because it is seed-borne, it carries straight into next year's crop through saved seed, making it especially serious for dry-bean growers.

Watch for: Sunken, dark-bordered spots on pods (pink ooze in humidity), reddish-brown streaks on stems and leaf veins, seed with dark blotches.

Prevent: Start with clean, disease-free seed; never save seed from infected plants; never work wet plants; rotate 2-3 years; clear debris.

Treat: Remove and destroy infected plants; copper can protect healthy foliage in a wet season. Don't save seed from infected plants.

The seed-borne cycle is the danger for dry beans - one infected crop can taint your seed line. Sourced-clean seed is the key defense.

Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.

Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.

Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.

Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.

A coppery, black-spotted beetle that looks like an oversized ladybug and is in fact a member of the same family - but this one eats plants. The spiny yellow larvae do most of the damage, feeding on the undersides of bean-family leaves and skeletonizing them into lace, which cuts the photosynthesis that fills the pods. Both adults and larvae feed, and over a long season the generations stack up.

Watch for: Fuzzy spiny yellow larvae and neat clusters of yellow eggs on the leaf undersides, lacy skeletonized leaves with only the veins left, and coppery black-spotted adults on the foliage. The larvae are usually well established underneath before the adults become obvious, so turn the leaves over.

Prevent: Float row cover over young plants, scout leaf undersides weekly from midsummer and crush the egg clusters before they hatch, grow early varieties that finish before peak beetle season where you can, clean up bean-family debris in fall, and rotate the bean bed.

Treat: Hand-crush eggs and larvae on the leaf undersides - done every day or two while the pods are filling, this alone controls a home planting. Insecticidal soap or neem knocks back a heavy larval outbreak, and the parasitic wasp Pediobius is available for large plantings. Do not spray anything onto open flowers.

Direct sow into 60F-plus soil after frost, 4-6 inches apart, and give the crop the whole season to mature - no succession, one long run to dry-down.

Grow dry beans like bush snap beans, but plan for the long haul. Direct sow 1 inch deep, 4 to 6 inches apart, in rows 18 to 30 inches apart, once the soil is at least 60°F. Full sun and well-drained soil are essential — the plants must stand and dry cleanly at the end. Don't succession-sow: unlike snap beans, you want the single crop to mature and cure on the plant, so sow the whole planting on time near your frost-free date to leave the full season for dry-down.

Skip nitrogen fertilizer; beans fix their own, and excess nitrogen delays maturity by pushing leaves. In first-time legume soil, inoculate the seed with Rhizobium for better nodulation. Most dry beans are bush types needing no support, though a few heirlooms (Cherokee Trail of Tears, Rattlesnake) climb and appreciate a trellis. Choose short-season varieties in the North, where the race against fall frost is the whole game.

Care

Early care mirrors any bush bean: an inch of water a week at the base, a light mulch once the soil warms, and minimal feeding (the plant makes its own nitrogen). Keep the bed weeded until the beans canopy over. Handle plants only when dry to avoid spreading disease, and scout leaf undersides for Mexican bean beetle during pod fill.

The care move unique to dry beans comes at the end: stop watering once the leaves yellow and the pods begin to dry. The goal now is a clean cure on the plant, and extra water only invites mold and rot in the drying pods. Watch the forecast — a stretch of rain during dry-down can sprout or mold the beans right in the pod, and that's the moment to pull plants and finish them under cover instead.

Harvest

Dry beans are harvested once, when most pods on the plant have turned tan or brown, gone brittle, and rattle with loose seed inside. Pull the entire plants (or cut them at the base) and lay them in a single layer or hang them in bunches somewhere dry and airy — a porch, shed, or garage — for one to two more weeks to finish curing. If frost or a wet spell threatens before the pods are fully dry, pull the plants early and dry them entirely indoors.

Then shell: pop small amounts by hand, or for a real crop, put the dry pods in a pillowcase or burlap sack and thresh them by treading or beating the bag, then winnow the chaff away in a breeze. Spread the shelled beans to dry another week until they're hard enough that a seed shatters rather than dents when you bite it — that's the test for safe, weevil-proof storage.

Storage

Fully dried beans keep for years in airtight jars, cool and dark - freeze them first to kill any weevil eggs.

Properly dried beans are one of the best-keeping crops a garden produces: stored airtight, cool, dark, and dry, they stay good for cooking for 2 to 3 years (and edible far longer, if slower to soften). Glass jars are ideal — you can see any moisture or pests. The one enemy is the bean weevil, whose eggs may already be in the pod at harvest; freezing the shelled, dry beans for a week before storing kills them and prevents the heartbreak of opening a jar to find it riddled with holes.

The critical detail is full dryness before sealing: a bean that dents rather than shatters when bitten still holds too much moisture and will mold in the jar. When in doubt, dry a few more days. Save your best, cleanest, largest beans separately as next year's seed — dry beans are their own seed stock.

No crop makes the 'never buy seed again' case more completely than dry beans: the harvest and the seed are the same thing. The beans you grow to eat are, unchanged, the beans you sow next spring. And because common beans self-pollinate before their flowers open, varieties come true with minimal isolation (10 to 20 feet), so your saved seed stays pure generation after generation with no effort.

To keep seed, simply set aside a portion of your best, fully mature, blemish-free beans from your healthiest plants at shelling time — larger and cleaner than the cooking pile. Freeze them for a week to kill weevils, then store cool, dark, and dry, and they stay viable 3 to 4 years. A single plant yields far more seed than you planted, so even a short row can multiply into a much larger patch the following year, or feed you while banking next year's crop. This is how heirlooms like Cherokee Trail of Tears have survived for centuries — hand to hand, harvest to harvest.

Dry beans are among the most nutritionally valuable crops a home garden can grow. A cooked cup delivers roughly 15 grams of protein and 15 grams of fiber, plus substantial iron, folate, magnesium, potassium, and zinc, for almost no fat. The fiber is largely soluble, and beans have one of the lowest glycemic impacts of any carbohydrate food — slow, steady energy that supports blood-sugar and cholesterol control. Paired with a grain, their protein becomes complete, the foundation of countless traditional cuisines.

They're also the rare garden crop that keeps its nutrition in storage for years, making them a genuine food-security staple rather than a seasonal treat. One caution that is nutrition-adjacent: the same lectins that make raw beans a health story make them a hazard uncooked — always boil dry beans hard for at least 10 minutes (kidney beans especially) before eating.

In the kitchen

Soak, then simmer low and slow into soups, chili, refried beans, and stews - each variety brings its own texture and flavor.

Cooking dry beans is mostly patience: soak overnight (or do a quick boil-and-soak), drain, then simmer gently with aromatics until creamy — anywhere from 45 minutes to a couple of hours depending on the bean and its age. Salt toward the end, and hold off on acidic tomatoes until the beans are tender, since acid slows softening. The variety picks the dish: black beans for soup and Latin dishes, pinto for refried beans and chili, kidney for chili and salads, navy and Great Northern for baked beans and creamy soups, cannellini for Italian minestrone and ribollita.

Home-grown dry beans cook up creamier and more flavorful than old supermarket bags, because freshness matters — beans that have sat in storage for years take longer to soften and never get as tender. The essential rule is safety: never eat them raw or undercooked. Boil hard for at least 10 minutes at the start (this destroys the lectins) before dropping to a simmer, and never cook dry beans only in a slow cooker without that initial hard boil.

The one thing that truly matters here is a safety warning, not a benefit: raw and undercooked common beans — kidney beans above all — contain phytohaemagglutinin, a lectin that causes severe nausea and vomiting within hours. As few as four or five raw kidney beans can make a person sick. Always soak and then boil dry beans hard for at least 10 minutes before eating. Cooked properly, they're one of the safest, healthiest foods you can grow.

The common bean was domesticated independently in Mesoamerica and the Andes more than 7,000 years ago and became a cornerstone of Indigenous agriculture across the Americas — the protein leg of the 'three sisters' with corn and squash, and a storable staple that carried communities through winter. After 1492, Spanish and Portuguese ships spread beans across the globe, where they were adopted so thoroughly that many now seem native to Italy, India, or Africa.

Dry beans hold history in a way few crops do, because the seed and the food are one and the same, passed hand to hand for generations. Heirlooms carry their stories in their names: Cherokee Trail of Tears was carried by the Cherokee people on the forced 1838 removal; Jacob's Cattle, Hutterite Soup, and Vermont Cranberry each descend from a particular community's saved seed. Every dry bean you grow and re-save continues that unbroken living chain.

Troubleshooting

Most dry-bean trouble is a season too short, rain during dry-down, or storage weevils; disease and heat cut the yield.

Pods didn't finish drying before frost: the season ran short — pull whole plants and finish them indoors, and grow shorter-season varieties next year. Beans molded or sprouted in the pod: rain during dry-down — watch the forecast and pull plants to cure under cover when wet weather threatens. Holes in stored beans, powdery dust in the jar: bean weevils — freeze all saved beans a week before storing. Few beans set: heat above 90°F at flowering dropped the blossoms, or too much nitrogen delayed and leafed out the plant. Dark sunken spots on pods: anthracnose from wet foliage — use clean seed, never work wet plants, rotate. Mottled, distorted leaves and stunting: bean mosaic virus spread by aphids — grow resistant varieties, control aphids, and remove infected plants. Leaves skeletonized: Mexican bean beetle — crush eggs and larvae on leaf undersides.

Growing across climates

The season-length crop: the North races short-season types to beat frost; hot-dry climates are ideal; the humid tropics fight dry-down mold.

Dry beans are governed by season length, since they need 90 to 120 uninterrupted warm days to mature and cure. Zones 3-4: marginal but possible with the earliest short-season varieties (Black Turtle, Provider-type) sown as soon as soil warms; the whole game is beating fall frost. Zones 5-8: ideal — a long, warm season lets almost any variety mature and dry cleanly on the plant. Zones 9-10: sow early so the crop dries down before the humid, stormy heart of summer, which molds a drying bean; a hot, dry climate is actually perfect for the cure. Zones 11-13: the hardest for dry beans — tropical wet-season humidity ruins dry-down, so grow strictly in the cool, dry season and expect to finish curing under cover.
