Anise
Seed and leaves are food-safe as a spice. Anise oil is potent, carries estragole (a suspected genotoxic carcinogen) and is not for undiluted internal use. Medicinal doses are best avoided in pregnancy and nursing: anethole is mildly estrogen-like, aniseed a reputed abortifacient, and heavy anise tea has sickened breastfed newborns. Celery, carrot, fennel and coriander allergies cross-react. Not star anise, an unrelated tree. Check ferny volunteers - poison hemlock seeds into the same soil.
Overview
True anise: a lax, white-flowered annual grown for its warm licorice seed, the flavor behind ouzo, pastis and anise biscotti. Easy to grow, but it needs roughly 120-130 frost-free days and a hot dry late summer to ripen that seed.
Anise (Pimpinella anisum) is a slender carrot-family annual grown for one thing above all: its seed, a small ribbed grayish fruit with a warm, sweet licorice flavor. That flavor is the backbone of a whole family of drinks — Greek ouzo, French pastis, Italian sambuca, Turkish raki, Levantine arak — and of an enormous amount of European baking, from Italian biscotti and pizzelle to German springerle and New Mexican biscochitos.
Three plants get confused with it, so it is worth being clear. Star anise is Illicium verum, the dried fruit of an evergreen tree from southern China, botanically unrelated. Fennel is a different genus with a similar seed. Anise hyssop is a mint-family perennial with anise-scented leaves and no useful seed. They taste alike because their oils are built on the same phenylpropene chemistry — anethole in true anise, star anise and fennel, and its close relative methyl chavicol in anise hyssop — but only this plant is true anise.
Growing it is straightforward — sow it, thin it, prop it up, cut the heads — with one real catch. Anise needs roughly 120-130 frost-free days and a warm, dry late summer to ripen seed. Where you get that, it is one of the most rewarding herbs you can grow. Where you don't, you will get a handsome plant and green seed, and it is worth knowing that before you sow.

Aphids Medium
Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.
Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.
Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.
Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.
The willow-carrot aphid is the one that finds anise, colonizing shoot tips and then the developing umbels, where heavy feeding cuts seed set. Check the tips weekly through early summer. Because the crop is dried seed rather than fresh leaf, a hard jet of water and a little patience with the hoverflies the umbels attract is almost always enough - the flowers recruit their own control.
Root Rot Medium
Root rot is not one organism but a group of soil fungi and water molds - Pythium, Phytophthora, Fusarium, Rhizoctonia and others - that sit harmlessly in most soils and only turn destructive when the ground stays saturated. Waterlogged soil drives the air out, the roots suffocate, and the weakened tissue is invaded and goes soft, brown, and stringy. Because the damage is underground you usually see it first as something that looks like drought: wilting, yellowing, stunting, a plant that does not respond to being watered. Overwatering, heavy compacted ground, a low spot that collects runoff, a pot with no drainage or a saucer left standing full, and cold wet soil in winter are the usual causes. Once roots have actually rotted there is no cure - this is a problem you prevent rather than treat.
Watch for: Wilting in the middle of the day on a plant whose soil is damp - the classic tell, and the reason people water a rotting plant and finish it off. Leaves yellowing from the bottom up, dull off-color foliage, and growth that stalls for no visible reason. Whole shoots, or one side of the plant, collapsing while the rest still looks fine. Soft, dark, or mushy tissue at the base of the stem or at the crown, sometimes with a sour smell. Lift a failing plant and look at the roots: healthy ones are firm and pale, rotted ones are brown or black and slimy, and the outer layer slips off between your fingers leaving a thread of core behind. Seedlings that topple over at soil level are the same problem, called damping-off.
Prevent: Drainage is the whole defense. Match the plant to the site first - something that wants sharp drainage will not survive heavy clay or a low, water-collecting spot however well you tend it. Where the ground is heavy, plant on a raised bed, berm, or slope, or grow in a container. Set plants at the depth they were already growing, since burying the crown or the root flare is a common cause of rot, and keep mulch pulled back a few inches from the stem base instead of piled against it. Water the soil rather than the calendar: check that the top inch or two is dry before watering again, cut back hard in cool weather and winter dormancy, and never leave a pot standing in a full saucer. Do not plant or dig in soggy ground, and go easy on rich amendments for plants that want it lean. Rotate annual crops, and start with clean healthy plants and fresh mix.
Treat: There is no cure for tissue that has already rotted, so act on the conditions rather than looking for a spray. Stop watering at once and fix the drainage - open up compacted soil, or move the plant to a raised, sharply drained position or a container. Lift a badly affected plant, cut away every soft dark root and rotted section with a clean blade back to firm pale tissue, and replant only the healthy parts into fresh free-draining soil or mix. Often the better move is to give up on the plant and save its offspring instead: cuttings, offsets, or divisions taken from firm healthy growth root readily and give you a clean start. Bin the rotted material rather than composting it, and correct the drainage before you replant, because the rot comes straight back in the same wet spot.
Two forms here. Damping-off takes slow-germinating seedlings in a cold wet spring bed, which is the reason to wait for 60-degree soil rather than sowing early. Later, the taproot rots outright in heavy or waterlogged ground - anise wants moderate water over sharp drainage, and a low, wet corner will kill it however carefully you water.
Cutworms Medium
The soil-dwelling larvae of night-flying moths. They spend the day curled just under the surface and come out after dark to chew through young stems at soil level, felling seedlings and transplants outright - a toppled plant lying beside its own stump is the signature. Some species also climb to gouge and notch emerging shoots and spears. They are worst in freshly worked ground, in beds that were weedy or grassy the year before, and on the first plantings of spring.
Watch for: Seedlings and transplants toppled at the soil line overnight, or shoots chewed and notched near the base, with the severed tops left lying beside the stumps. Dig an inch down within a few inches of the damage and you will usually find the culprit: a plump, dull gray-brown caterpillar that curls into a C when touched.
Prevent: Push a cardboard, foil or tin-can collar an inch into the soil around each seedling and transplant so the stem cannot be reached. Cultivate the bed a couple of weeks before planting to expose the larvae to birds and drying, and clear grassy weeds and debris, which is where the moths lay their eggs.
Treat: Dig around each fallen plant and destroy the caterpillar - left alone, one cutworm will fell another plant every night. Replant the gaps with collars fitted. Hand-picking after dark with a flashlight works well on a small bed, and a fast-growing crop soon outgrows the vulnerable stage.
A worse problem for anise than for most herbs, because it is direct-sown only and germinates slowly - a seedling cut off at soil level cannot be replaced by a spare transplant, and by the time you notice gaps it may be too late in the season to resow and still ripen seed. Sow a little thick, check the row in the first weeks, and use collars around a thin stand.
Alternaria Leaf Blight Medium
Fungal leaf-spotting diseases (Alternaria, Septoria and others) that make angular dark spots on the hairy leaves, especially in wet, humid weather - a very common cosmetic issue on black-eyed Susans.
Watch for: Brown-to-black circular spots with concentric rings and yellow halos, often on outer and older leaves; sunken dark lesions on the head in wet weather.
Prevent: Clean seed, 3+ year rotation, wide spacing for airflow, water at the base not overhead, and clear crop debris; avoid working plants when wet.
Treat: Remove badly affected foliage, keep leaves dry, and apply copper or a biological fungicide early in a wet season. Harvest on time - the roots stay fine even as tops decline.
Alternaria blight is the disease that actually costs you an anise crop, because it moves from the leaves onto the ripening umbels in humid weather and darkens the seed. It is the main reason anise ripens badly in the humid Southeast. Space plants for airflow, water at the soil, cut each head as soon as it colors, and finish drying under cover rather than leaving heads out in a wet spell.
Slugs & Snails Low
Slugs and snails are nocturnal mollusks that rasp ragged holes in soft leaves, shear off seedlings at ground level, and chew into ripe fruit that touches the soil. They feed at night and in the early morning and spend the day hidden under boards, pots, dense mulch, leaf litter, and low foliage, becoming active in exactly the cool, damp, shaded conditions that suit young plants. Damage is heaviest in wet spells and on tender spring growth: a single wet week can erase a row of seedlings while an established, tough-leaved plant of the same species is barely marked. They lay clusters of small pearly eggs in damp soil and under debris, so a garden with plenty of cover carries a resident population year after year rather than being invaded from outside.
Watch for: Irregular ragged holes chewed out of the middle of leaves and along the edges - not the clean-edged cuts a caterpillar leaves. Seedlings that vanish overnight, or that are cut off at soil level with nothing left behind. Silvery dried slime trails across leaves, soil, pots, and paving in the morning: this is the giveaway that tells you it was mollusks rather than an insect. Chewed pits in ripe fruit, especially where it rests on the ground. Damage that shows up on the lowest, dampest leaves first and gets worse after rain or evening watering. Turn over a board, an upturned pot, or a clump of dense mulch during the day and look for the animals themselves sheltering in the cool underneath.
Prevent: Take away the daytime shelter first: lift boards and upturned pots, clear piles of debris, keep dense mulch pulled back from crowns and stems, and give crowded plantings enough airflow to dry out. Water in the morning rather than the evening so the surface is dry by the time they come out. Copper tape around containers and raised beds gives them a shock they will not cross, and it is the one barrier that reliably works. Get plants past the vulnerable stage quickly - start seedlings in pots and set them out at a decent size rather than direct-sowing into a cold wet bed, since most plants stop being worth defending once the leaves toughen. Leave the ground beetles, frogs, toads, and ground-feeding birds alone, because they eat mollusks all night for free and broad-spectrum slug pellets kill them too. Where thick-leaved or resistant varieties exist for what you are growing, they take far less damage.
Treat: Hand-picking works and costs nothing: go out an hour after dark with a headlamp, drop what you find into soapy water, and repeat nightly for a week or two - persistence is what wins, not any single product. Shallow beer traps sunk to soil level catch them too, but need emptying and refilling daily to be worth anything. Iron-phosphate bait is the standard control and is far lower-risk around pets and wildlife than the old metaldehyde products, but it is not harmless: many formulations include EDTA, and a dog that eats a quantity of pellets can develop iron toxicosis. Scatter it thinly per the label, never in piles, and keep dogs off a baited bed. Clear fallen foliage and debris in autumn, where the eggs are laid. In a wet climate this is a population you manage each season rather than one you eradicate - and on most established plants light grazing is cosmetic and needs nothing at all.
A seedling-stage problem only. The soft rounded first leaves are vulnerable during the slow weeks after germination, and because anise cannot be replaced by transplants, losses early are expensive. Once plants are 6 inches tall they are past caring.
Powdery Mildew Low
Powdery mildew is a fungal disease that coats leaves - and often stems, buds, and fruit - in a white-to-gray powder that looks like spilled talcum. It is not one fungus but a large family of them, each fairly specialised to its own group of plants, which is why mildew on one crop rarely jumps to an unrelated one beside it. Unlike most leaf diseases it does not need wet leaves: it thrives on warm dry days followed by humid nights, and it takes hold fastest where plants stand crowded in still air or in shade. The coating blocks light, so heavily covered leaves yellow, brown, and drop early. On many plants that is mostly disfiguring and arrives late enough not to matter; where it strips away the leaves a crop still needed to finish, it costs you size, sweetness, and quality.
Watch for: Round white powdery spots on the upper leaf surfaces that spread and merge until whole leaves look dusted. It usually starts on the oldest, lowest, most shaded leaves and works upward, so check there first. Look at the undersides too, and at stems, buds, and flower stalks, which get coated as it advances. Leaves that yellow, brown, curl, or go crisp and drop early under the coating. New growth that opens small, crumpled, or twisted where the fungus has reached the shoot tips. On plants where it gets onto the fruit, a dull gray film, russeted or scarred skin, and cracking. Late in the season, tiny dark specks scattered through the white felt - that is the fungus setting up to overwinter on the debris.
Prevent: Give plants room. Crowding and still air are the biggest single driver, so space at the full recommended distance, thin seedlings properly, and divide or prune out congested growth until air moves through the plant. Full sun and an open position help; deep shade and a still corner against a wall are where it always starts. Water at the base rather than overhead, and water early in the day so nothing stays damp overnight. Keep plants evenly watered - drought stress at the roots leaves them far more susceptible, even though the fungus itself likes dry air. Go easy on nitrogen, since soft lush growth is the most vulnerable. Where resistant varieties exist for what you are growing, choosing one is the single most effective thing you can do on a plant that mildews every year. Clear infected leaves and stems away at the end of the season rather than composting them.
Treat: Start early: sprays protect healthy tissue, they do not clean up leaves that are already coated. Pick off and bin the worst leaves as soon as you see them, and open the plant up by thinning or pruning so air moves through. On anything that regrows quickly, shearing the whole plant back forces a clean flush and beats spraying. If it keeps spreading, potassium bicarbonate, horticultural oil, or neem applied weekly will hold it - cover both leaf surfaces. Sulfur also works, but it burns the foliage of some plants, should never go on in heat, and must not be mixed with or applied close behind an oil spray. Whatever you use must be labeled for the plant you are treating: follow that label and observe its pre-harvest interval on anything you eat. Do not compost badly infected material. Late-season mildew on a plant that is finishing anyway is usually cosmetic; on a crop still filling out it is worth acting on.

Root-Knot Nematodes Low
Microscopic soil roundworms (Meloidogyne species) that invade roots and force them to swell into beady galls. A galled root cannot take up water and nutrients properly, so the plant stunts, yellows, wilts in heat despite watering, and yields poorly, and root and tuber crops come up forked, knobbly, hairy or cracked instead of clean. They are worst in warm, sandy soils and build up steadily wherever a susceptible crop is grown in the same ground year after year. The wounds they leave also open the way for fusarium wilt and rots.
Watch for: Stunted, yellowing, unthrifty plants that wilt in the heat even though the soil is moist, and poor yields for no obvious reason. Confirm by digging: beady swellings strung along the roots and side rootlets, and root crops that are forked, branched, cracked or knotted rather than clean.
Prevent: Rotate to non-hosts, and grow resistant varieties where they exist for your crop. A French marigold cover crop grown thickly the season before and turned in genuinely lowers populations. Build organic matter and mulch heavily, which feeds the soil life that suppresses them. Plant only clean stock, never move soil from an infested bed around the garden, and solarize badly infested ground through the hottest part of summer.
Treat: There is no in-season cure. Pull and destroy affected plants rather than composting them, and bring that ground back over several seasons with rotation, resistant varieties and marigold cover crops. Where a crop can be grown in a container of fresh mix, that sidesteps the problem entirely.
Occasional in warm sandy soils, showing as stunted plants that never size up, with galled and knotted roots when you pull one. Because anise has a single taproot, damage there hits the whole plant hard. Rotate out of beds with a known nematode history rather than trying to treat it.
Black Swallowtail (Parsley Worm) Low
The green, black, and yellow-banded caterpillar of the black swallowtail butterfly, which favors fennel (a top host plant) along with dill, parsley, and carrots. It chews the feathery fronds but rarely does real harm to an established plant - and it becomes one of the garden's most beautiful butterflies.
Watch for: Plump smooth green caterpillars ringed with black and yellow-orange dots on the fronds, chewed foliage, and dark droppings; usually just a few per plant.
Prevent: None needed - this is a welcome garden visitor. Plant extra dill specifically to share, the standard ecological approach.
Treat: Consider tolerating them - fennel is grown by many gardeners specifically as a swallowtail host, and the frond damage is cosmetic. Hand-pick to a spare plant if numbers threaten a small crop; Bt works but kills the butterflies you may want to keep.
Anise is a host plant for swallowtail larvae like the rest of the carrot family, and in the West the anise swallowtail (Papilio zelicaon) uses it too - though despite the name that butterfly is called for the licorice-scented sweet fennel Californians nickname anise, not for this plant. Boldly banded caterpillars grazing the foliage are butterflies in progress, not a pest. Plant a few extra and leave them alone; an established plant recovers well before the seed heads form.

There are effectively no named garden cultivars of anise. Seed is sold simply as anise or aniseed, and what you buy from any seed house is the open-pollinated species. Breeding work exists in the producing countries, mostly aimed at essential-oil yield in field crops, but none of it reaches home seed catalogs. The differences that do matter to a gardener are freshness and sowing rate, not variety: anise seed is short-lived, so buy it fresh and sow generously.

The common bulk grades of the world spice trade, with Egypt among the largest producers of anise and anise oil. The seed runs smaller and grayer than the Spanish type and is generally regarded as a step down in sweetness, though for everyday baking the difference is modest. This is what most supermarket aniseed is, and it is perfectly good.
Comparatively large, plump, greenish-gray ribbed seed, often with the fine stalk still attached.
A spice-trade origin type rather than a cultivar. Spanish aniseed, traditionally associated with Alicante, has the reputation of the finest grade: larger, greener, plumper seed with a sweeter, cleaner flavor, and it is what distillers and bakers in the Mediterranean generally specify. You will meet it as a spice long before you meet it as garden seed, but it is worth knowing the distinction when buying aniseed for baking.
Ordinary culinary aniseed - small ribbed gray-green fruits, often with short stalks attached.
Not a variety, but a route worth knowing. Whole aniseed sold as a spice is untreated seed of the same species and will often germinate, which makes a large sowing very cheap. The catch is age: spice-jar seed has usually sat warm for a long time, and anise loses viability fast. Test-sprout a pinch on damp paper towel before committing a bed to it, and sow at two or three times the normal rate if you go ahead.
Grow
Direct-sow only - anise has a taproot and will not transplant. Full sun, well-drained soil, 6-9 inches apart, sown as soon as the soil hits 60 degrees after your last frost.

Sow about 1/4 inch deep after your last frost, once the soil has reached roughly 60°F, in full sun and ordinary well-drained soil around pH 6.0-7.5. Keep the surface damp until it comes up: germination is slow and uneven, typically two weeks and sometimes four, and a dry crust over the row is the commonest cause of a failed sowing.
Thin seedlings to 6-9 inches apart with 18-24 inches between rows once they are about 3 inches tall. Weed carefully for the first month, because young anise is slow and easily smothered. Then largely leave it alone: about an inch of water a week in dry weather, and little or no feeding. Rich soil and heavy nitrogen grow soft, floppy plants that carry less flavor in the seed.
The one job people skip is support. Mature anise is 18-24 inches tall and genuinely lax — it leans and sprawls once the heads fill, and a plant on the ground splashes soil onto the ripening seed and rots it. Run string between short stakes along both sides of the row before flowering, or push twiggy brush in among the plants. It takes ten minutes and saves the crop.
Care
Even water while it grows, then deliberately drier as it flowers and ripens; support the sprawling stems, keep the row weeded early, and resist the urge to feed it.
Anise asks for very little once it is up. Water moderately and evenly through the growing weeks — about an inch a week in dry weather — at the soil rather than over the foliage, and let the surface dry between waterings. Keep the row weeded while the plants are small; after that they shade their own ground. Don't feed unless your soil is genuinely poor, and then only lightly.
The care decision that actually changes your harvest is when to stop watering. As flowering gets under way, ease off deliberately. Anise ripens its seed through a warm, dry spell, and heads that color up in wet weather go dark, moldy and flavorless on the plant. In a rainy late summer, cut heads earlier and finish them indoors rather than leaving them out hoping.
Get support in before the plants flop, not after, and check the shoot tips for aphids every week or so through early summer. Beyond that, the plant looks after itself, and the flat white umbels will keep the garden's hoverflies and parasitic wasps busy for weeks.
Harvest
Two harvests: a few mild licorice leaves from six inches tall onward, and the real crop - seed heads cut individually as each fades to gray-brown, about a month after flowering.
Leaves come first. From the time plants are about 6 inches tall you can pick the rounded, toothed lower leaves, which have a soft licorice flavor for salads, slaws and fish. Take a few from each plant rather than stripping one, since leaves you remove are seed you don't get.
Seed is the point. It ripens roughly a month after the flowers open, which lands about 110-130 days from sowing. The umbels do not ripen together, so this is a repeated harvest rather than one cut: go over the patch every few days for two or three weeks, snipping each head as it fades from green to a dull grayish-brown and the seeds harden enough to rub free. Cut in the morning while the heads are slightly damp with dew — dry midday heads shatter and spill.
Drop cut heads straight into a paper bag, then finish drying them for one to two weeks hanging upside down in the bag or spread on trays, somewhere warm, dry, shaded and airy. Rub the seed free between your palms and winnow the chaff off in a light breeze. Expect a modest crop by weight — roughly a quarter to half an ounce of cleaned seed per plant — but a 10-foot row of twenty plants gives most households a year or two of baking, which is the honest way to think about it.
Storage
Whole dried seed keeps its flavor for two to three years airtight and dark; ground aniseed fades within weeks, so grind as you go. Keep planting seed separate and label the year.
Store fully dried whole seed in a small airtight jar, somewhere dark, cool and dry. It holds good flavor for about two to three years, best in the first, fading gently rather than spoiling. A week after jarring, look for condensation on the glass: if the jar sweats, the seed went in damp — spread it out and dry it again before it molds.
Grind as you use it. Aniseed's aroma sits in volatile oils that escape within weeks of grinding, which is why supermarket ground anise tastes of almost nothing. Whole seed crushed in a mortar the moment it goes into dough is a different ingredient entirely. Toasting briefly in a dry pan before crushing lifts the aroma further.
Keep your planting seed separate from the kitchen jar and write the year on it. Anise seed is short-lived for sowing — realistically two to three years, less if it has been warm — so label it, store it cool and dry, and resow within that window. Fresh leaves keep only a few days in the fridge and are not worth preserving; the leaf is a garden treat, not a pantry item.
Propagation & seed saving
An annual you never need to buy twice: let the last umbels ripen fully, save the plumpest seed, and store it cool and dry. It comes true, and it will not cross with dill, fennel or caraway.
Anise is the easiest kind of seed saving, because the crop and the seed are the same thing. Simply set aside the last and best umbels on your healthiest, sturdiest plants, let them ripen fully to gray-brown on the stem, and dry them a little longer than you would for cooking. Rub out the seed, winnow the chaff, keep the plumpest, and store it in a labeled paper envelope or jar somewhere cool, dark and dry.
It is open-pollinated and comes true, and there is nothing in a normal garden it can cross with: Pimpinella anisum will not cross with dill, fennel, caraway or carrot, all of which are different genera. Insects do move pollen between anise plants, which is exactly what you want — save from several plants rather than one to keep the line vigorous. Viability is the only limit: sow saved seed within two to three years, and sow it a little thick, since germination drops as it ages.
In warm climates anise self-sows lightly where seed is allowed to fall, and volunteers are welcome. One rule applies to any ferny volunteer in an Apiaceae bed: confirm what it is before you eat it. Poison hemlock (Conium maculatum) is naturalized across most of the country, seeds into the same disturbed soil, and is lethal in small amounts — it grows tall with hairless, purple-blotched stems and smells musty rather than sweet. If a volunteer is not clearly anise, pull it and don't use it.
Nutrition
A spice used a teaspoon at a time, so its nutrient content is a technicality; the real dietary value is building sweet, warm flavor into baking and drinks without leaning on sugar or salt.
Aniseed is used in teaspoons, not servings, so nutrition tables that show it as rich in iron, manganese, calcium and fiber are accurate per 100 grams and close to meaningless in practice. A tablespoon in a batch of biscotti contributes flavor and essentially nothing measurable else.
What the seed genuinely carries is essential oil at roughly 1-4% by weight, of which anethole makes up the great majority — the compound responsible for the licorice character, and the one anise shares with fennel and star anise despite the three being unrelated. Anethole and the seed's flavonoids show antioxidant activity in laboratory work.
The practical dietary benefit is the one every strong aromatic offers: it lets you build warmth and sweetness into breads, cookies and stewed fruit while using less sugar, and into sausages and braises with less salt. Enjoy it as a flavoring, not as a health food.
In the kitchen
The flavor of ouzo, pastis, sambuca and raki, and of biscotti, pizzelle, springerle and biscochitos. Warm and sweeter than fennel seed; crush it fresh, and don't swap it one-for-one with star anise.
Anise is a baking and drinking spice before it is a cooking one. Crushed into dough it gives Italian biscotti all'anice and pizzelle, German springerle and pfeffernusse, Dutch muisjes, Mexican pan de muerto, and the New Mexican biscochito. It flavors rye and Middle Eastern breads, spiced fig and pear compotes, and traditional Italian sausage. Its most famous life is in the glass: ouzo, pastis, sambuca, raki, arak, anisette and, alongside fennel and wormwood, absinthe — the spirits that turn cloudy white with water as the anethole drops out of solution.
Two practical rules. Crush it fresh — whole seed briefly toasted in a dry pan and then crushed in a mortar is worlds away from pre-ground anise, whose aroma is gone within weeks. And treat the lookalikes as separate ingredients: fennel seed is grassier and less sweet and substitutes reasonably at about the same quantity, while star anise is stronger and more resinous and needs roughly half as much, with a noticeably different, more savory result. Star anise belongs in Chinese five-spice and pho; true anise belongs in the cookie jar.
Don't overlook the fresh leaf while the plant is growing. Torn into a fruit salad, a carrot slaw, or over baked fish, it gives a light, sweet anise lift that the seed is far too strong for.

Anise has one of the longest continuous medicinal records of any kitchen spice, running from Egyptian and Greek medicine straight into modern European pharmacy, where aniseed and anise oil still appear in licensed cough and digestive preparations. Its chemistry is dominated by anethole, which makes up most of the seed's essential oil.
Traditional uses: the seed is above all a carminative — an infusion drunk after meals for gas, bloating, and indigestion, and given traditionally across the Mediterranean and Middle East for infant colic. It is a classic expectorant in cough syrups, lozenges and teas, used to loosen a dry cough; a mild antispasmodic; a breath freshener; and traditionally a galactagogue, taken by nursing mothers to encourage milk supply.
What the evidence actually shows: much less than the tradition implies. Laboratory work supports genuine antispasmodic, antimicrobial and antioxidant activity for anethole and anise extracts, which makes the digestive use plausible. But there is essentially no clinical trial data supporting the expectorant claim, and the human research that does exist — small studies on irritable bowel symptoms, menopausal hot flashes and migraine — is preliminary, small, and not enough to call anything established. Treat it as a pleasant traditional remedy, not a proven one.
Honest cautions. Anethole shows mild estrogen-like activity in laboratory work (some aqueous extracts show the opposite), so anyone with a hormone-sensitive condition — including hormone-sensitive cancers, endometriosis or fibroids — should talk to a clinician before using concentrated anise products, and it may interact with hormone therapy. Aniseed has a traditional reputation as an abortifacient, so medicinal-strength doses are not for pregnancy. Anise contains coumarins and may add to the effect of blood thinners. People allergic to other Apiaceae — celery, carrot, fennel, coriander, dill — can react to it. The essential oil is potent, is not for undiluted internal use, and contains estragole, a suspected genotoxic carcinogen; on that basis European regulators advise against anise oil in pregnancy and breastfeeding. The galactagogue tradition needs a caution too: two breastfed newborns developed lethargy, poor feeding and low muscle tone after their mothers drank more than two litres a day of an anise-containing herbal tea, and both recovered when it stopped. And while anise water was a nursery standby for centuries, modern guidance is that herbal infusions are not for infants, who should have milk only before six months. History
Grown in Egypt before 1500 BC and prized by Greece and Rome, where a spiced anise cake ended heavy banquets and is often called the ancestor of wedding cake. Charlemagne ordered it planted; medieval England taxed it as a luxury.
Anise is one of the oldest cultivated spices in the Western world. It appears in the Egyptian Ebers papyrus around 1550 BC as both flavoring and medicine, and it was grown widely across Greece and Rome. Pliny recommended it for sweetening the breath and settling the stomach, and Roman cooks used it in mustaceum — a spiced cake of flour, must, anise and cumin baked on bay leaves and served at the end of a heavy banquet as a digestive. That cake is frequently named as the distant ancestor of the modern wedding cake.
It moved north with the Roman world and stayed. Charlemagne listed anise among the plants to be grown on the imperial estates in the Capitulare de Villis around 800 AD, and it appears in monastery gardens throughout the Middle Ages. It was valuable enough in medieval England to be treated as a taxable luxury import — a levy on aniseed is commonly cited among the duties raised in 1305 to help pay for repairs to London Bridge.
Today Egypt, Turkey, Spain and Syria are the main producers, and the plant's cultural center of gravity is the ring of anise spirits around the Mediterranean, each country insisting its own is the proper one. It reached the Americas early: Spanish colonists carried it to New Mexico, where the anise-and-brandy biscochito is now the official state cookie.
Troubleshooting
Nothing came up means crusted soil, cold ground, or old seed. Seed that stayed green means the season ran out. Dark moldy heads mean rain at ripening. Floppy plants mean no support and too much nitrogen.
The row never came up: the three usual causes are a dry crust over the seed, soil that was still too cold, and old seed. Anise seed loses viability in two to three years and germinates slowly — keep the surface damp, wait a full four weeks before writing a sowing off, and buy fresh seed rather than using a packet from three seasons back.
Plants flowered but the seed never ripened: the season ran out. Anise needs roughly 120-130 frost-free days from sowing to ripe seed. Either the sowing went in too late, or the summer was too cool and short. Sow the day frost risk ends next year, warm the soil first, and in a genuinely short-season garden treat ripe seed as a bonus over a leaf and pollinator crop.
Heads went dark, soft or moldy instead of gray-brown: rain during ripening. Cut heads earlier next time and finish them indoors, ease off watering as flowering starts, and give plants enough spacing that air moves through them.
Plants sprawled flat across the bed: normal lax habit made worse by rich soil. Support the row with string and stakes before flowering, thin properly, and stop feeding.
Seed vanished before you picked it: ripe umbels shatter. Go over the patch every three or four days rather than weekly, and cut in the morning when the heads are damp.
Yellow-brown spots spreading on leaves and heads: Alternaria leaf blight in humid weather. Space plants, water at the soil, and harvest the heads promptly rather than spraying a crop you eat.
Big black, yellow and green striped caterpillars on the foliage: swallowtail larvae, which use anise as a host. Leave them; an established plant recovers, and you get butterflies.
The seed tastes of almost nothing: either it was picked green, or it has been in the jar for years, or it was ground in advance. Ripen fully, store whole and airtight, and crush it just before use.
Growing across climates
The limit is season length and late-summer weather, not winter cold. Zones 6-9 with a warm dry late summer are ideal; zones 4-5 often finish with green seed; the humid Southeast ripens badly; zones 10-11 flip it to the cool season.
Anise is a tender annual, so winter hardiness never enters into it. What decides success is whether your summer gives it roughly 120-130 frost-free days and a warm, dry stretch while the seed colors. Both halves matter, and the second one is the half people miss.
Zones 4-5: marginal for seed. Warm the bed under black plastic for a couple of weeks, sow the day frost risk passes, and expect a fine plant, good leaves and excellent pollinator flowers — with ripe seed as a bonus in a warm year rather than a plan. Northern growers routinely report umbels that were still green when frost arrived.
Zones 6-7: reliable if you sow on time. Seed ripens late summer into early fall, and a wet September is the main risk; be ready to cut heads early and dry them indoors.
Zones 8-9, dry-summer West: the sweet spot. Inland California, the Southwest and the interior West give exactly the hot, dry ripening weather anise evolved with, and seed finishes cleanly.
Zones 8-9, humid Southeast and Gulf: the plants grow well but ripening is the problem — thunderstorms and high humidity in August darken and mold the heads. Space generously for airflow, cut each head as soon as it turns, and finish drying under cover. Many gardeners here grow it mainly for leaf and flowers and accept a small seed crop.
Zones 10-11: flip it to the cool season, sowing from mid-autumn so seed ripens in dry spring weather. Summer heat and rain are the off-season.
