
Vietnamese Lemongrass Grilled Pork
Thit nuong, the street-stall pork of Vietnam: thin slices of pork shoulder marinated in a thick paste of minced lemongrass, garlic, shallot, fish sauce, and sugar, then grilled hot until the edges char and caramelize. Served over rice with cucumber and a sharp dipping sauce.

- 5 stalks lemongrass stalks, outer layers and tough tops removed, bases minced fine · the tender bases should give about 1/2 cup minced
- 4 cloves garlic, minced
- 2 small shallots, minced
- 1 fresh hot chile (Thai bird or serrano), thinly sliced (optional)
- 1 medium cucumber, thinly sliced
- ½ cup fresh cilantro or mint, leaves picked (optional)
From the pantry
- 1½ lb boneless pork shoulder, sliced 1/4 inch thick against the grain
- 4 tbsp fish sauce · 3 tbsp in the marinade, 1 tbsp in the dipping sauce
- 3 tbsp brown sugar · 2 tbsp in the marinade, 1 tbsp in the dipping sauce
- 2 tbsp vegetable oil
- 1 lime, juiced, for the dipping sauce
- 1½ cups jasmine rice · steamed, for serving
- 1 tsp black pepper, coarsely ground
- salt · to taste
