Sweet Woodruff Pudding (Waldmeister Pudding)

The German nursery classic: a silky cornstarch milk pudding infused with a few wilted sprigs of sweet woodruff, which lend their sweet new-mown-hay and vanilla scent and are then lifted out. Mild, cool, and gone in minutes.

  • 6 sprigs sweet woodruff, picked before flowering, wilted on a plate 2–3 hours · about 1/4 ounce, or overnight wilting; this is the traditional dose and it is enough, do not add more
  • 1 cup strawberries, hulled and halved (optional) · the classic partner; alpine strawberries are even better

From the pantry

  • 2 cups whole milk
  • ½ cup heavy cream
  • ¼ cup sugar
  • 3 tbsp cornstarch
  • 1 egg yolk (optional) · for a richer, more custardy set
  • 1 pinch salt
