
Sage-Crusted Turkey Cutlets with White Wine Pan Sauce
Thin turkey cutlets with whole sage leaves pressed into the flour crust, pan-fried until golden, then finished with a quick white wine, lemon, and butter sauce and a shower of crisp fried sage. Italian trattoria cooking in half an hour.

- 1½ lb boneless turkey breast, sliced into 8 thin cutlets and pounded to 1/4 inch
- ½ cup all-purpose flour
- ½ cup dry white wine
- ½ cup chicken stock
- 3 tbsp butter, cold, cut into pieces
- 3 tbsp olive oil
- 1 lemon, half juiced, half cut into wedges
