
Pork Tenderloin Medallions with Braised Fennel
Quick-seared pork medallions rested on a bed of fennel wedges simmered until sweet and silky in white wine, garlic, and thyme, finished with lemon and the fennel fronds. Elegant enough for guests, easy enough for a Tuesday.

- 2 large fennel bulbs, trimmed, cored, cut into 1/2-inch wedges; a handful of fronds saved and chopped · about 2 pounds with stalks
- 4 cloves garlic, smashed
- 4 sprigs fresh thyme

- 1½ lb pork tenderloin, silverskin trimmed, sliced into 1-inch medallions · usually two tenderloins
- ¾ cup dry white wine
- ¾ cup chicken stock
- 3 tbsp olive oil
- 1 lemon, zest grated, then juiced
- 1 tsp Dijon mustard
