
Ginger Turkey and Edamame Rice Bowls
Ground turkey stir-fried with fresh ginger and garlic, tossed with a heap of shelled edamame and sweet peppers in a sticky soy-honey glaze, and spooned over rice. A weeknight stir-fry that puts the green soybeans front and center.

- 2 cups shelled edamame, pods boiled 4 minutes, then shelled · about 1.5 pounds of pods; frozen shelled beans work too
- 2 tbsp fresh ginger, peeled and finely grated
- 3 cloves garlic, minced
- 1 large sweet red pepper, diced
- 4 green onions, sliced, white and green parts kept separate
From the pantry
- 1 lb ground turkey
- 3 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp cornstarch
- ½ tsp red pepper flakes (optional)
- 2 tbsp vegetable oil
- 1 tsp toasted sesame oil
- 1½ cups rice, cooked for serving
- salt · to taste
