Fresh Tea Herb Lemonade

A pitcher drink, not a plate (filed under sides because there is no drink category): a big handful of fresh tea herbs steeped like tea, sweetened, and sharpened with lemon, then poured over ice. Lemon verbena and lemon balm make it lemony, mint makes it bright.

  • 2 cups fresh tea herbs (lemon verbena, lemon balm, mint, or anise hyssop), leaves and tender tips, loosely packed, rinsed · one kind or a mix; a stevia leaf or two sweetens without adding flavor
  • 6 medium lemons, juiced, about 1 cup
  • 1 cup strawberries, hulled and sliced (optional) · for the pitcher

From the pantry

  • ¾ cup sugar · or to taste
  • 4 slices fresh ginger, thin coins (optional)
