
Fresh Raspberry Cream Tart
The French patisserie classic: a crisp sweet pastry shell, a layer of vanilla pastry cream, and a whole crop of perfect raw raspberries set on top, glazed to shine. The berries are never cooked, so this is the tart for fruit picked that morning.

- 3 cups fresh raspberries, picked over, not washed unless dusty · about 1 pound; firm, dead-ripe, dry berries
From the pantry
- 1¼ cups all-purpose flour · plus more for rolling
- 8 tbsp cold butter, cut into small cubes
- ¾ cup sugar · 1/4 cup for the pastry, 1/2 cup for the cream
- 4 eggs · 1 whole egg for the pastry, 3 yolks for the cream
- 2 cups whole milk
- 3 tbsp cornstarch
- 1½ tsp vanilla extract
- ¼ tsp salt
- 2 tbsp honey (optional) · warmed with a spoonful of water, for glazing the berries
