
Seared Flank Steak with Fresh Horseradish Cream
A hard-seared flank steak sliced thin against the grain and served over peppery arugula with a sauce that only a garden can make: sour cream loaded with freshly grated horseradish root, chives, and lemon. Thirty minutes, start to finish.

- ¾ cup sour cream
- 1 lemon, juiced
- 1 tsp Dijon mustard
- 1 tsp white vinegar
- 2 tbsp olive oil · divided
