
Caraway Rye Bread
A deli-style light rye loaf with a tender, close crumb and a crackly crust, seeded inside and out with your own toasted caraway. This is the bread that makes a pastrami sandwich or a bowl of borscht taste finished.
Ingredients

- 1½ tbsp caraway seed, toasted in a dry pan until fragrant, half of it lightly crushed · 1 tablespoon goes in the dough, the rest on the crust
From the pantry
- 1½ cups rye flour · light or medium rye
- 2½ cups all-purpose flour · plus more for the board
- 2¼ tsp active dry yeast · one packet
- 1 tbsp sugar
- 2 tbsp vegetable oil · plus a little for the bowl
- 2 tsp salt
- 1 tbsp cornmeal (optional) · for dusting the pan
