Wild Parsnip
The hazard is the SAP, not eating it. Wild parsnip sap on skin plus sunlight causes phytophotodermatitis: a delayed chemical burn that reddens in about 24 hours, blisters by 48, and leaves brown stains that can last a year. Breaking a stem, string-trimming, or walking through a stand in shorts is enough. If sap touches you, get out of the sun, wash with soap and cool water at once, and keep the area covered from sunlight for at least 48 hours. Sap in the eye needs medical care.
Overview
The garden parsnip gone wild - a 4- to 5-foot roadside biennial with flat yellow umbels whose sap, in sunlight, burns skin badly enough to blister and scar. It is the reason parsnip growers wear sleeves, and it is not a foraging opportunity.
Wild parsnip is not a different plant from the parsnip in your vegetable bed. It is Pastinaca sativa, the same species, escaped from cultivation and naturalized along roadsides, trails, ditches, pastures and old fields across almost all of North America. Feral plants make a coarse rosette in year one and a grooved 4- to 5-foot flowering stem in year two, topped with flat yellow umbels — and the yellow is what makes it easy to pick out of a roadside otherwise full of white lace.
The danger is entirely about skin, not eating. Every part of the plant carries furanocoumarins. When sap gets onto skin that is then exposed to sunlight, those compounds react with UV light and destroy the surface cells. The result is phytophotodermatitis: nothing at all for the first day, then redness, then a deep chemical burn that blisters, weeps and heals slowly, leaving brown discolouration that can last a year or more on skin that stays sun-sensitive for longer. Emergency departments across the upper Midwest and Northeast see it every summer, usually from string-trimming or from walking a trail in shorts.

Sap Burn in Sunlight (phytophotodermatitis) High
The defining hazard. Sap from any part of the plant, on skin later exposed to sunlight, causes a delayed chemical burn: nothing for the first day, then redness at about 24 hours, blistering by 24 to 48, then weeping wounds that heal slowly and leave brown discolouration lasting months to a couple of years, on skin that stays sun-sensitive afterwards. Watch for: Streaky redness appearing a day after clearing work, following the lines where stems brushed skin; blistering on forearms, shins, neck and face; any sap contact at all, since there is nothing to see during the window when action still helps.
Prevent: Long sleeves, long trousers, closed boots, waterproof gloves over the cuff and eye protection for any contact. Work on overcast days or after sundown. Never string-trim or mow it in daylight. Wash skin, tools and clothing afterwards, separately.
Treat: Get out of the sun at once, wash with soap and cool water, and keep the skin covered from sunlight for at least 48 hours - that shielding is what limits the burn. Do not break blisters. See a doctor for large areas, facial involvement or signs of infection; severe cases are treated as burns. Sap in the eye needs immediate medical care. Protect healed skin from sun for months.
Roadside, Trail & Meadow Invasion High
A prolific biennial that colonises sunny disturbed corridors - verges, rail trails, fence lines, pasture edges, prairie restorations - and forms dense stands that shade out native forbs and put a burning plant along paths people walk. One plant sets hundreds to thousands of seeds and the seed bank stays viable about four years.
Watch for: Yellow umbels standing above verge vegetation in midsummer; expanding patches along a mowed edge; new rosettes appearing each spring in ground you cleared last year.
Prevent: Kill rosettes before they bolt, and never let a plant set seed. Time any verge mowing to full bloom, before seed forms, since mowing after seed set carries seed along the corridor on the deck. Keep bare ground covered - sow competitive grasses or natives into cleared patches.
Treat: Sever the taproot an inch or two below the crown at rosette stage, or cut flowering stems at the base just after full bloom. Bag everything; do not compost or burn. Repeat for several consecutive seasons until new rosettes stop appearing.
Carrot-family Misidentification High
Two failure modes, in opposite directions. Foragers who recognise wild parsnip as the familiar garden vegetable go digging in ditches that also grow poison hemlock, whose first-year rosette is another low carrot-family rosette in the same ground - and hemlock is lethal with no antidote. In the other direction, people destroy golden alexanders, a harmless native spring wildflower with yellow umbels, believing it is wild parsnip.
Watch for: Any intention to dig a wild carrot-family root; low ferny glossy rosettes with a musty smell and purple-blotched hairless stems, which is poison hemlock; short 1-3 ft yellow umbels blooming in May and June with neat lance-shaped leaflets in threes, which is golden alexanders.
Prevent: Do not forage the carrot family from roadsides and ditches at all. Separate wild parsnip from golden alexanders by height, bloom time and leaflet shape before removing anything, and wait for flowering if unsure.
Treat: Suspected ingestion of any wild umbel plant is an EMERGENCY - call poison control or emergency services immediately and do not wait for symptoms. Take a piece of the plant or a photograph. There is no antidote for either hemlock; treatment is urgent supportive hospital care.
Livestock & Pet Photosensitivity Medium
Grazing animals that eat significant amounts of wild parsnip can develop photosensitivity, with blistering and sloughing on light-skinned or thin-haired areas - muzzles, udders, teats and around the eyes. Pets pushing through a stand can blister on the muzzle and belly. Fur and hide protect most of the body, which is why the injuries concentrate where they do.
Watch for: Blistering, crusting or raw patches on muzzles, udders, teats and unpigmented skin in animals with access to a heavy stand; animals seeking shade unusually; a pet rubbing at its muzzle after a walk through a verge.
Prevent: Fence stock away from heavy stands, control it in grazed pasture before it flowers, keep dogs on paths where verges are infested, and rinse an animal that has pushed through a stand.
Treat: Move animals into shade and off the stand, and call a veterinarian for blistering or raw skin. Keep affected animals out of direct sun until the skin has healed.

You do not grow this plant; you learn it. In its first year wild parsnip is a flat rosette of pinnately compound leaves — a central stalk carrying 5 to 15 broad, coarsely toothed, mitten-shaped leaflets, rather like an oversized flat-leaf celery. Crushed, it smells of parsnip. In its second year it bolts to 4 or 5 feet on a stout, hairless, deeply grooved and ridged stem, and flowers from June into August in flat-topped umbels of small yellow flowers, 3 to 8 inches across, followed by flat, oval, papery seeds that turn tan.
Against the white-umbelled plants it grows beside. Flower colour does most of the work: Queen Anne's lace, poison hemlock, water hemlock and cow parsnip all carry white umbels, and no deadly North American carrot-family plant flowers yellow at this size and habit. Leaf shape confirms it — wild parsnip's leaflets are broad, matte and celery-like, while Queen Anne's lace and poison hemlock both have finely divided, ferny, carrot-like foliage.
The confusion that actually matters is at rosette stage, before anything flowers, when a first-year wild parsnip and a first-year poison hemlock are both low green carrot-family rosettes in the same ditch. Do not settle that question by digging. Poison hemlock's rosette leaves are finely divided and glossy, it smells musty rather than of parsnip, and its stems are hairless with purple blotches; wild parsnip's leaflets are broad, matte and toothed. But the safe rule is simpler: you are not gathering either of them, so the only decision is how carefully you dress before you cut.
Golden alexanders (Zizia aurea) is the one yellow-umbelled plant you should not destroy by mistake. It is a native, harmless spring wildflower and an important early nectar source: much shorter at 1 to 3 feet, blooming in May and June rather than midsummer, with neat, finely toothed, lance-shaped leaflets in threes rather than broad lobed ones. If you are unsure, wear gloves and wait for bloom time to separate them.
Care
Removal, done safely: cover every inch of skin, cut or dig on an overcast evening, never string-trim, bag what you cut - and come back for several seasons, because the seed bank is the real plant.
The only management is removal, and how you do it decides whether you get hurt.
Dress for it. Long sleeves, long trousers, closed boots, waterproof gloves that come up over the cuff, and eye protection. Sap soaks through cotton, so on a large stand a waterproof outer layer is better than a shirt. Work on an overcast day or in the evening, and shower with soap as soon as you finish, washing the clothing and tools separately.
Never string-trim or mow it in daylight. A strimmer converts a stand into an aerosol of sap and delivers it to your face, neck and forearms in one pass; this is the mechanism behind most of the severe cases. Mowing also does not kill it — cut plants simply regrow and flower shorter.
For a few plants, sever the taproot with a spade an inch or two below the crown, ideally at rosette stage. It is a biennial, so a plant with a cut root cannot come back. For a large stand, cut the flowering stems at the base just after full bloom and before the seed hardens, which is the narrow window where one cut stops that year's seed.
Bag everything for the trash. Cut umbels finish ripening seed on the ground, so do not leave them lying. Do not compost the material, and do not burn it — smoke and hot air carry the sap compounds onto skin and into eyes.
Then expect to come back. Seed stays viable in the soil for around four years, so control is several consecutive seasons of stopping seed set, not one afternoon. Fill the gap you create: bare ground is what it wants, and sowing competitive grasses or natives into the cleared patch does more for the fifth year than any amount of cutting in the first.
Troubleshooting
Burn first aid in order: out of the sun, wash, keep the skin covered from sunlight for 48 hours, and see a doctor for blisters or any sap in the eye. Suspected ingestion of any wild umbel plant is an immediate poison-control call.
Sap has touched my skin. Act before the sun does. Get out of direct sunlight immediately, wash the area with soap and cool water, and then keep it covered from sunlight for at least 48 hours. The reaction needs UV light, so shielding the skin during that window is the single most effective thing you can do. There will be no rash yet; the absence of one means nothing.
A red, burning patch appeared a day later, and it is blistering. That is phytophotodermatitis running its normal course — redness at roughly 24 hours, blisters by 24 to 48, often in streaks matching where a stem brushed you. Do not break the blisters. Cool compresses and a covering dressing help, and you should see a doctor for anything large, anything on the face, or anything that looks infected; severe cases are managed as burns. Expect brown discolouration afterwards that fades over months to a couple of years, and keep the healed skin covered or under sunscreen, because it stays photosensitive.
Sap got in my eye. Rinse with clean water immediately and seek medical care — do not wait to find out whether it is going to hurt.
Someone ate a plant they thought was parsnip. Treat it as an emergency and call poison control or emergency services immediately; do not wait for symptoms. The problem is not the parsnip — it is that poison hemlock and water hemlock grow in exactly these roadsides and ditches, both are lethal, both act quickly, and neither has an antidote. Take a piece of the plant with you if you can do it safely, or a photograph if you cannot.
Can I just eat the roots, since it is the same species? No. Digging them means handling the tops, and it means settling a carrot-family identification in a ditch where poison hemlock also grows. The upside is a thin, woody root that is nothing like a cultivated one; the downside is a burn or a fatal mistake. Sow parsnip seed instead.
A pet or livestock went through it. Fur protects animals from most sap contact, but muzzles, udders and thin-haired skin can blister, and cattle, sheep and horses grazing large amounts can become photosensitised. Move animals off a heavy stand, keep them shaded, and call a vet about blistering.
It came back. It always does for the first few years. The seed bank runs about four years deep, so cut or dig every plant before seed set each season until new rosettes stop appearing, and get something else growing in the bare ground.
History
A Roman staple that colonists planted, that escaped and then rode the interstate system, and that now sends people to clinics across the upper Midwest and Northeast every summer.
Parsnip has been cultivated since antiquity and was a European staple starch and sweetener before the potato and cane sugar arrived. Colonists planted it early in North America, and because it is a hardy biennial that self-sows freely, it escaped from gardens and farm plots and simply kept going.
What turned an escaped vegetable into a public-health nuisance was infrastructure. Twentieth-century road building, rail corridors, rural mowing regimes and, later, rail-trail conversions handed it thousands of miles of exactly the sunny, disturbed, uncompeted ground it prefers — and mowing done after seed set carried the seed along the verge on the mower deck. The plant did not change; the amount of it, and the number of people brushing past it, did.
The furanocoumarins were there all along. They are the plant's chemical defence against insect feeding, and the reason parsnip has always been a crop that farm workers handled covered up. As wild parsnip spread along trails, verges and prairie restorations, phytophotodermatitis from it became a routine midsummer sight in clinics across the upper Midwest and Northeast, and it acquired the local name poison parsnip — misleading, since the danger is contact rather than ingestion, but not unearned.
Several states now regulate it: Ohio lists it as a noxious weed and Wisconsin restricts it under its invasive species rule, with many county-level listings elsewhere — both for the injuries and because it crowds out the native forbs of meadows and prairie plantings.
Growing across climates
Hardy from about zone 2 to zone 9 and indifferent to soil - it follows roads, trails and mowed edges rather than climate, so it can turn up on any sunny disturbed ground across most of the continent.
Wild parsnip is hardy roughly from zone 2 to zone 9, and it is limited far more by disturbance and light than by climate. It wants full sun and open, recently disturbed ground. It is most abundant across the upper Midwest, the Great Lakes states, the Northeast and the northern Plains, with strong populations in the Pacific Northwest and the northern Rockies. It is scarcer in the deep South, where heat and dense competition suppress it, and it does not persist in shade or closed forest.
Because it follows corridors — road verges, rail lines, bike trails, fence lines, pasture edges and the margins of prairie restorations — its distribution tracks human infrastructure more than it tracks hardiness zones. Mowing timed wrong actively spreads it: cutting after seed has set drags seed along the verge. If you manage a roadside or trail edge, the useful window is cutting at full bloom, before seed forms.
Two practical consequences for a gardener. First, if you have open sunny ground next to a road, trail, pasture or hayfield anywhere in its core range, expect it to arrive, and walk the boundary for rosettes each spring. Second, wear gloves and long sleeves for any midsummer clearing in that ground — including of dead stalks in spring — even when you have not identified everything you are cutting.
