IMPORTANT: the red-berried sumacs (staghorn, smooth, spice) are EDIBLE and safe - their tart red clusters make a lemonade-like drink and the spice 'sumac.' Do NOT confuse them with POISON SUMAC (Toxicodendron vernix), a wet-swamp plant with DROOPING WHITE/GREEN berries that causes a severe poison-ivy-type rash. The rule: red, upright, fuzzy clusters = edible sumac; white, drooping berries in wet ground = poison sumac, do not touch. Those with cashew/mango allergies may react.

Overview

A tough, dramatic native shrub with tropical-looking leaves, upright red berry clusters you can turn into lemonade and spice, and jaw-dropping scarlet fall color - vigorous enough to naturalize a whole bank.

Sumac (the red-berried native Rhus species - staghorn, smooth, and their kin) is a bold, useful, and often underappreciated native shrub or small tree. It has a striking, almost tropical look - big compound leaves and, on staghorn sumac, velvety antler-like stems - and in fall it produces some of the most brilliant scarlet and orange color of any North American plant. Its upright, fuzzy, deep-red berry clusters are both beautiful and genuinely useful: steeped in water they make a tart pink 'sumac-ade' (like lemonade), and dried and ground they yield the tangy Middle Eastern spice 'sumac' used in za'atar.

It's extraordinarily tough - drought-proof, cold-hardy, happy in poor rocky soil, and excellent for erosion control and wildlife (its persistent berries feed birds all winter). The catch is vigor: it spreads aggressively by root suckers into dense colonies, so it's a plant for banks, wild edges, and big spaces, not a tidy small bed. And one critical note: this edible red sumac is not poison sumac, which is a different, white-berried wetland plant.

Not a threat to the plant but a safety hazard to the forager: edible red sumac can be confused by beginners with the unrelated, toxic POISON sumac (Toxicodendron vernix), which causes a severe poison-ivy-type rash.

Watch for: The key difference - edible sumac has RED, upright, fuzzy berry clusters in dry sunny sites; poison sumac has WHITE/green, DROOPING berries and grows in wet swamps and bogs.

Prevent: Only harvest red, upright, fuzzy berry clusters from dry sites; never touch or eat anything with white drooping berries; when in doubt, don't.

Treat: For a poison-sumac rash, wash the skin and treat like poison ivy; for a mistaken plant, remove it carefully with protection. The edible sumac itself is harmless.

Full sun and well-drained soil - it thrives on poor, dry, tough ground - but plan for its aggressive suckering by giving it room or a contained, mowable edge.

Sumac could hardly be easier to grow: give it full sun and any well-drained soil, even poor, dry, rocky, or disturbed ground, and it thrives - it's a pioneer of roadsides and old fields, drought-proof and undemanding, needing no fertilizer or watering once established. It's superb for holding banks and slopes against erosion and for filling difficult dry areas where little else grows.

The one thing to plan for is its spread. Sumac colonizes by root suckers into a broad thicket, which is exactly what you want on a wild bank but too much for a small border. Contain it by siting it where you can mow the suckers around it, by installing a deep root barrier, or simply by giving it a big, wild space to fill. It also tolerates hard pruning - you can cut it to the ground to renew or control it, and it resprouts vigorously. Choose your spot with the spread in mind and sumac rewards you with drama for almost no effort.

Sumac's berry clusters are a genuinely delicious wild harvest. Cut whole clusters when they're deep red and tart in late summer - lick a berry to check it's sour (that tartness is the flavorful, lemony coating you're after), and harvest during a dry spell, because heavy rain washes the tart coating away. Two classic uses: steep the crushed clusters in cool water (not hot, which draws out bitter tannins), strain through cloth, and sweeten for a beautiful pink 'sumac lemonade'; or dry the berries and rub/grind them (discarding the hard inner seeds) into the tangy, ruby spice 'sumac,' a staple of Middle Eastern cooking and za'atar.

Only ever harvest the red, upright, fuzzy clusters of the ornamental sumacs - and never anything resembling poison sumac's white, drooping berries. The berries are borne heavily and persist into winter, so there's plenty for both a good harvest and the birds. It's one of the easiest and most rewarding wild foods a native shrub can offer.

Storage

Dried, ground sumac spice keeps for months like any spice; the fresh berries and drink are best used promptly, though clusters can be dried whole for later use.

Sumac stores best as a dried spice. Dry whole berry clusters in a warm, airy place (or a low dehydrator), then rub the dried berries off, discard the hard seeds, and store the tangy red powder airtight and out of light - it keeps its flavor for many months, like any home-dried spice. Whole dried clusters also store well and can be steeped or ground as needed, holding their tartness longer than pre-ground powder.

The fresh 'sumac lemonade' drink is perishable and best made and enjoyed within a few days (refrigerated), but since you can dry clusters and rehydrate/steep them anytime, you can effectively enjoy sumac year-round from a single late-summer harvest. There's nothing else to store from the plant - it's the berries that count, and drying is the key to keeping them.

Propagation & seed saving

Easiest by digging and replanting its abundant root suckers; also grows from seed (needs scarification plus cold), and it essentially propagates itself.

Sumac practically propagates itself. The easiest method is simply to dig and replant its root suckers in spring - it produces them freely, each a rooted new plant identical to the parent. You can also take root cuttings. Because of this, one plant quickly becomes a colony, and sharing sumac with others is trivially easy.

From seed it's more work: the hard seed coat needs scarification (hot-water soaking or acid treatment) plus cold-moist stratification to germinate, so seed is mainly used for large-scale naturalizing or restoration; sumac also self-sows where birds drop the seed. For most gardeners, transplanting a sucker or buying a nursery plant is all that's needed - and then the challenge shifts from propagating it to containing it. Note that most sumacs are dioecious, so for berries you'll want a female (berry-bearing) plant, though colonies often include both.

Nutrition

The tart berries are rich in vitamin C and antioxidants (used as a tangy spice and drink, not a staple); ecologically, sumac is a tough pioneer that feeds pollinators and winter birds.

The main 'problem' is its spread (contain the suckers or embrace the thicket); the crucial safety point is telling edible red sumac from poison sumac (white, drooping berries, wet sites).

The vital distinction: the edible ornamental sumacs have RED, upright, fuzzy berry clusters and grow in dry, sunny, well-drained sites; poison sumac (a different plant, Toxicodendron vernix) has WHITE/green, drooping berries and grows in wet swamps and bogs - never eat or handle anything with white drooping berries. Berries taste weak or washed-out: heavy rain rinsed off the tart coating - harvest during a dry spell instead. Bitter drink: you used hot water (which extracts tannins) - steep in cool water. Growing across climates

Hot, dry South and Southwest: sumacs excel, with heat- and drought-tolerant species (like the fragrant/three-leaf sumacs and the dedicated 'spice' sumac types) thriving in lean, dry, sunny ground where little else does. Its limits aren't climatic - it shrugs off cold, heat, drought, and poverty - but rather shade (it needs full sun) and its own aggressive spread, which is the real thing to manage. For a bulletproof native that delivers wildlife value, edible berries, erosion control, and unmatched fall color across almost the entire country, few plants match sumac - as long as you give it room.
