Snapdragon
Non-toxic to people and pets. The flowers are technically edible as a bland, slightly bitter garnish but have little culinary value; snapdragon is grown as an ornamental cut flower, not a food plant. Grown as an annual in most climates (a short-lived tender perennial that can overwinter in zone 7 and warmer).
Overview
The cool-season cut flower with the snapping dragon-mouth blooms: cold-hardy, bumblebee-pollinated, and grown in tall spires for the vase or short mounds for the border.
Snapdragons are a beloved cool-season flower, famous for the hinged blooms that snap open like a little dragon's mouth when you pinch the sides — the trick every child learns first. Grown for their tall spires of florets in nearly every color, they're a staple cut flower and a favorite of bumblebees, which are just heavy enough to muscle open the flowers that lighter bees can't. Technically a short-lived tender perennial, snapdragon is grown as an annual almost everywhere, though it can overwinter and return in zone 7 and warmer.
They're a genuinely cold-hardy flower — established plants shrug off light frost and can survive well below freezing — so they're grown in the cool shoulders of the year and overwintered for early spring bloom in mild climates. Types sort by height: towering tall cut-flower series (Rocket, Chantilly, Madame Butterfly, Potomac, Costa) for the vase, and compact bedding types (Snapshot, Montego, Floral Showers) for borders and pots. The one habit that makes or breaks them is pinching for branching.

Watch out for
Snapdragon Rust High
The defining snapdragon disease: a fungus (Puccinia antirrhini) specific to snapdragons that produces raised chocolate- to rusty-brown pustules on leaf undersides and stems, yellowing and killing foliage from the bottom up in warm, humid weather.
Watch for: Rings of brown-to-chocolate powdery pustules on the undersides of lower leaves (with pale spots on top), leaves yellowing, curling, and dropping, weakened plants.
Prevent: Grow rust-tolerant series (some Rocket, Liberty, and older resistant types), space widely for airflow, water at the base so leaves dry fast, avoid crowding, and rotate where snapdragons grew.
Treat: Remove and destroy infected lower leaves promptly (don't compost); improve airflow; sulfur or other fungicides can protect new growth in wet spells. Badly infected plants are best pulled.
Rust is snapdragon's number-one disease and the main reason to prioritize morning/base watering and resistant varieties.
Gray Mold (Botrytis) Medium
Botrytis cinerea and its relatives - the fuzzy gray-brown mold of cool, wet, humid weather. It blights flowers and buds, rots ripening fruit, and moves into soft, aging, bruised or frost-damaged tissue through the smallest wound, coating whatever it kills in dusty gray spores. It overwinters on dead plant debris, spreads on air currents and by direct contact between touching tissue, and keeps working after harvest, which is why it also ruins fruit and bulbs in storage.
Watch for: Browned, collapsed flowers and buds; soft, water-soaked brown patches on leaves, stems or fruit; and a dusty gray-brown fuzz over the dead tissue. Rot jumping between two pieces of fruit or two petals that touch is the signature, and it often shows up again in the fridge or the storage box days later.
Prevent: Space and prune for airflow, water at the base rather than over the top, and go easy on nitrogen, which produces the soft growth it prefers. Clear dead leaves, spent flowers and rotting fruit at every pass, since that debris is where it overwinters. Handle fruit, buds and bulbs gently, because it enters through bruises, and cure and store anything you keep dry and well ventilated.
Treat: Cut out and destroy infected tissue as soon as it appears, and bag it rather than composting it. Harvest ahead of a prolonged wet spell and store the crop dry and cold. Protective fungicides help through long damp weather, but airflow and sanitation do most of the work.
The dense flower spike is the weak point - florets rot from the middle of the spike outward in damp weather. Cut faded spikes off rather than leaving them standing on the plant.
Powdery Mildew Medium
Powdery mildew is a fungal disease that coats leaves - and often stems, buds, and fruit - in a white-to-gray powder that looks like spilled talcum. It is not one fungus but a large family of them, each fairly specialised to its own group of plants, which is why mildew on one crop rarely jumps to an unrelated one beside it. Unlike most leaf diseases it does not need wet leaves: it thrives on warm dry days followed by humid nights, and it takes hold fastest where plants stand crowded in still air or in shade. The coating blocks light, so heavily covered leaves yellow, brown, and drop early. On many plants that is mostly disfiguring and arrives late enough not to matter; where it strips away the leaves a crop still needed to finish, it costs you size, sweetness, and quality.
Watch for: Round white powdery spots on the upper leaf surfaces that spread and merge until whole leaves look dusted. It usually starts on the oldest, lowest, most shaded leaves and works upward, so check there first. Look at the undersides too, and at stems, buds, and flower stalks, which get coated as it advances. Leaves that yellow, brown, curl, or go crisp and drop early under the coating. New growth that opens small, crumpled, or twisted where the fungus has reached the shoot tips. On plants where it gets onto the fruit, a dull gray film, russeted or scarred skin, and cracking. Late in the season, tiny dark specks scattered through the white felt - that is the fungus setting up to overwinter on the debris.
Prevent: Give plants room. Crowding and still air are the biggest single driver, so space at the full recommended distance, thin seedlings properly, and divide or prune out congested growth until air moves through the plant. Full sun and an open position help; deep shade and a still corner against a wall are where it always starts. Water at the base rather than overhead, and water early in the day so nothing stays damp overnight. Keep plants evenly watered - drought stress at the roots leaves them far more susceptible, even though the fungus itself likes dry air. Go easy on nitrogen, since soft lush growth is the most vulnerable. Where resistant varieties exist for what you are growing, choosing one is the single most effective thing you can do on a plant that mildews every year. Clear infected leaves and stems away at the end of the season rather than composting them.
Treat: Start early: sprays protect healthy tissue, they do not clean up leaves that are already coated. Pick off and bin the worst leaves as soon as you see them, and open the plant up by thinning or pruning so air moves through. On anything that regrows quickly, shearing the whole plant back forces a clean flush and beats spraying. If it keeps spreading, potassium bicarbonate, horticultural oil, or neem applied weekly will hold it - cover both leaf surfaces. Sulfur also works, but it burns the foliage of some plants, should never go on in heat, and must not be mixed with or applied close behind an oil spray. Whatever you use must be labeled for the plant you are treating: follow that label and observe its pre-harvest interval on anything you eat. Do not compost badly infected material. Late-season mildew on a plant that is finishing anyway is usually cosmetic; on a crop still filling out it is worth acting on.
A common secondary snapdragon disease alongside rust. If you are already choosing rust-resistant varieties and watering at the base, you are handling both.
Aphids Low
Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.
Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.
Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.
Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.

Snapdragons are slow from seed, so most gardeners start them indoors 8-10 weeks before setting out, or buy transplants. The seed is dust-fine and needs light to germinate: press it onto the surface of the mix and don't cover it, keep it evenly moist, and germinate cool (65-70°F). Because established plants are cold-hardy, set hardened seedlings out around the last frost in cold zones — or, in zones 7 and warmer, plant in fall to overwinter for the biggest, earliest spring bloom.
Give them full sun (a little afternoon shade in hot regions) and evenly moist, well-drained soil, and water at the base to keep the foliage dry (wet leaves invite rust). The single most important step is to pinch young plants at 4-6 inches: removing the growing tip turns one flower stalk into a bushy plant with many, which for a cut-flower grower means the difference between a few spikes and a dozen. Net or stake the tall series so the spikes stay straight.

Harvest a spike in the cool morning when the lowest third of its florets have opened and the top is still in bud — the spike keeps opening from the bottom up in the vase and lasts a week or more. Cut long stems and strip the lower leaves. One tip for cut-flower growers: keep the vase upright, because snapdragon spikes bend and curve upward (against gravity) if laid on their side.
As with all cut-and-come-again flowers, cutting is also the maintenance — a plant kept picked and deadheaded sends up new spikes for weeks. At season's end, leave a few spent spikes to form the curious skull-shaped seed capsules if you want to save seed or let the plant self-sow.
Storage
Cut spikes last a week-plus in water; the fine seed keeps for years.
Cut snapdragons are excellent keepers: recut the stems, strip submerged leaves, change the water every couple of days, and the spikes last seven to ten days or more, opening steadily from the base. Keep them upright in storage — the tips curve upward if the stems lie flat. They don't dry well for everlasting arrangements, so enjoy them fresh.
The lasting product is seed. The little dried seed capsules (their skull-like shape is a fun garden curiosity) release quantities of fine seed; kept cool, dark, and dry it stays viable three to four years. Because the seed is so small, sow saved seed thinly and press it onto the surface rather than burying it.
Propagation & seed saving

Open-pollinated types come reasonably true; the many F1 series (Rocket, Chantilly, Snapshot) will scatter into a mix of heights and colors the next generation — often a fun surprise for a casual bed but not for a matched cutting crop.
Snapdragons also self-sow readily where the ground is undisturbed, and in mild zones the plants themselves may overwinter and return, so once you grow them they often reappear on their own. To sow saved seed, surface-sow it (it needs light) and keep it cool and moist.

History
A Mediterranean wildflower whose snapping mouth and skull-shaped seed pods gave it dragon lore across cultures, bred into today's spires and dwarfs.
Snapdragon (Antirrhinum majus) is native to the rocky hillsides of the Mediterranean, from Spain across to the Middle East, where it grows as a scrambling short-lived perennial. Its common name comes from the flower's hinged, jaw-like bloom that snaps open and shut — and the botanical name Antirrhinum means 'like a snout' or 'nose-like'. The dried seed pods, which look startlingly like little skulls, gave the plant a rich folklore: it was grown to ward off curses and deception, and in some traditions was thought to hold protective powers.
Cultivated in European gardens since at least the Roman era and popular for centuries as a cottage flower, the snapdragon was heavily bred from the 19th century onward into the range grown today — from four-foot cut-flower spires to six-inch bedding mounds, and even 'butterfly'-type open-faced forms — while keeping the snapping bloom that makes it a perennial favorite with children.
Growing across climates

Snapdragons are unusual among tender-treated annuals for being genuinely cold-hardy and heat-intolerant — the reverse of a summer bedder.
