Persimmon
The ripe fruit is the food. Astringent varieties are unpleasantly mouth-puckering until fully ripe/soft; eating a lot of very unripe astringent persimmon on an empty stomach can, rarely, form a hard stomach mass (bezoar) - wait for ripeness.

A gorgeous, nearly pest-free fall fruit tree that thrives where apples struggle - low chill, late bloom, and glowing orange fruit on bare winter branches. Just learn the one rule: astringent vs. non-astringent.
The persimmon is one of the most underrated fruit trees for the home garden, and especially for the South: it's beautiful (spectacular fall foliage, then fruit that hangs like orange ornaments on bare branches into winter), it's remarkably free of pests and diseases, it needs little chill so it fruits where apples and cherries fail, and it blooms late, dodging the spring frosts that plague apricots and peaches. A mature tree is productive and long-lived.
There are two persimmons worth knowing. Asian / kaki (Diospyros kaki): larger fruit, the Fuyu and Hachiya of grocery stores, best in zones 7-10 — that is this page. American (Diospyros virginiana): a hardy native to about zone 4, with smaller but intensely rich fruit — it has its own catalog entry, American Persimmon, and if you garden colder than zone 5b that is the one to read. And the one rule that makes or breaks the experience: some varieties are non-astringent (eat firm and crisp like an apple - Fuyu, Jiro) and some are astringent (mouth-puckeringly bitter until they ripen to jelly-soft - Hachiya, most American types). Confuse them and your first bite is unforgettable, in the wrong way.

Deer (browse resistance) Medium
Deer are the largest garden problem across much of the country, and where pressure is high they set the limit on what you can grow at all. They browse at night and around dawn and dusk, taking tender shoots, leaves, buds, flowers, and fruit within about five feet of the ground, and they come back night after night to anything they have found and liked. Because they have no upper incisors they tear rather than cut, leaving ragged stem ends - that is how you tell deer damage from a rabbit's clean angled cut. In fall, bucks rub their antlers on young trunks and can strip the bark right around a stem, which kills a young tree outright. Palatability varies enormously between plants and between seasons: a herd short of food in late winter eats things it ignores in June, and no plant is truly deer-proof.
Watch for: Growth cleanly missing overnight, with the plant browsed back to a level line about as high as a deer can comfortably reach. Ragged, torn stem ends rather than the clean angled cut a rabbit leaves - the single most reliable identifier. Buds and flowers gone while the foliage below is untouched, since deer often take the best part first. Hoof prints and droppings in soft ground near the damage. Repeat visits, with fresh damage each morning once a planting has been found. On young trees, shredded and stripped bark and broken low branches in autumn - that is antler rubbing rather than feeding.
Prevent: Fencing is the only thing that reliably works. Eight feet is the standard for excluding deer, or two parallel four-foot fences a few feet apart, which they will not jump because they cannot judge the landing. Short of that, cage individual plants: a sturdy wire cage or trunk guard around every young tree, left on until the trunk is thick and the canopy is above browse height, prevents both browsing and antler rubbing and is the single highest-value thing you can do for a young tree. Repellent sprays do help at moderate pressure, but they wash off and deer habituate, so reapply after rain and rotate between different types through the season. Motion-activated sprinklers, scent deterrents, and noise devices work for a while and then stop. Siting matters too: plants close to the house, in daily traffic, and screened behind other planting get browsed less than the same plant out at the boundary.
Treat: There is no chemical fix, only exclusion and recovery. Get physical protection up immediately after the first damage, because deer return to a known meal, and reinforce or rotate whatever you were relying on before. Most plants regrow from browsing if the crown and roots are intact - feed and water a grazed plant and protect the regrowth while it comes back. What does not recover in the same season is anything whose buds or flowers have been taken, and a young tree whose bark has been rubbed right around the trunk is usually lost. Where deer pressure is genuinely heavy, the honest answer is to fence properly or to grow the plants deer leave alone, rather than to keep replacing losses.
Persimmons are a favorite deer fruit - wild persimmons are a major deer food - and young trees are the vulnerable stage. On a mature tree the fruit that hangs high is usually safe.
Birds & Wildlife Medium
Birds find ripening fruit and seed before you do. Robins, waxwings, starlings, catbirds, jays, sparrows, finches, blackbirds, and doves all work a garden, and the pressure arrives in a narrow window - the last days before harvest, when sugar rises, color changes, and the crop softens or the grain hardens. A flock can strip a small planting in a day or two, and birds that only peck rather than take whole fruit still leave wounds that rot or draw wasps. Squirrels, chipmunks, and other wildlife usually turn up on the same crop at the same time. This is competition rather than disease: the birds are not harming the plant, and a big tree or a heavy-cropping bush often has enough for everyone - but on a small planting it can be the difference between a harvest and none.
Watch for: Fruit disappearing from the outermost, most exposed parts of the plant first, and from the top of a tree where you cannot reach anyway. Single neat pecks and gouges in ripening fruit, with several fruits sampled rather than one eaten through - the classic sign that it was birds rather than an animal. Heads of grain or seed going visibly lighter and emptier as they ripen, with hulls and chaff scattered underneath. Freshly sown seed vanishing off the surface of a bed before it germinates. Bird traffic in and out of the plant picking up as the crop colors, and birds waiting on nearby wires and branches. Wasps arriving at the pecked and split fruit shortly afterward.
Prevent: Net, and net early. Bird netting draped over a frame or hoops so it stands off the fruit, with the edges closed at ground level, is the only thing that reliably works at harvest scale - and it has to go on before the crop starts to color, because once birds have found the food they are far harder to displace. Keep fruit trees small enough that netting them is actually feasible; that decision gets made years earlier, at planting. Bags of mesh, organza, or paper slipped over individual heads, clusters, or prize fruit protect a small crop without netting the whole plant. Then shorten the exposure: pick promptly and completely rather than leaving ripe fruit hanging as a lure, clear split and dropped fruit that draws birds and wasps alike, and where a crop can finish off the plant, harvest a little early and ripen or dry it under cover. Rake in or cover broadcast seed so it is not lying in plain view.
Treat: There is no treatment once a crop is being taken - only protection and timing, so the answer is to get netting on and to pick what is ready. Reflective tape, flash ribbon, spinners, and decoy predators do work, but only for a few days at a time: birds habituate fast, so move and rotate them and never rely on them as the main defense for a crop you care about. Cut and gather grain or seed heads a little early, at firm dough, and finish drying them under cover instead of leaving them standing for the flocks. Plant a little extra, or a decoy crop the birds prefer, and accept sharing anything that crops heavily. On a wild or foraged patch, fruit going to birds and small mammals is the point of the plant rather than a problem to solve.
Late-hanging fruit is exposed to birds and squirrels for a long window. Harvest firm non-astringent fruit promptly and ripen it indoors to beat them; astringent types can also be picked full-colored and finished inside.
Scale & Sooty Mold Low
Scale insects are sap-suckers that spend most of their lives immobile, fixed to a stem, twig, or leaf underside beneath a waxy or shell-like cover. They look far more like bumps, blisters, or crusty encrustations than like insects, which is why an infestation is usually well established before anyone notices it. Soft scales excrete large amounts of sticky honeydew that drips onto everything below and grows a black sooty mold - and those blackened leaves are often the first thing a gardener actually sees. Armored scales produce no honeydew but sit under a hard shield that protects them from most sprays. They spread as tiny mobile crawlers in the weeks after hatching, which is the only stage that moves and the only stage that is easy to kill. Populations build on stressed plants, on crowded shaded growth, and above all on plants kept indoors in dry, still air over winter.
Watch for: Rows of small brown, tan, black, white, or waxy bumps along stems, twigs, leaf midribs, and leaf undersides that do not brush off but can be scraped loose with a fingernail. A sticky shine on the leaves - and on the floor, table, or path beneath the plant - that later turns black with sooty mold. Ants running steadily up and down the stems, since they farm and defend scale for that honeydew; often the first sign anything is wrong. Yellowing leaves, weak thin growth, and dieback of individual branches or canes that are heavily encrusted. On fruit crops, scale covers and sooty mold directly on the fruit. Check the leaf undersides and the shaded inner wood, which is where colonies build up unseen.
Prevent: Inspect. Look over leaf undersides and stems regularly - on a crop you pick, every harvest is a scouting chance - and check every new plant thoroughly before you buy it, plant it, or set it beside anything else, because scale almost always arrives on a plant rather than flying in. Quarantine new houseplants for a few weeks. Keep plants unstressed and not over-fertilized, since soft, forced growth is what populations build on. Prune for airflow and light to open up the shaded inner growth where scale hides, and prune out heavily infested wood as routine maintenance - on anything that gets a hard annual pruning, that alone removes most of any buildup. Leave the lady beetles, lacewings, and parasitic wasps alone, since they normally keep scale down to nothing, and keep ants off the plant where you can, because ants protect the colonies from those predators. Indoors, avoid hot, dry, still winter air.
Treat: Horticultural oil is the main control: it works by smothering, so it has to coat the insects thoroughly - stems, twigs, and leaf undersides - and it usually needs repeating, because the waxy covering shields them and no single pass reaches everything. On deciduous woody plants a dormant-season oil smothers the overwintering stage while the leaves are out of the way, and timing a growing-season spray to the crawler stage, when the young are mobile and uncovered, is far more effective than spraying settled adults. On a small plant or a light infestation, scrub or wipe the scales off by hand, or dab them with a cotton swab of rubbing alcohol. Prune out and destroy badly encrusted wood rather than trying to save it. Wash off the sooty mold once the scale is gone - it lives on the honeydew, not on the plant, and stops once the supply does. Anything you spray must be labeled for the plant, and oils can burn delicate foliage, so test first.
One of the few pests that touch the otherwise trouble-free persimmon, and even then rarely serious - natural predators usually keep it in check without help.
Persimmon Anthracnose & Leaf Spot Low
Fungal leaf-spot and anthracnose diseases that cause dark spots and lesions on leaves (and occasionally fruit) in warm, wet weather, sometimes leading to premature leaf drop, but rarely serious on healthy trees.
Watch for: Small dark spots or sunken lesions on leaves, and occasionally on fruit, worst in humid, rainy spells.
Prevent: Rake up and destroy fallen leaves, prune for airflow, and avoid overhead watering; persimmons shrug off most leaf disease when kept open and healthy.
Treat: Rarely warrants spraying; remove badly affected leaves and improve airflow. A copper fungicide is an option only under heavy pressure.
Persimmons are among the most disease-free fruit trees - this is a minor, occasional issue, not a routine threat.

Grow
Plant a young tree carefully (the taproot is brittle) in full sun and well-drained soil. Match species to your zone and pick non-astringent or astringent to your taste.
Two decisions come first. Species by zone: in zones 7-10 grow Asian kaki persimmons (bigger, familiar fruit); in zones 5b-6 the only trees on this page that will survive are the hardy Asian-American hybrids (Nikita's Gift, Rosseyanka); colder than that, grow the native American persimmon, which has its own catalog entry. Type by taste: if you want to eat fruit crisp off the tree like an apple, choose a non-astringent variety (Fuyu, Jiro); if you love soft, custardy, intensely sweet fruit and don't mind waiting for full ripeness, choose an astringent one (Hachiya).
Plant a young tree in spring in full sun and well-drained soil, handling the roots gently - persimmons grow a deep, brittle taproot and hate being disturbed, so smaller trees transplant better than large ones. Give it room; many grow 20-30 feet. Most home varieties are self-fruitful or set seedless fruit alone, but check whether yours needs a pollinator. Persimmon care is delightfully minimal - a big part of the tree's appeal. It needs little pruning: just remove dead, crossing, or weak wood in late winter and shape young trees to strong scaffolds, because the wood is brittle and narrow crotches split under fruit load. Pests and diseases are few - persimmons are among the most trouble-free fruit trees, rarely needing any spraying, which alone makes them worth growing.
Water steadily through summer to prevent the fruit drop and cracking that come with drought stress, and go easy on nitrogen fertilizer, which pushes leaf growth and worsens the natural fruit drop. If a tree sets a very heavy crop, thin some fruit - both to protect the brittle branches and to curb alternate-year (biennial) bearing. Deer love persimmons (leaves and fruit), so young trees may need a guard or fence. Beyond that, mostly you just watch it grow and wait for the glowing fall harvest.

Everything about persimmon harvest hangs on whether your variety is astringent or not. Non-astringent types (Fuyu, Jiro) lose their tannins while still firm, so you pick them deep orange and crisp and eat them like an apple - crunchy, sweet, mild. Astringent types (Hachiya, most American persimmons) hold their mouth-puckering tannins until the fruit ripens to a soft, jelly-like, almost liquid custard - eat one firm and you'll never forget the dry, chalky pucker; wait until it's squishy-soft and it becomes one of the sweetest fruits there is. You can pick astringent types full-colored but firm and ripen them indoors — a paper bag with an apple or banana in it supplies the ethylene that finishes the job. What does not work is picking hard, immature fruit and freezing it; that thaws soft but still puckers.
To harvest, cut the fruit with pruners leaving a bit of stem and the green calyx cap attached - pulling tears the fruit. One of the persimmon's charms is that it ripens late, often after the leaves have dropped, so the tree stands bare and hung with glowing orange fruit into November and December - beautiful, and a reason to leave some on the branch. A mature tree can give a heavy crop, so plan to eat, dry, and freeze pulp in a burst.
Storage
Firm non-astringent fruit keeps for weeks; soft ripe fruit only days. Ripen astringent fruit in a bag with an apple, not in the freezer. The great persimmon preservation is dried fruit (hoshigaki) and frozen pulp for winter baking.
Storage depends again on type and ripeness. Firm non-astringent persimmons keep well - a few weeks in the refrigerator, longer than most tree fruit, and they ship without bruising. Soft, ripe astringent fruit is fragile and short-lived, best eaten within a couple of days. Freezing is often sold as a shortcut here, and it needs qualifying: freezing ruptures the cells so the fruit thaws soft, which helps a fruit that was already close to ripe, but it does not reliably remove the tannins from a hard, immature persimmon - that one thaws to mush and still puckers. Commercial de-astringency uses carbon-dioxide or ethanol vapor, not a freezer. The reliable home route is ethylene: pick full-colored fruit and ripen it indoors in a paper bag with an apple or a banana. That works for Hachiya and for native persimmons alike. Whatever you do, wait for full color before you pick.
The traditional preservation methods are wonderful. Dried persimmons are a delicacy across Asia - Japanese hoshigaki are astringent persimmons peeled, hung, and hand-massaged for weeks into a chewy, sugar-dusted sweet - and any astringent variety dries into candy-like fruit. Persimmon pulp (scooped from ripe fruit) freezes beautifully in bags and becomes the base for the persimmon puddings, breads, and cookies that are a fall tradition, especially with American persimmons. A heavy crop becomes a winter's worth of baking.
Growing across climates
Low chill and late bloom make persimmons ideal where apples fail. Zones 7-10: Asian kaki. Zones 5b-6: the hardy hybrids only. Colder: the native American persimmon, which has its own entry. The species choice is by zone.
Zones 5-6: the Asian kaki persimmon is not reliably hardy here, but the native American persimmon (Diospyros virginiana) is - hardy to about -25°F, thriving where the trees grow wild across the eastern US, and carried in this catalog as its own entry - along with the hardy Asian-American hybrids on this page (Nikita's Gift, Rosseyanka), which give bigger fruit than the native with more cold tolerance than a kaki, down to about zone 5b. Zones 7-10: prime kaki country - Fuyu, Jiro, Hachiya and the full range grow beautifully, and their low chill requirement (only about 100-200 hours) is easily met, so persimmons fruit reliably in the warm South and West where high-chill apples and cherries simply won't. Deep South and mild-winter West: excellent - the low chill and late bloom together make persimmon one of the best-adapted fruit trees for these climates. The persimmon's low chill and frost-dodging late bloom are precisely why it succeeds where the classic orchard fruits struggle - match the species to your winter's cold and you're set.
Troubleshooting
A mouth-puckering fruit is an astringent variety eaten too soon - let it ripen soft. Heavy fruit drop is often normal or over-watering; broken limbs are the brittle wood under an unthinned load.
The fruit made my mouth pucker horribly: you ate an astringent variety before it was fully ripe - astringent persimmons must be jelly-soft before eating; non-astringent ones can be eaten firm. Freezing is not a fix for a hard, immature fruit (it softens the texture without reliably removing the tannins); ripen full-colored fruit indoors in a bag with an apple or banana instead. This is the number-one persimmon surprise, not a problem with the tree. Lots of fruit dropping in early summer: usually normal self-thinning, but heavy drop can come from over-watering, too much nitrogen, or a young tree not ready to carry a crop. Branches snapping under fruit: persimmon wood is brittle - thin heavy crops and build strong scaffolds. No fruit despite a mature tree: check whether your variety needs a pollinator, or whether it's an alternate-bearing 'off' year. Blackened leaf spots or scale insects: minor and rarely need treatment; persimmons are famously trouble-free. Cracked fruit: uneven watering - keep summer moisture steady.
Nutrition
Exceptionally rich in vitamin A and vitamin C, plus fiber, manganese, and antioxidants - one of the more nutrient-dense fruits, with real fiber and tannin content.
Persimmons pack an impressive nutritional punch: they're an excellent source of vitamin A (that deep orange is beta-carotene and related carotenoids) and vitamin C, with good fiber, manganese, potassium, and a wealth of polyphenol and carotenoid antioxidants. Calorie for calorie they're one of the more nutrient-dense fruits, and the fiber content is notably high.
The tannins that make astringent varieties pucker your mouth are themselves antioxidant compounds (concentrated in unripe fruit and largely gone or bound up by full ripeness). One practical nutrition-and-safety note tied to those tannins: eating a large quantity of very unripe, highly astringent persimmon - especially on an empty stomach - can, rarely, cause the tannins to clump food into a hard stomach mass (a 'diospyrobezoar'). The simple avoidance is the same as the flavor rule: eat astringent persimmons only when fully ripe. Ripe fruit of either type is wholesome, nutritious food.

The two types cook differently. Non-astringent persimmons (Fuyu) are eaten firm - sliced into salads, onto cheese boards, diced into salsa, or just crunched out of hand like a sweet, mild apple. Astringent persimmons (Hachiya, American) are used soft: the ripe pulp scooped straight from the skin is a dessert on its own, and it's the classic base for persimmon pudding, bread, cookies, and cake - a cherished fall and holiday tradition, especially in the American Midwest and South with native persimmons.
The intense sweetness of a fully ripe persimmon needs little added sugar. Beyond baking, both types dry superbly into chewy candy (Japanese hoshigaki being the artisanal peak), the pulp freezes for winter baking, and persimmons make good jam, chutney, and even fruit leather. In salads and savory dishes, persimmon pairs with sharp cheese, bitter greens, citrus, ginger, and cured meats. A tree's heavy crop turns easily into a winter's worth of puddings and dried fruit.
Propagation & seed saving
Named varieties are grafted (seeds don't come true and take up to 7 years to fruit), but you can grow rootstock from seed and graft, or start hardy Americans from stratified seed.
Persimmon varieties are propagated by grafting onto seedling rootstock - a grafted tree keeps the parent's fruit type and bears in a few years, while a seed-grown persimmon is a genetic wild card and can take up to seven years to fruit, if it fruits well at all. So for a known Fuyu or Hachiya, buy or graft a named variety. Persimmons can be tricky to graft (timing and the brittle taproot matter), which is why grafted trees cost more, but the head start is worth it.
That said, growing persimmons from seed is a rewarding project, especially with the native American persimmon: clean and dry seeds from ripe fruit, then cold-stratify them (moist, in the fridge, for 2-3 months of fake winter) before planting. Seedlings make excellent rootstock to graft your chosen variety onto, and American persimmon seedlings sometimes fruit acceptably on their own. Because persimmons resent root disturbance, start seeds in deep pots and transplant young. For most gardeners the practical route is a grafted tree; for the patient enthusiast, seed and graft is a genuine option.

Ripe persimmon is nutritious food, not medicine. The honest note is a caution about eating large amounts of unripe astringent fruit, which can rarely form a stomach bezoar.

Persimmon leaves are brewed into a traditional tea in parts of Asia, and the fruit is valued in folk practice for digestion and general nourishment, but the persimmon's real health contribution is straightforward and dietary: it's a vitamin-A- and vitamin-C-rich, high-fiber, antioxidant-dense fruit. Treat it as excellent food rather than a remedy.
The one genuinely useful caution belongs here rather than in a claims list. The tannins concentrated in unripe astringent persimmons can react with stomach acid to bind food into a hard mass called a bezoar (specifically a 'diospyrobezoar'), particularly if you eat a lot of very unripe fruit on an empty stomach. This is uncommon and entirely avoidable: eat astringent persimmons only when fully ripe and soft, and eat them as part of a meal rather than by the bagful unripe. Freezing is not a substitute for ripeness here - it softens the texture without reliably removing the tannins, so a frozen-then-thawed immature fruit carries the same tannin load. Ripen full-colored fruit indoors in a bag with an apple or banana instead. Ripe fruit of either type carries no such concern - it's simply wholesome.

The Asian or kaki persimmon (Diospyros kaki) has been cultivated in China for well over a thousand years and became a beloved cultural fruit in Japan and Korea, where it's the national fruit of Japan and where the art of hand-dried hoshigaki developed - the trees appearing constantly in East Asian art as a symbol of good fortune and, hung with fruit on bare winter branches, of resilience. Kaki persimmons reached the West in the 1800s.
Meanwhile the American persimmon (Diospyros virginiana) was a native staple long before that: growing wild across the eastern and southern US, its fruit was dried and made into breads and cakes by Native peoples and later by colonists. The very name is Native American - from a Powhatan (Algonquian) word often translated as 'dry fruit,' recording the traditional practice of drying the astringent fruit until sweet. The genus name Diospyros means 'fruit of the gods,' and the family (Ebenaceae) also gives us ebony wood. Plant a persimmon and you're growing a fruit that has meant fortune in Asia and sustenance in America for many centuries.
