Plant with care. The root is good food, but nothing else on the plant is. The leaves, vines, flowers, pods and especially the SEEDS contain rotenone and are poisonous, and people have been poisoned eating the young pods as green beans. Grow it where children will not pick pods.

Only the peeled storage root is food. The seeds, pods, leaves, flowers and vines contain ROTENONE - the seeds most of all, long used as a fish poison and insecticide. Poisonings happen when young pods are mistaken for green beans, so never eat jicama pods at any stage, cooked or raw, and keep them from children and animals. Peel the fibrous brown skin off generously before eating; the white flesh beneath is safe raw or cooked. Label any saved seed as poisonous and store it away from food.

Jicama is a vigorous tropical bean vine grown for a single swollen taproot at its base: a squat, tan-skinned globe with snow-white flesh that is crisp, juicy, faintly sweet, and famously refreshing raw. It goes into Mexican street snacks with lime and chili, into slaws and fruit salads, and into stir-fries where it stays crunchy the way a water chestnut does. Because the cut flesh does not brown, it is one of the few vegetables that looks as good an hour after slicing as it did at the knife.

It is a legume, and that is the catch. Jicama belongs to a genus that makes rotenone — the botanical insecticide — and stores it in the leaves, vines, flowers, pods, and above all the seeds. The root is food; nothing else on the plant is. People have been poisoned eating young jicama pods in the belief that any bean pod is a green bean, so if you grow it where children pick things, the pods are the thing to know about.

Growing it takes patience and heat: five to nine frost-free months on a tall trellis, with the root only really swelling once the days shorten in late summer. That makes it a straightforward crop in zones 9 and warmer, and an experiment anywhere colder.

Jicama defends itself chemically. The leaves, vines, flowers, pods and seeds contain rotenone and related rotenoids - the same compounds once sold as a botanical insecticide and long used as a fish poison across the Americas. The seeds are by far the most concentrated, and green pods are concentrated enough to poison someone who eats them. The swollen root is the exception: it holds no meaningful amount and is a normal food. Poisonings happen when a young pod is mistaken for a green bean or a snow pea, which is an easy mistake on a plant that is visibly a bean vine. Symptoms include burning in the mouth and throat, nausea, vomiting, abdominal pain and, in serious cases, difficulty breathing and collapse.

Watch for: Green pods forming along the vine from late summer, looking exactly like immature green beans. Children or visitors picking and tasting pods from a plant that is obviously a bean. Dried pods left hanging on the vine or dropped into a compost heap, where the seed stays potent. Saved seed kept in an unlabelled jar near food, or beside edible bean seed. Livestock or poultry offered jicama tops and trimmings after harvest.

Prevent: Pinch the flowers off through the season - it is what makes a big root anyway, and it stops pods forming at all. Where you do let plants flower for seed, do it at the back of the row and tell anyone who picks in the garden that those pods are not food. Pull the vines well out of reach at harvest rather than leaving them in a heap, and never feed tops, pods, or trimmings to animals. Label saved seed clearly as poisonous, store it away from the kitchen and out of children's reach, and never keep it next to edible bean seed.

Treat: There is no home remedy. If someone has eaten pods, seeds, leaves, or vine, call Poison Control (1-800-222-1222 in the United States) or emergency services immediately and say the plant was jicama or yam bean and contains rotenone; for a pet or livestock, call a veterinarian the same way. Do not wait for symptoms, and do not try to induce vomiting unless you are told to. Rinse the mouth with water. Sap on skin can irritate, so wash it off.

The root is genuinely safe food and none of this applies to it. The point is that nothing else on the plant is, and the pods are the part people actually eat by mistake.

The commonest way a jicama crop fails is that it never makes a root worth digging, and two causes account for nearly all of it. First, flowering: left to bloom, the vine puts its energy into pods and seed rather than the taproot, and a heavily flowering plant can finish the season with a root no bigger than a radish. Second, season length: jicama needs five to nine warm months and the root bulks in earnest only once daylength shortens in late summer, so a late sowing or a short northern season simply runs out of time. Excess nitrogen and shade push the plant the same way, building vine at the root's expense.

Watch for: A magnificent 15-foot vine covered in blue-white or violet pea flowers - that is the crop going into seed. Pods forming along the vine through August and September. A test scrape at the crown in autumn that turns up a thin taproot rather than a swelling globe. Vines still lush and green in late autumn with no sign of yellowing, meaning the plant has not begun to finish. A sowing date later than mid-May, or a first frost less than five months after sowing.

Prevent: Pinch or shear off every flower bud as it appears, right through the season - this one habit is the difference between a five-pound root and a stringy one. Sow as early as warm soil allows, and start seed indoors in zone 8 and colder so the plant gets a head start. Feed lightly, keep it in full sun, and grow it up a trellis rather than letting it sprawl. At the cool edge of its range choose the faster water-type (agua) jicama over the milk type.

Treat: There is no rescue late in the season: a plant that has already podded has spent the crop. Strip every flower and pod off as soon as you notice and the plant will put what season remains into the root, which is worth doing but will not fully make up the difference. Otherwise dig what you have, eat the small roots - they are perfectly good, just modest - and fix the sowing date and the flower-pinching next year.

Worth reading before you plant rather than after you dig. Most disappointed jicama growers did everything right except take the flowers off.

Root rot is not one organism but a group of soil fungi and water molds - Pythium, Phytophthora, Fusarium, Rhizoctonia and others - that sit harmlessly in most soils and only turn destructive when the ground stays saturated. Waterlogged soil drives the air out, the roots suffocate, and the weakened tissue is invaded and goes soft, brown, and stringy. Because the damage is underground you usually see it first as something that looks like drought: wilting, yellowing, stunting, a plant that does not respond to being watered. Overwatering, heavy compacted ground, a low spot that collects runoff, a pot with no drainage or a saucer left standing full, and cold wet soil in winter are the usual causes. Once roots have actually rotted there is no cure - this is a problem you prevent rather than treat.

Watch for: Wilting in the middle of the day on a plant whose soil is damp - the classic tell, and the reason people water a rotting plant and finish it off. Leaves yellowing from the bottom up, dull off-color foliage, and growth that stalls for no visible reason. Whole shoots, or one side of the plant, collapsing while the rest still looks fine. Soft, dark, or mushy tissue at the base of the stem or at the crown, sometimes with a sour smell. Lift a failing plant and look at the roots: healthy ones are firm and pale, rotted ones are brown or black and slimy, and the outer layer slips off between your fingers leaving a thread of core behind. Seedlings that topple over at soil level are the same problem, called damping-off.

Prevent: Drainage is the whole defense. Match the plant to the site first - something that wants sharp drainage will not survive heavy clay or a low, water-collecting spot however well you tend it. Where the ground is heavy, plant on a raised bed, berm, or slope, or grow in a container. Set plants at the depth they were already growing, since burying the crown or the root flare is a common cause of rot, and keep mulch pulled back a few inches from the stem base instead of piled against it. Water the soil rather than the calendar: check that the top inch or two is dry before watering again, cut back hard in cool weather and winter dormancy, and never leave a pot standing in a full saucer. Do not plant or dig in soggy ground, and go easy on rich amendments for plants that want it lean. Rotate annual crops, and start with clean healthy plants and fresh mix.

Treat: There is no cure for tissue that has already rotted, so act on the conditions rather than looking for a spray. Stop watering at once and fix the drainage - open up compacted soil, or move the plant to a raised, sharply drained position or a container. Lift a badly affected plant, cut away every soft dark root and rotted section with a clean blade back to firm pale tissue, and replant only the healthy parts into fresh free-draining soil or mix. Often the better move is to give up on the plant and save its offspring instead: cuttings, offsets, or divisions taken from firm healthy growth root readily and give you a clean start. Bin the rotted material rather than composting it, and correct the drainage before you replant, because the rot comes straight back in the same wet spot.

A jicama root sits in the ground for the better part of a year, so a low spot that holds water after summer storms will rot the crop before you ever dig it. Grow it on a ridge or a raised bed in loose, freely drained ground, and use any fork-damaged roots first rather than storing them.

Spider mites are not insects but tiny sap-feeding arachnids, smaller than a grain of salt, and you almost always notice the damage before you notice them. They live on the undersides of leaves and drain the cells one at a time, which is why the leaf goes finely stippled with pale dots before it bronzes and dries. They breed explosively in hot, dry, dusty, still air - a generation can pass in a week at high temperature - so a barely visible population becomes a webbed, bronzed plant within a fortnight. Drought-stressed plants and plants wintered indoors in dry heated air are the classic hosts. Broad-spectrum insecticides make matters worse rather than better, because they kill the predatory mites and lady beetles that normally hold mites in check.

Watch for: Fine pale stippling or speckling across the upper leaf surface, as though the color had been sandblasted out of it, and later a dull bronze or rusty cast over the whole leaf. Delicate webbing across leaf joints, shoot tips, and undersides - that comes with a heavy infestation and means you caught it late. Leaves that dry, curl, and drop early while the plant looks thirsty no matter how much you water it. Hold a leaf over a sheet of white paper and tap it: the specks that fall and then start walking are mites. With a hand lens, look on the undersides for the mites themselves, pale or reddish, and their round translucent eggs. Damage that shows up first on the hottest, dustiest, most sheltered side of a plant, or on a pot sitting near a radiator indoors.

Prevent: Do not let plants get drought-stressed - that is the single strongest trigger, and a plant watered steadily through heat is far less likely to have a mite problem at all. Hose the foliage down, undersides included, during hot dry spells: it knocks mites off, washes away the dust they thrive in, and raises the humidity around the plant for a while. Indoors and under cover, keep the air from going hot, dry, and stagnant, wipe or rinse the leaves occasionally, and keep pots away from radiators and heating vents. Inspect any plant carefully before you bring it indoors for winter or set it among others, since mites almost always arrive on something else. Avoid broad-spectrum insecticides: they wipe out the predatory mites, lacewings, and lady beetles that do most of this work for you, and reliably leave you with a worse outbreak than you started with.

Treat: Start with water. A strong jet aimed at the leaf undersides, repeated every few days for a couple of weeks, knocks populations down and breaks the cycle - on many plants that alone ends it. On anything that regrows quickly, shearing back badly infested growth resets the plant to clean foliage. If it keeps building, spray insecticidal soap or horticultural oil directly onto the undersides where the mites actually live, and repeat every five to seven days for three rounds: contact sprays do not kill the eggs, so a single application always fails. Anything you spray must be labeled for the plant you are treating - follow the label and observe its pre-harvest interval on anything you eat. Predatory mites are an effective release in a greenhouse or on an indoor plant. Above all, correct the heat, dust, and drought stress that caused it, or the mites simply come back.

Worst in the hot dry midsummer weeks when jicama is building the canopy that will fill the root. Heavy defoliation then costs you size in November, so hose the undersides through heat waves and keep the vine watered.

Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.

Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.

Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.

Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.

Rarely serious on a vine this vigorous, and the harvested part is underground, so tolerate light colonies and let beneficials work. Watch the shoot tips in early summer while the plant is still small.

Tiny white sap-sucking insects that cluster on leaf undersides and lift off in a cloud when the foliage is brushed. They weaken growth, and the honeydew they excrete coats the leaves below in a sticky film that blackens with sooty mold. Some species also transmit plant viruses. They breed fast in warm, still, sheltered air, which is why they are far more trouble under cover and on plants overwintered indoors than on the same plant outside.

Watch for: Clouds of tiny white insects rising when you shake the plant, flat scale-like nymphs stuck to the leaf undersides, a sticky shine on the leaves below them, black sooty mold over that, and yellowing, weakened growth.

Prevent: Inspect the undersides of any new plant before it joins the others, and quarantine anything you are bringing under cover or indoors for winter. Avoid crowding and heavy nitrogen feeding, which produce the soft growth they prefer. Hang yellow sticky traps early to catch the build-up while it is still small, and encourage lacewings, ladybugs and parasitic wasps outdoors.

Treat: Hose off light infestations, then spray insecticidal soap or horticultural oil onto the leaf undersides where they actually sit. Sprays do not kill the eggs, so repeat every few days for two or three weeks or the population simply rebuilds. Yellow sticky traps knock back the adults, and outdoors natural enemies usually finish the job.

The milk jicama, named for the milky sap that runs when you cut it. Roots are more elongated and the flesh is firmer, drier, and less sweet than the water type - which makes it the better one for cooking, where it holds its crunch through a stir-fry or a long-simmered soup. It needs a slightly longer season, so it is not the type to choose at the cool edge of jicama's range.

Grow

Direct sow into thoroughly warm soil after frost, give it full sun and a tall sturdy trellis, and count on five to nine frost-free months.

Sow jicama seed about an inch deep and 8 to 12 inches apart once the soil is thoroughly warm — 70°F or better, two to three weeks after your last frost. The seed is large and slow, taking one to three weeks to come up, and an overnight soak speeds it along. In zone 8 and colder, start seed indoors six to eight weeks early in deep pots and set the plants out only into warm ground.

Give it full sun and a sturdy trellis. Care

One job changes the crop more than all the others: pinch off every flower. Left to bloom and pod, a jicama vine spends the season making seed instead of a root.

Jicama care is mostly trellising and watering, plus one decision that matters more than the rest put together: take the flowers off. Left alone, the vine blooms heavily from late summer and pours its energy into pods and seed, and you dig a disappointing root. Pinch or shear the buds off as they appear, right through the season, and the plant redirects everything downward. Growers who keep it up get roots several times the size of those who do not.

There is a safety dividend too, because the pods and seeds are the poisonous part — removing the flowers removes them before they can form. If you do want seed for next year, let one or two plants at the back of the row flower and pod, and accept that those particular plants will give you small roots.

Otherwise: keep the vine on its support, water evenly through summer, weed until the canopy covers the ground, and feed lightly if at all. Jicama has few pests in a home garden. Ease off water once the foliage yellows in autumn, and never let a frost reach the plant, because frost-damaged roots turn soft and will not keep.

Harvest

Dig once in late autumn, after the vines yellow and before frost, five to nine months from sowing - usually one big root per plant.

Jicama is dug once, at the end of the season. Wait for the days to shorten and the vines to yellow and begin dying back — in zone 9 or 10 that usually means late October into November — and then dig before the first frost, because a frosted root goes soft and will not store. Scrape the soil away from one crown first to judge size: a root three to four inches across is worth lifting, and a good one is a great deal bigger.

Cut the vines away, loosen a wide circle with a fork, and lift. Most plants make one dominant round root, though you will sometimes find a small cluster. Brush the soil off rather than washing it, and handle them gently — the tan skin looks tough but the flesh bruises underneath, and a bruised root does not keep.

Deal with the tops carefully. The vines, leaves and any pods are the poisonous part of the plant, so pull them well out of reach rather than leaving them in a heap where children, pets, or livestock could get at them, and never feed them to animals. Compost them if you compost, but pick the pods out first rather than turning them into a pile by hand.

Storage

One of the best-keeping roots there is - two to four months at cool room temperature, dry and unwashed. Never refrigerate a whole root.

Jicama repays its long season by storing beautifully. Keep whole, unwashed, undamaged roots somewhere cool, dark, dry, and airy — 55 to 65°F is ideal — and they hold for two to four months without shriveling or sprouting. A pantry, a cool spare room, or an unheated closet is exactly right, and unlike most roots they need no sand, damp, or crating.

The one rule is to keep a whole root out of the refrigerator. Jicama is a tropical crop and takes chilling injury below about 50°F, going soft, dull, and off-flavored. Once you have cut into one, though, the fridge is the right place: wrap the cut face or drop the pieces into a container of water and they stay crisp for a week or more, and the white flesh will not brown.

Freezing does not suit it — the crispness that is the entire point of jicama collapses on thawing. If you want to preserve a glut, quick-pickle it in lime juice and vinegar, or dehydrate thin slices into crisp chips instead.

In the kitchen

Peel it thickly, then eat it raw: batons with lime and chili, in slaws and fruit salads, or stir-fried, where it stays crunchy like a water chestnut.

Start by peeling. The brown skin is fibrous and inedible and there is a tough layer just beneath it, so take it off generously with a knife rather than a peeler until you reach clean white flesh. From there jicama is at its best raw and barely dressed: the Mexican street version is batons or wedges piled with lime juice, salt, and chili powder, and it is hard to improve on.

Raw, it goes into slaws with cabbage and carrot, into fruit salads with mango, orange, and cucumber, onto a platter as the sturdiest dipper there is, and into fresh spring rolls. Cooked, its trick is that it stays crunchy: it stands in for water chestnut in stir-fries, holds its texture in soups and curries, and can be cut into fries or roasted, where it softens a little and turns faintly sweet. Grated, it makes a crisp fritter.

Two practical notes. The flesh does not oxidize, so a jicama platter still looks fresh an hour later, which is genuinely useful for a party. And it really is only the root: the vines, leaves, flowers, pods, and seeds are not food at any stage of preparation, and no amount of cooking makes them safe.

Propagation & seed saving

Save seed from one or two plants you deliberately let flower - and label the packet clearly, because jicama seed is poisonous.

Jicama is grown from seed, and saving your own is simple in a long season. Let one or two plants flower and pod instead of pinching them, leave the pods on the vine until they are brown, dry, and brittle, then shell out the flat brown or reddish seeds and store them cool, dry, and dark, where they stay viable several years. Those plants will make poor roots — that is the trade — so choose your sacrifices at the end of the row.

In zone 8 and colder the pods usually never ripen before frost, so northern growers buy fresh seed each year. Seed is carried by most warm-climate and Latin American seed houses. A grocery-store jicama will occasionally sprout, but a sprouted root is a poor mother plant and rarely makes a good crop.

Then label it, plainly and permanently. Jicama seed is poisonous — it is the most rotenone-rich part of the plant, and powdered yam-bean seed has been used for centuries as a fish poison and insecticide. Store it away from the kitchen and out of children's reach, never in an unmarked jar, and never beside edible bean seed that it could be confused with.

Troubleshooting

A big vine and a small root nearly always means the flowers were left on, or the season ran short - between them those account for most disappointing digs.

Huge vine, tiny root: the commonest jicama failure, and almost always because the flowers were left to bloom and pod — pinch them off all season. Too much nitrogen and too much shade push the same way. Root never sized up at all: the season ran out. Jicama needs five to nine warm months and bulks its root only as days shorten, so a July sowing or a zone 7 summer cannot get there. Seed never came up: sown into soil below 70°F, or sown too deep — wait for real warmth and soak the seed overnight. Forked or stunted root: compacted ground, stones, or a hardpan the taproot could not push through — grow it in loose, deep soil or a raised bed. Root soft and off-tasting out of storage: it was either frosted in the ground or refrigerated whole — keep whole roots at 55-65°F. Vines yellowing in midsummer rather than autumn: usually drought stress or waterlogging rather than maturity — check the soil before you dig. Growing across climates

A long-season tropical crop: zones 9 and warmer grow it properly, zone 8 gets a small root, and colder gardens are growing a novelty in a pot.

Zones 3-7: not a realistic crop in the ground — there is not enough warm season, and the root bulks late. Started indoors and grown in a large container in the hottest, sunniest spot you have, a plant may hand you a small root by the first frost; treat that as an experiment rather than a harvest. Zone 8: marginal. Start seed indoors, plant out into warm soil, pinch every flower, and expect a one- or two-pound root instead of a five-pound one. Zones 9-10: the sweet spot in the United States — sow in March or April, dig in November, and the shortening autumn days do exactly what the crop needs. Zones 11-13: easy, and where it is grown commercially; but in constant heat and steadier daylength the vine flowers relentlessly, so the flower-pinching discipline matters more here rather than less.

Wherever it grows, the two limits are the same: frost, which ruins the root, and season length, because the plant spends months building a vine before it builds anything you can eat.

Nutrition

Very low in calories, unusually high in prebiotic inulin fiber - a crisp watery root that feeds gut bacteria and barely moves blood sugar.

Jicama is mostly water and fiber. A cup of raw sticks is around 45 calories with roughly 6 grams of fiber, a useful dose of vitamin C, and modest potassium, folate, and magnesium — a genuinely low-calorie, low-glycemic vegetable that still eats like something substantial, which is a rare combination.

What sets it apart is inulin, a soluble prebiotic fiber that human digestion cannot break down but that gut bacteria ferment. That makes jicama one of the better prebiotic foods you can grow, supporting the gut microbiome and slowing sugar absorption. The same property gives it its one drawback: people not used to inulin, or anyone who eats a large plate of raw jicama in a sitting, can get gas and bloating. Start with a modest portion and work up.

All of this applies to the peeled root and nothing else. No nutritional claim here extends to any other part of the plant, which is not food in any quantity.

History

A Mexican domesticate carried across the Pacific on the Manila galleons, which is why it turns up in Filipino, Chinese, and Southeast Asian cooking as readily as Mexican.

Jicama was domesticated in Mexico and Central America, where it has been grown for thousands of years and remains a fixture of street food and the celebration table — it is traditionally eaten on the Day of the Dead and at Christmas. The Spanish carried it across the Pacific on the Manila galleons in the sixteenth and seventeenth centuries, and it took root in the cuisines at the far end of that trade route so thoroughly that many people first meet it as an Asian ingredient rather than an American one.

In the Philippines it is singkamas; in Indonesia and Malaysia, bengkuang or sengkuang; in China it is the sha ge that often stands in for water chestnut. Its close relative Pachyrhizus tuberosus, the Amazonian yam bean, was domesticated separately in South America and carries the same warning about its seeds and pods.

The rotenone in the seed is part of the story too. Long before it was an agricultural insecticide, powdered yam-bean seed was used across the Americas as a fish poison and as a treatment for crop pests and livestock parasites — a reminder that the plant's chemistry was well understood by the people who first grew it, and that only the root was ever eaten.
