Hops
Hops are TOXIC TO DOGS - eaten cones, including spent brewing hops from the compost, can trigger a dangerous and sometimes fatal spike in body temperature (malignant hyperthermia). Keep cones and brewing waste well away from dogs. For people hops are safe and mildly sedative, and the young spring shoots are a traditional edible vegetable.
Overview
The homebrewer's perennial bine: a cold-hardy crown that throws 15-25 foot bines every summer and hands you papery, lupulin-rich cones to bitter and flavor your own beer.
Hops are the perennial backbone of homebrewing - and one of the most spectacular plants a garden can grow. From a hardy underground crown, the plant sends up bines (not vines: a bine climbs by wrapping its whole stem around a support, no tendrils or suckers) that rocket 15 to 25 feet in a single summer, sometimes a foot in a day. In late summer they hang with papery green cones full of golden lupulin, the sticky resin that gives beer its bitterness and aroma. Plant a crown once and it comes back for twenty years or more.
It's a plant with two clocks. Year to year it's a reliable perennial: shoots in spring, a green wall by midsummer, cones in late summer, dieback in fall. But within a season it's astonishingly fast, so the whole craft is giving it a tall, strong support and training the bines up it. Choose your varieties by what you brew - aroma hops (Cascade, Fuggle) for late-boil and dry-hop character, or bittering / dual-purpose hops (Nugget, Chinook, Magnum) for clean early-boil bitterness - and one hill can supply a homebrewer for years.

Spider Mites High
Spider mites are not insects but tiny sap-feeding arachnids, smaller than a grain of salt, and you almost always notice the damage before you notice them. They live on the undersides of leaves and drain the cells one at a time, which is why the leaf goes finely stippled with pale dots before it bronzes and dries. They breed explosively in hot, dry, dusty, still air - a generation can pass in a week at high temperature - so a barely visible population becomes a webbed, bronzed plant within a fortnight. Drought-stressed plants and plants wintered indoors in dry heated air are the classic hosts. Broad-spectrum insecticides make matters worse rather than better, because they kill the predatory mites and lady beetles that normally hold mites in check.
Watch for: Fine pale stippling or speckling across the upper leaf surface, as though the color had been sandblasted out of it, and later a dull bronze or rusty cast over the whole leaf. Delicate webbing across leaf joints, shoot tips, and undersides - that comes with a heavy infestation and means you caught it late. Leaves that dry, curl, and drop early while the plant looks thirsty no matter how much you water it. Hold a leaf over a sheet of white paper and tap it: the specks that fall and then start walking are mites. With a hand lens, look on the undersides for the mites themselves, pale or reddish, and their round translucent eggs. Damage that shows up first on the hottest, dustiest, most sheltered side of a plant, or on a pot sitting near a radiator indoors.
Prevent: Do not let plants get drought-stressed - that is the single strongest trigger, and a plant watered steadily through heat is far less likely to have a mite problem at all. Hose the foliage down, undersides included, during hot dry spells: it knocks mites off, washes away the dust they thrive in, and raises the humidity around the plant for a while. Indoors and under cover, keep the air from going hot, dry, and stagnant, wipe or rinse the leaves occasionally, and keep pots away from radiators and heating vents. Inspect any plant carefully before you bring it indoors for winter or set it among others, since mites almost always arrive on something else. Avoid broad-spectrum insecticides: they wipe out the predatory mites, lacewings, and lady beetles that do most of this work for you, and reliably leave you with a worse outbreak than you started with.
Treat: Start with water. A strong jet aimed at the leaf undersides, repeated every few days for a couple of weeks, knocks populations down and breaks the cycle - on many plants that alone ends it. On anything that regrows quickly, shearing back badly infested growth resets the plant to clean foliage. If it keeps building, spray insecticidal soap or horticultural oil directly onto the undersides where the mites actually live, and repeat every five to seven days for three rounds: contact sprays do not kill the eggs, so a single application always fails. Anything you spray must be labeled for the plant you are treating - follow the label and observe its pre-harvest interval on anything you eat. Predatory mites are an effective release in a greenhouse or on an indoor plant. Above all, correct the heat, dust, and drought stress that caused it, or the mites simply come back.
The two-spotted spider mite is one of the worst hop pests: hot, dry, dusty midsummer is peak, and once mites move up into the cones they ruin them. Knock them down early while they are still on the leaves.
Hop Downy Mildew High
A systemic water mold (Pseudoperonospora humuli) specific to hops that overwinters in the crown and roots. In spring it produces stunted, brittle, pale-green 'spikes' - infected shoots with shortened internodes - and later angular lesions on the leaves with dark purple-to-black spore growth underneath. It can move into the cones, and because it lives in the crown it weakens the plant year after year.
Watch for: Stunted, spindly, pale-green spring shoots ('spikes') that look nothing like healthy bines, leaves with brittle, downward-cupped tips, angular yellow lesions bounded by the veins, and a dark gray-purple felt on the leaf undersides in humid mornings; brown streaks in a cut crown.
Prevent: Plant resistant varieties (Cascade, Nugget, and many modern hops carry resistance) and clean, certified rhizomes; strip the lower leaves and train bines up off the ground for airflow; avoid overhead watering; and remove infected spikes the instant they appear each spring.
Treat: Cut out and destroy spikes and infected shoots as they emerge - this early crown sanitation is the single most important control. Protectant copper or labeled fungicides help in wet springs, but the pathogen persists in the crown, so resistant varieties plus relentless spring spike-removal are the durable answer.
The signature serious hop disease and a NEW host-specific threat record. Because it lives in the crown, a badly infected plant is a chronic problem - start with resistant, certified-clean stock, and some heirloom/susceptible varieties simply fail in wet climates where resistant ones thrive.
Aphids Medium
Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.
Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.
Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.
Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.
The hop aphid (Phorodon humuli) is the specific pest here - it builds up fast on leaf undersides in early summer and, left alone, contaminates the cones with honeydew and sooty mold, so control it well before cones form.
Japanese Beetles Medium
Japanese beetles are metallic green-and-copper beetles about half an inch long that emerge in early summer and feed for six to eight weeks. They feed in aggregating masses - one beetle's feeding releases a scent that draws in more - so a plant goes from untouched to covered in a couple of days. They chew the soft tissue between the leaf veins and leave the veins standing, so the leaf ends up as a brown lace skeleton, and they shred open flowers and sometimes ripening fruit as well. They work the sunniest upper parts of a plant on warm afternoons. The white C-shaped grubs spend the rest of the year in turf and pasture soil eating grass roots, and the adults then fly in from wherever they hatched, which can be some distance away.
Watch for: Clusters of shiny metallic beetles massed together on the upper, sunniest foliage and down inside open blooms, heaviest on warm sunny afternoons from around late June. Leaves reduced to lace, with the veins left intact and the tissue between them gone - unmistakable, and quite different from the ragged chewing of a caterpillar. Ragged, chewed petals and blooms that never open properly. Beetles that let go and drop straight to the ground when you disturb the plant. Feeding damage on ripening fruit, on the plants they also take fruit from. Whole branches going brown and lacy at the top of a plant while the shaded lower growth stays untouched.
Prevent: Hand-picking is genuinely the main defense in a home garden. Go out in the cool of the morning while the beetles are sluggish, hold a tub of soapy water underneath, and knock them in - they drop when disturbed, so most fall straight into it. Do it daily through the flight: because the beetles call each other in, taking them off early stops a plant becoming a beacon. Do not put pheromone or lure traps anywhere near the garden - they demonstrably pull in far more beetles than they catch. And do not count on lawn grub control: milky spore has performed poorly and inconsistently in field trials across most of the US, and treating your own turf does not reduce the adults feeding on your plants, because they fly in from surrounding properties. Where it is practical, row cover or netting through the peak flight excludes them outright. Otherwise riding out the six-to-eight-week wave is a legitimate strategy, since most established plants absorb the damage.
Treat: Persistent morning hand-picking into soapy water is the most effective home control there is, and on a vigorous established plant the damage is usually cosmetic and needs nothing else. Neem deters feeding rather than killing, and has to be reapplied. For heavy pressure, spinosad or a targeted insecticide labeled for the plant will work - but time any spray away from bloom and apply it at dusk to protect bees, and observe the pre-harvest interval on anything you eat. On flowering plants, some gardeners simply shear the blooms off for a couple of weeks and let the plant rebloom once the wave has passed, which removes the lure as well as the damage. Young plants and young trees are the ones worth defending: a mature tree or an established vine tolerates several weeks of leaf loss without lasting harm.
Japanese beetles love hop foliage and swarm the upper, sunlit part of the bine - the hardest part to reach at 15 feet and up, which is one more reason to hand-pick early and keep the population down before it climbs.
Powdery Mildew Medium
Powdery mildew is a fungal disease that coats leaves - and often stems, buds, and fruit - in a white-to-gray powder that looks like spilled talcum. It is not one fungus but a large family of them, each fairly specialised to its own group of plants, which is why mildew on one crop rarely jumps to an unrelated one beside it. Unlike most leaf diseases it does not need wet leaves: it thrives on warm dry days followed by humid nights, and it takes hold fastest where plants stand crowded in still air or in shade. The coating blocks light, so heavily covered leaves yellow, brown, and drop early. On many plants that is mostly disfiguring and arrives late enough not to matter; where it strips away the leaves a crop still needed to finish, it costs you size, sweetness, and quality.
Watch for: Round white powdery spots on the upper leaf surfaces that spread and merge until whole leaves look dusted. It usually starts on the oldest, lowest, most shaded leaves and works upward, so check there first. Look at the undersides too, and at stems, buds, and flower stalks, which get coated as it advances. Leaves that yellow, brown, curl, or go crisp and drop early under the coating. New growth that opens small, crumpled, or twisted where the fungus has reached the shoot tips. On plants where it gets onto the fruit, a dull gray film, russeted or scarred skin, and cracking. Late in the season, tiny dark specks scattered through the white felt - that is the fungus setting up to overwinter on the debris.
Prevent: Give plants room. Crowding and still air are the biggest single driver, so space at the full recommended distance, thin seedlings properly, and divide or prune out congested growth until air moves through the plant. Full sun and an open position help; deep shade and a still corner against a wall are where it always starts. Water at the base rather than overhead, and water early in the day so nothing stays damp overnight. Keep plants evenly watered - drought stress at the roots leaves them far more susceptible, even though the fungus itself likes dry air. Go easy on nitrogen, since soft lush growth is the most vulnerable. Where resistant varieties exist for what you are growing, choosing one is the single most effective thing you can do on a plant that mildews every year. Clear infected leaves and stems away at the end of the season rather than composting them.
Treat: Start early: sprays protect healthy tissue, they do not clean up leaves that are already coated. Pick off and bin the worst leaves as soon as you see them, and open the plant up by thinning or pruning so air moves through. On anything that regrows quickly, shearing the whole plant back forces a clean flush and beats spraying. If it keeps spreading, potassium bicarbonate, horticultural oil, or neem applied weekly will hold it - cover both leaf surfaces. Sulfur also works, but it burns the foliage of some plants, should never go on in heat, and must not be mixed with or applied close behind an oil spray. Whatever you use must be labeled for the plant you are treating: follow that label and observe its pre-harvest interval on anything you eat. Do not compost badly infected material. Late-season mildew on a plant that is finishing anyway is usually cosmetic; on a crop still filling out it is worth acting on.
On hops the mildew also blemishes the cones themselves with red-brown spotting and downgrades them for brewing, so it costs you the crop and not just the leaves. Resistant varieties and the airflow you get from stripping the lower bine are the best defenses; anything you spray must be labeled for hops and observe its pre-harvest interval.

Grow
Full sun, well-drained soil, a 12-20 foot support, and dormant rhizomes planted in early spring; small gardens can grow a single string or teepee, or a dwarf variety.
Hops want full sun (a south or southwest wall is ideal), deep well-drained soil rich in organic matter, and above all vertical room. Plant dormant rhizomes or crowns in early spring, 1-2 inches deep with the buds up, spacing hills about 3 feet apart for one variety and 5 feet for different ones. Give each hill a tall support before the bines run: a stout pole, a wire run up to the eaves, or heavy coir twine anchored 12-20 feet up. Hops are heavy feeders and thirsty growers, so plan on rich feeding each spring and deep, steady water.
You do not need a farm. A small garden can run a single tall string up a house corner, a teepee of three or four poles, or a bine trained along a sunny fence and then up. For tight spaces or containers, look for a dwarf hop like 'Summer Shandy', which tops out around 5-10 feet instead of 25. The first season the plant builds roots and yields little; from the second or third year on, a single mature crown can hand a homebrewer a pound or two of dried cones every summer.
Care
The yearly rhythm is train the best bines, feed and water hard, strip the lower leaves for airflow, watch for mites and downy mildew, then cut down and mulch in fall.
Hop care follows the bine's fast season. Each spring, select the 2-4 strongest shoots per string, wind them clockwise up the support, and cut the rest (those thinnings are the edible 'hop shoots'). Feed hard as growth starts - hops are among the hungriest garden plants - and water deeply and consistently as the bines climb. A key, easy job is to strip the leaves off the bottom 2-3 feet of each bine: it opens the base to airflow, breaks the splash path for disease, and costs you no cones, which form up high.
Scout through summer for the hop's main troubles: spider mites in hot dry weather (stippled, bronzing leaves), hop aphids, Japanese beetles on the upper canopy, and above all downy mildew, whose stunted pale spring 'spikes' should be removed the instant you see them. After harvest and frost, cut the dead bines to the ground, mulch the crown for winter, and trim the wandering rhizomes (potting up the best pieces as free new plants). Do that each year and the crown thrives for decades.
Harvest
Pick in late summer when cones are papery and springy with golden, sticky lupulin; handpick the first year, cut whole bines later, and dry the same day.
Cones ripen in late summer - roughly mid-August to mid-September in most of the country, and not all at once. Test by feel and smell: a ripe cone is dry and papery, springs back when you squeeze it instead of staying crushed, feels light, and shows golden-yellow, sticky, aromatic lupulin at the base of the bracts, with the cone edges just beginning to brown. A squeezed ripe cone smells intensely of the variety. Green, dense cones that stay compressed are not ready; browning cones with dull orange, rancid-smelling lupulin are overripe.
The first year, handpick cones off the standing bine so you don't disturb the young roots. In later years the easy method is to cut the whole bine down and strip the cones sitting comfortably in a chair - far kinder on your neck than reaching 20 feet up. Either way, pick over a couple of weeks as cones ripen, and get them drying the same day: fresh hops are three-quarters water and will heat and mold within hours if left in a pile.
Storage
Dry cones to 8-10% moisture the day you pick, then vacuum-seal or press out the air and freeze - hops keep best cold, dark, and airtight.
Drying and cold are everything. Spread fresh cones in a thin layer on screens with a fan, or run a dehydrator on low (95-100°F - higher drives off the aroma oils), and dry down to about 8-10% moisture. They're ready when the central stem snaps instead of bending and the yellow lupulin dusts off freely. Over-drying past that shatters the cones and wastes lupulin, so check often.
Once dry, the enemies are air, heat, and light, which stale hops fast (that 'cheesy' old-hop smell is oxidation). Squeeze or vacuum the air out of freezer bags - or press cones into pellets if you have the gear - and freeze them. Frozen airtight, hops hold their brewing quality for a year or more; aroma hops fade fastest and are best used within a season, while high-alpha bittering hops keep their punch a bit longer. Label each bag with variety and year - by cone alone they all look alike.
Propagation & seed saving
Free plants forever: hops are grown from rhizomes and crown divisions, not seed - dig and cut runners in early spring and you never buy a hop again.
Hops are the easiest perennial to multiply, and you never need seed. The plant is dioecious (separate male and female plants), and brewers grow only females - unpollinated, so the cones stay seedless - which means propagation is all by division, keeping every daughter plant identical to the mother. That's exactly what you want: a named variety comes true only from a cutting, never from seed.
In early spring, before or just as the shoots emerge, dig around the hill and cut off sections of the spreading rhizome - each a few inches long with at least one or two visible buds. Replant them buds-up in a new spot or pot them to give away. A vigorous crown throws far more rhizome than it needs every year, so a single plant becomes a whole hop yard (and a steady supply of gifts for brewing friends) with no cost but a spade. Trimming those runners also keeps the parent from colonizing the whole bed.
Nutrition
Not a food crop in any real sense - the cones are for brewing and tea, not eating - but the young spring shoots are a genuine, if minor, seasonal vegetable.
Hops aren't grown to eat, and the cones aren't a food: they're used in tiny amounts to flavor beer or steep a mild tea, not consumed for nourishment. So there's no meaningful 'nutrition facts' story here the way there is for a vegetable - the plant earns its place in flavor and tradition, not calories.
The one honest edible is the young shoot. The tender spring bine tips (the ones you thin off anyway) have been eaten for centuries as a seasonal green - 'poor man's asparagus' - and like other spring vegetables they offer a little fiber, vitamin C, and minerals. It's a delicacy of timing and thrift, not a staple. Treat hops as what they are: a brewing and herbal plant with a small, pleasant edible side in early spring.

Brewing is the whole point: bittering hops early in the boil, aroma hops late or dry-hopped. Beyond beer, young shoots are a spring vegetable and cones make a calming tea.
Ninety-nine percent of a hop's culinary life is beer, and when you add it decides what it does. Thrown in at the start of the boil, a hop's alpha acids isomerize into clean bitterness that balances malt sweetness - the job of high-alpha bittering hops (Nugget, Magnum, Chinook). Added late in the boil, in the whirlpool, or dry-hopped into the fermenter, the same or an aromatic variety layers in citrus, pine, floral, and fruity aroma with little added bitterness - the job of aroma hops (Cascade, Fuggle, Centennial). Homegrown, dried, and frozen, your own cones brew every bit as well as store-bought.
Outside the kettle, hops still have a small kitchen life. The young shoots are blanched or sauteed like thin asparagus, dressed with butter, egg, or oil - a prized spring dish in parts of Europe. And the dried cones steep into a bitter, calming herbal tea, often blended with chamomile or mint to soften the bitterness. A few brave cooks even use a whisper of hops to bitter breads and sauces - a little goes a very long way.

Hops have one of the more credible herbal traditions in the garden. They are a long-standing mild sedative and sleep aid: the dried cones have been used for centuries to ease restlessness and promote sleep, most famously in the hop pillow (a small sachet of dried cones by the head) and in bedtime teas and tinctures. The tradition is old enough that field workers were said to tire quickly from the sedative dust, and it's often combined with valerian, a pairing that has modest clinical evidence for improving sleep.
Modern interest also looks at hop compounds (like xanthohumol and 8-prenylnaringenin, a notably potent phytoestrogen) for other effects, but these are research directions, not established treatments. That estrogenic activity is the reason for the first of two specific cautions: avoid medicinal hop preparations if you are pregnant or breastfeeding, or if you have a hormone-sensitive condition such as breast, uterine, or ovarian cancer, endometriosis, or uterine fibroids. History
Hops turned beer into what we know: adopted for brewing in early-medieval Europe, they preserved and bittered ale, drove the Reinheitsgebot, and built whole regional economies.
Beer is far older than hops in it. For most of history ale was bittered and preserved with gruit - a mix of herbs like bog myrtle and yarrow. Hops were cultivated for brewing in central Europe by around the 8th-9th century (the Hallertau region of Bavaria is documented from 736 AD), and over the next several hundred years they swept across the continent because they did two things better than any herb: they bittered the beer to balance malt, and their resins preserved it, letting beer keep and travel. Bavaria's 1516 Reinheitsgebot (purity law) enshrined hops as one of only a few permitted ingredients.
From there hops built economies - the hop gardens of Kent, Bavaria, Bohemia (Saaz), and later the American Pacific Northwest, which now grows much of the world's supply. Wild American hops grew here all along and were used by Indigenous peoples and colonists alike, and the late-20th-century craft-beer boom - built on aromatic American varieties like Cascade - turned the hop from a commodity bittering agent into the celebrated flavor star it is today. Growing a few bines puts a very long brewing story right in the backyard.
Troubleshooting
A light first year is normal; stunted pale spring shoots are downy mildew; bronzed leaves are spider mites; poor cones trace to youth, drought, or a too-short/too-warm site.
Little growth or crop the first year: normal - the plant is building roots, and full crops come in year two or three. Stunted, pale, brittle spring shoots ('spikes'): downy mildew emerging from the crown - cut and destroy them immediately and every time they appear. Leaves stippled, dusty, and bronzing in hot weather: spider mites - hose the undersides and treat before they reach the cones. Sticky leaves with tiny clustered insects: hop aphids - blast off or treat, especially before cones form. Bines grow huge but set few cones: a young plant, too much shade, drought at cone-set, or a site too far south (short summer days). Cones brown with dull, rancid-smelling lupulin: overripe - pick a touch earlier next time. Hops smell cheesy in storage: oxidation from air and warmth - dry properly and freeze airtight. Growing across climates
Hops thrive in zones 4-8 with long summer days; they struggle from zone 9 south, where short days and heat cause premature, poor flowering - grow the daylength-honest range.
Hops are a plant of the temperate north, and they run on day length. They flower and cone best where midsummer days are long - roughly between 35 and 55 degrees latitude - which is why the great hop regions sit in the northern US and Europe. Zones 4-6: excellent hop country; the cold-hardy crown shrugs off deep winters (mulch it), and the long northern summer days build heavy cones. Zones 7-8: still very good, with an earlier, faster season; give afternoon relief and steady water in the hottest spells and watch mites.
Zone 9 and south: here honesty matters - hops struggle. The shorter summer days of low latitudes trigger premature, sparse flowering, summer heat stresses the plant, and yields are disappointing; some gardeners grow a bine for greenery and novelty, but a real cone crop is a fight and often a failure. Rather than a dishonest 'warm-zone window', the right advice below zone 9 is to temper expectations or skip it. Everywhere, small gardens can grow the crop up a single tall string or a teepee, and dwarf varieties like 'Summer Shandy' (5-10 feet) fit tight spots and containers.
