The kernel is the food and is a common tree-nut allergen (hazelnut allergy can be serious). No toxic parts - hazelnuts are among the friendliest nut plants, and the bushes are also valued as wildlife hedgerow.

Overview

A tough, cold-hardy nut BUSH (not a big tree) that fits real gardens - but it blooms in midwinter and is self-incompatible, so you must plant two varieties, and in eastern North America the whole game is choosing blight-resistant types.

The hazelnut (or filbert) is the most garden-friendly nut plant there is: instead of a 60-foot tree, it grows as a multi-stemmed shrub or small tree just 8-15 feet tall, cold-hardy well into the North, quick to bear (often 3-5 years), and doubling as a handsome hedgerow and wildlife plant. It's the nut you can actually fit in a backyard.

Two facts shape every hazelnut planting. First, pollination: hazelnuts are wind-pollinated and self-incompatible, and - unusually - they bloom in the dead of winter, with dangling male catkins shedding pollen onto tiny red female flowers. You must plant at least two compatible varieties whose winter bloom overlaps, or you'll get plenty of catkins and no nuts. Second, and decisive in eastern North America, is eastern filbert blight - a fungal disease that kills the classic European varieties (like Barcelona) but which modern breeding has pushed back with resistant selections (Yamhill, Jefferson, Theta) and with the native American hazelnut and hybrids. One caveat matters east of the Rockies: those three OSU selections all carry the same single 'Gasaway' resistance gene, and eastern strains of the blight have been shown to overcome it, so eastern growers should lean on multi-gene Rutgers releases, hybrids, or the native species. (That native, the American hazelnut, Corylus americana, is a different and hardier species with its own entry in this catalog.) Choose blight-resistant varieties for your region, plant two of them, and the hazelnut is one of the easiest, most rewarding nuts to grow.

Squirrels, chipmunks, voles and mice are the wildlife that competes with you most directly for a crop. They take ripening nuts, seed and fruit off the plant, usually before you judge it ready, and cache what they do not eat. They also dig up freshly planted bulbs and sown seed, and voles tunnel in to gnaw bulbs and roots underground through winter. They climb anything, they know exactly when a crop is ripe, and a determined pair can clear a small tree or a new planting in a few days.

Watch for: Chewed husks, shells or hulls scattered under the plant, fruit and nuts vanishing as they ripen, and gnawed or half-eaten windfalls. On new plantings: freshly dug holes and scattered soil, bulbs missing or gnawed, dug-up seed rows, vole runways under the mulch, and gaps in spring where you know you planted.

Prevent: For a crop on the plant, timely and frequent harvest is the real defense - gather daily through the ripening window rather than leaving anything to hang, and pick slightly early to finish indoors where the crop allows it. Net or bag what you can reach. For bulbs and sown seed, lay wire mesh or hardware cloth over the planting, plant deeper, use buried wire baskets, and clear away the papery tunics and debris that advertise a fresh planting. Trunk baffles slow climbers on isolated trees, clearing jumping routes from nearby trees and roofs helps, and removing brush cover reduces the rodents sheltering nearby.

Treat: There is no rescue for what has already been eaten, so this is a prevention problem. Re-cover disturbed plantings with mesh promptly, replant losses inside cages, and trap or exclude persistent diggers where that is legal locally. On a large tree, accept that you will share the crop and concentrate on gathering promptly.

Because hazelnut bushes are low and accessible, squirrels reach the whole crop easily and can strip a bush bare in days. Gathering daily as nuts ripen and drop, or picking nearly-ripe husks by hand to finish indoors, is the only real defense. Chipmunks and jays take their share too.

Eastern Filbert Blight High DiseaseMar, Apr, May, Jun, Jul

The defining hazelnut disease of North America: a native fungus (Anisogramma anomala) harmless to wild American hazelnuts but lethal to susceptible European varieties, forming distinctive rows of raised black, football-shaped bumps (stromata) along the stems, girdling and killing branches over a few years until the whole plant dies.

Watch for: Rows of raised, black, football-shaped bumps running along the branches (often on last year's wood), dieback of the stems above them, and gradual decline of susceptible varieties.

Prevent: The overwhelming best defense is planting RESISTANT varieties (OSU releases Yamhill, Jefferson, Theta; native American and hybrid hazelnuts). In the eastern US, note that those three OSU releases all carry the same single Gasaway resistance gene and that eastern isolates have been shown to overcome it, so prefer multi-gene-resistant Rutgers releases or American/hybrid stock there. Prune out cankers well below the visible bumps and destroy the wood; improve airflow.

Treat: On susceptible plants, cut out infected wood a foot or more below each canker and destroy it; fungicide programs slow it in orchards but home control relies on resistance and sanitation. Badly infected susceptible plants are best replaced with resistant ones.

This disease shapes ALL hazelnut variety choice in North America - it's why Barcelona is being abandoned and why resistant breeding matters so much. Native American hazelnut is naturally resistant. Single-gene (Gasaway) resistance is not permanent: eastern isolates have overcome it, so 'resistant' means something different in Oregon than in New Jersey.

Filbertworm Medium PestJul, Aug, Sep

The filbertworm (Cydia latiferreana, a close relative of the codling moth) is the main insect pest of hazelnuts: the moth lays eggs and its larvae bore into developing nuts, feeding on the kernel and leaving frass, ruining infested nuts.

Watch for: Small entry holes and frass on the husk or shell, wormy kernels when you crack damaged nuts, and early drop of infested nuts.

Prevent: Harvest promptly and clean up all dropped nuts (infested and sound) to break the life cycle, since larvae overwinter in ground litter; pheromone traps help monitor moth flights.

Treat: Sanitation is the main home control; well-timed sprays (spinosad) target egg hatch in high-pressure orchards. On a home bush, prompt harvest and cleanup usually suffice.

Aphids are small soft-bodied sap-suckers - green, black, gray, pink, or waxy white, and mostly wingless - that gather in dense colonies on the tenderest new growth: shoot tips, buds, and the undersides of young leaves. They breed extremely fast in mild weather, so a few can become hundreds inside a week. Their feeding curls and distorts soft growth, and the sticky honeydew they excrete coats everything below and turns black with sooty mold. Ants often farm and defend the colonies for that honeydew. A few aphids are normal on almost any plant and a healthy plant shrugs them off; only dense, persistent colonies do real damage, and some aphids also spread plant viruses as they feed.

Watch for: Dense clusters of tiny insects packed onto shoot tips, flower buds, and the undersides of young leaves. Curled, cupped, or distorted new growth that never opens properly. A sticky shine on the leaves - and on whatever sits under the plant - that later goes black with sooty mold. Tiny white cast skins left behind where a colony has been feeding. Ants running steadily up and down the stems, which is often the first thing you notice. Mottled, streaked, or misshapen leaves that do not grow out can mean a virus the aphids brought with them rather than the feeding itself.

Prevent: Go easy on nitrogen: the soft, lush growth that heavy feeding produces is exactly what aphids breed on. Check new growth once a week through spring and early summer so you catch colonies while they are still small, and rub the first few out with your fingers. Leave flowering plants nearby and skip broad-spectrum sprays - ladybugs, lacewings, hoverflies, and parasitic wasps do most of this work for free, and they only stay if there is something for them to eat. Keep ants off the plant where you can, since they protect aphids from those predators. Water steadily so plants are not stressed, and check any new plant over before you bring it home or move it indoors, since aphids usually arrive on something else.

Treat: Knock the colonies off with a hard jet of water and repeat every few days - on most plants that alone ends it. Pinch out or prune off the worst-infested tips rather than treating the whole plant. If colonies keep rebuilding, spray insecticidal soap or horticultural oil directly onto the insects, covering leaf undersides, and repeat weekly until they are gone; treat early or late in the day, and never spray a wilted or heat-stressed plant. Avoid broad-spectrum insecticides - they kill the ladybugs, lacewings, and parasitic wasps that were about to solve the problem for you, and aphid numbers usually come back worse afterward. Anything you spray must be labeled for the plant you are treating; follow that label and observe its pre-harvest interval. On anything you eat, wash leaves, heads, and buds well before use, since aphids hide down in crowns, folds, and tight growth.

The filbert aphid is the species here, clustering pale on new shoots; heavy infestations can dull vigor and nut fill. Usually a minor spring issue that beneficial insects handle on an established hazelnut.

Grow

Plant at least two compatible, blight-resistant varieties in full sun and well-drained soil. Decide bush or single-trunk form, and match your variety choice to your region's blight pressure.

The first rule is plant two (or more) compatible varieties - a single hazelnut, however healthy, sets no nuts because it can't pollinate itself, and the two must have overlapping winter bloom for the catkins of one to pollinate the female flowers of the other. Nurseries list compatible pairings (for example, Jefferson with Theta; Yamhill with a suitable partner), so buy a matched set. The second rule is match variety to region, and this is where the advice genuinely splits. In the Pacific Northwest, the OSU European selections (Yamhill, Jefferson, Theta) are dependable and are what the industry has moved to. In eastern North America, be more careful: the classic Barcelona is a poor bet, but so is leaning on those OSU selections alone, because all three carry the same single Gasaway resistance gene and eastern isolates of the blight have been shown to overcome it — Rutgers has documented Jefferson becoming infected in New Jersey plantings. Eastern growers should prefer multi-gene-resistant Rutgers releases, or the native American hazelnut (Corylus americana, its own catalog entry) and American-European hybrids.

Site is easy: full sun (part sun is tolerated) and well-drained soil. Hazelnuts have a shallow, fibrous root system and no taproot, so they transplant readily and establish faster than most nut trees. Decide early whether you want the natural multi-stem bush (easiest, most productive, and the way hazelnuts want to grow) or a single-trunk tree form (tidier, but you'll fight the suckers forever). Space bushes 15 feet or so apart, closer for a hedgerow. Then be patient for just a few years - hazelnuts bear young by nut-tree standards.

Care

Manage the suckers, prune for an open bush, water through nut fill, and - critically in the East - watch for and cut out eastern filbert blight. Otherwise a low-maintenance plant.

Hazelnut care centers on two things: form and blight. For form, manage the suckers - each spring remove excess suckers and thin crowded stems to keep a few strong ones and an open center, which improves light, nut fill, and airflow (airflow matters for disease). If you're growing a single-trunk tree, remove every sucker; for a bush, keep the best. Renew old stems occasionally. Water through summer nut fill in dry spells, and feed only lightly - hazelnuts are not heavy feeders.

In eastern North America, the defining care task is eastern filbert blight. Inspect stems in winter for the disease's signature rows of black, football-shaped bumps, and prune out infected wood well below (a foot or more below) the canker, destroying the prunings - and, above all, plant resistant varieties in the first place, which is far easier than fighting the disease — but resistance that actually holds where you live, since in the East the single-Gasaway-gene OSU cultivars are no longer a guarantee (see Grow). Other issues are minor: filbertworm (larvae in the nuts, controlled by prompt harvest and sanitation), big bud mite (swollen buds), and the ever-present squirrels. In the disease-free Pacific Northwest, even blight is a smaller worry - hazelnuts there are famously easy.

Harvest

Gather nuts as they turn brown and fall from their husks in late summer - let them drop onto a tarp and collect promptly, because squirrels are quick. Then husk and dry to cure.

Hazelnuts ripen in late summer to early fall, turning from green to brown and falling from their leafy husks (or the whole husk drops with the nut inside). The easiest home method is to let them fall naturally onto a clean tarp or freshly mown ground and gather every day or two - promptness matters enormously, because squirrels will strip a bush with astonishing speed the moment the nuts are ready. Some growers pick nearly ripe husks by hand to beat the wildlife, then finish them indoors.

After gathering, remove any remaining husks and dry (cure) the in-shell nuts a couple of weeks in a single layer in a dry, airy spot until the kernels are crisp and rattle slightly - this both firms the kernel and develops the sweet, rich hazelnut flavor. A test nut should have a plump, tan, filled kernel; light, blank shells mean poor pollination (only one variety, or bloom didn't overlap) or drought during fill. A mature bush yields a few pounds of nuts, and a small hedgerow of several bushes gives a genuine harvest - modest per plant, but reliable and easy to store.

Storage

Well-dried in-shell hazelnuts keep for months cool and dry; shelled kernels keep months refrigerated and far longer frozen. Roasting develops the flavor and helps remove the papery skins.

Properly cured hazelnuts store well. In-shell and dried, they keep for many months in a cool, dry, ventilated spot, protected by the shell. Shelled kernels keep for a few months at cool room temperature and much longer - close to a year - in the refrigerator or freezer in sealed containers; freezing is the reliable way to bank a harvest and keep the kernels fresh. Store only thoroughly dried, sound nuts, and cull any moldy, shriveled, or worm-damaged ones.

A useful trick with hazelnuts is roasting: a short roast in a moderate oven deepens the flavor and loosens the bitter papery skins, which you can then rub off in a towel - toasted, skinned hazelnuts are the basis of the best hazelnut baking and confections. Beyond storing them whole, a harvest becomes roasted snacking nuts, ground hazelnut flour or meal for baking, and homemade hazelnut butter or chocolate-hazelnut spread (the famous gianduja pairing). Because dried hazelnuts keep so long, you can process a fall harvest at your leisure through the winter months.

Growing across climates

Cold-hardy and adaptable, but region decides variety. Pacific Northwest: easy European hazelnuts. Eastern/cold North America: blight-resistant American and hybrid types. Deep South: too warm - chill and heat both limit it.

The Pacific Northwest (mild zones 7-8): the classic hazelnut climate - Oregon grows nearly all the US crop, and the cool, moist, disease-managed conditions suit European hazelnuts beautifully; here even the blight can be handled, the Gasaway-gene OSU selections (Yamhill, Jefferson, Theta) hold up, and yields are high. Cold and eastern North America (zones 5-6): the European hazelnut is hardy to about -20°F, which is the zone 5a floor — zone 4 belongs to the far hardier American hazelnut (Corylus americana, a separate species with its own catalog entry) and to American-European hybrids. Here eastern filbert blight is the deciding factor: never the susceptible Barcelona, and don't rely on the OSU selections alone either, since Yamhill, Jefferson, and Theta share one resistance gene that eastern isolates have overcome (Rutgers has documented infected Jefferson in New Jersey). Prefer multi-gene-resistant Rutgers releases, the American hazelnut, or hybrids. The American hazelnut, though smaller-nutted, thrives across the cold and humid East and Midwest where European types would die of blight. Zone 7-8 humid East/Southeast: possible with resistant types, but blight pressure is high - resistance is essential, and the same single-gene caveat applies, so favor multi-gene or American/hybrid stock. Deep South and warm-winter zones (9+): generally too warm - hazelnuts need substantial winter chill (often 800-1,200 hours) that these zones don't provide, and summer heat stresses them, so they're a poor fit. Match the variety to your region's blight risk and chill, and the hazelnut adapts across a wide, cool-temperate range.

Troubleshooting

Catkins but no nuts means no compatible second variety or non-overlapping bloom. Dying stems with rows of black bumps are eastern filbert blight. Blank shells are poor pollination or drought. Swollen buds are big bud mite.

Lots of catkins (or a healthy bush) but no nuts: the classic hazelnut failure - you need at least two compatible varieties whose winter bloom overlaps, since a hazelnut can't pollinate itself; a lone bush, or two whose bloom times don't match, sets nothing. From there, hazelnuts shine in baking (cakes, cookies, tortes, biscotti), ground into hazelnut flour/meal for gluten-free and European-style baking, and - most famously - paired with chocolate: gianduja, praline, and chocolate-hazelnut spread are all built on the toasted hazelnut, as are countless coffee pairings.

Beyond sweets, hazelnuts are excellent in savory cooking too: chopped and toasted over roasted vegetables, salads, and green beans, in the Middle Eastern spice blend dukkah, ground into romesco-style sauces, and pressed into fragrant hazelnut oil for finishing dishes. The traditional method is layering: bend a low, flexible stem down, wound it, pin it to the soil, and it roots into a new plant identical to the parent, which you sever and transplant the next season (mound layering - piling soil over the base of a stooled bush - is the commercial version). You can also dig and transplant rooted suckers from the base of an established bush, or root hardwood cuttings. This means one great, blight-resistant bush can become a whole hedgerow - you never have to buy that variety again.

Growing hazelnuts from seed is possible - cold-stratify the nuts over winter and plant them - but seedlings are genetically variable, slower to bear, and (critically) unpredictable in blight resistance, so seed is best reserved for breeding or for raising rootstock/hedge stock where variety and disease resistance don't matter. For eating and for reliable resistance, propagate your chosen named variety vegetatively by layering or suckers, which keeps the exact traits - including that all-important blight resistance - intact. Remember you still need two compatible varieties for nuts, so propagate at least two.

One of the oldest human foods - hazelnuts were gathered in enormous quantities across Stone Age Europe. Long a staple hedgerow nut of Britain and Europe, its modern American story is a decades-long breeding war against eastern filbert blight.

The hazelnut is one of humanity's most ancient foods. Archaeologists have found vast pits of roasted hazelnut shells at Mesolithic (Stone Age) sites across Europe - evidence that people were gathering and processing hazelnuts in enormous quantities some 9,000 years ago, making it a genuine staple of pre-agricultural diets. Through European history the hazel remained a beloved hedgerow and coppice plant, its nuts (the 'cobnut' and 'filbert' of Britain) a traditional autumn food and its flexible stems used for everything from wattle fencing to walking sticks and dowsing rods.

The American chapter is a story of disease and breeding. European hazelnuts brought to eastern North America ran into eastern filbert blight, a native fungal disease harmless to the wild American hazelnut but lethal to the European kind, which is why commercial growing concentrated in the disease-free Pacific Northwest (Oregon still grows nearly all the US crop, historically on the susceptible Barcelona). Over recent decades, Oregon State University's breeding program has released a series of blight-resistant European varieties (Yamhill, Jefferson, Theta, and more), and growers have turned to hardy American and hybrid types - so that today, for the first time, resistant hazelnuts can be grown across much of the country. The story isn't finished, though: that first wave of OSU releases shares a single resistance gene, and eastern strains of the fungus have already begun to defeat it, which is why breeding has moved on to stacking several resistance genes. When you plant a resistant hazelnut, you're joining both a 9,000-year food tradition and a still-running experiment in plant breeding.
