Flax
The mature seed (flaxseed/linseed) is a wholesome, gluten-free food rich in omega-3s and fiber, best eaten ground, with plenty of water. Two honest cautions: flax contains small amounts of natural cyanogenic compounds, so eat it in moderation (normal amounts and cooking render it safe) and do NOT eat large quantities of raw immature (green) seed or unripe pods; and industrial linseed OIL for wood finishing is treated with toxic driers and is NOT food - only culinary flaxseed oil is edible.

One of humanity's oldest crops, grown for two things at once: flat brown seeds packed with omega-3s and fiber (flaxseed/linseed), and the long stem fibers spun into linen - a cool-season annual with delicate, fleeting sky-blue flowers.
Flax is a plant of remarkable double value and deep history — one of the very first crops humans ever domesticated, grown for over 30,000 years for its fiber and thousands for its seed. Botanically it's a slender, cool-season annual herb, unbranched or lightly branched, topped in early summer by delicate five-petaled sky-blue flowers (sometimes white) so ephemeral that each opens for only a morning and drops by afternoon — a fleeting daily show over a couple of weeks. It's a genuinely beautiful crop as well as a useful one.
What makes flax fascinating is that it yields two very different harvests, and how you grow and time it depends on which you want. Grown for seed (linseed/flaxseed), it gives flat, shiny brown or golden seeds that are among the best plant sources of omega-3 fats, fiber, and lignans — a modern health-food staple — and can be pressed for edible linseed oil. Re-sow that saved seed the next cool season exactly as you would purchased seed. Because there's no crossing to manage, a favorite variety — a golden culinary flax, a tall fiber flax, an ornamental blue flax — can be carried on indefinitely, and by always saving from the plants that grew tallest and straightest (for fiber) or set the most seed (for oilseed), you can gradually tune it to your purpose and conditions. Flax also self-sows modestly where happy, dropping seed from any bolls left to shatter, so you may find volunteers — a small bonus for such a useful, historic crop. Between easy self-pollinated seed and modest self-sowing, flax is a simple plant to perpetuate.
