Plant with care. Safe only after processing. Raw and undercooked cassava contains cyanogenic glycosides, and bitter varieties can be lethal. Grow it only if you will peel, core, soak or ferment, then thoroughly cook every root - and never let anyone taste it raw.

Cassava is NEVER safe raw. Every part carries cyanogenic glycosides that release hydrogen cyanide; the peel and the fibrous core hold the most. Always peel completely, cut out the core, slice or grate, soak or ferment, then boil until soft through and discard the water. Bitter varieties need the full grate-soak-ferment treatment and have killed people when skipped. Leaves must be boiled 15-20 minutes. If any piece tastes bitter or numbs your mouth, spit it out and discard the whole root.

Overview

The tropical staple root behind yuca fries and tapioca - grown from a stem cutting, tough as nails, and the one common food crop that is genuinely dangerous until it is processed correctly.

Cassava is a woody tropical shrub grown for the thick starchy storage roots that swell at its base — the yuca of Latin American kitchens, the manioc and gari of West Africa, and the source of tapioca. It feeds close to a billion people, thrives in poor soil and long droughts, and asks very little of the gardener: push a foot-long piece of last year's stem into warm ground and come back eight to twelve months later to dig.

It also carries a hazard no other common food plant in this catalog carries. Every part of a cassava plant contains cyanogenic glycosides — compounds that release hydrogen cyanide when the tissue is crushed or chewed. Traditional processing (peeling, coring, grating or slicing, soaking or fermenting, then thorough cooking) removes them, and billions of meals a year are made safely this way. Skipping it is not a matter of taste: undercooked bitter cassava has caused mass poisonings and a permanent paralysis called konzo. Grow cassava if you will respect the processing. It is not a crop to nibble in the garden.

In the United States it is a real crop only where frost does not reach — south Florida, the Gulf coast, south Texas, Hawaii, and warm coastal southern California — because the roots need most of a year to bulk.

Root rot is not one organism but a group of soil fungi and water molds - Pythium, Phytophthora, Fusarium, Rhizoctonia and others - that sit harmlessly in most soils and only turn destructive when the ground stays saturated. Waterlogged soil drives the air out, the roots suffocate, and the weakened tissue is invaded and goes soft, brown, and stringy. Because the damage is underground you usually see it first as something that looks like drought: wilting, yellowing, stunting, a plant that does not respond to being watered. Overwatering, heavy compacted ground, a low spot that collects runoff, a pot with no drainage or a saucer left standing full, and cold wet soil in winter are the usual causes. Once roots have actually rotted there is no cure - this is a problem you prevent rather than treat.

Watch for: Wilting in the middle of the day on a plant whose soil is damp - the classic tell, and the reason people water a rotting plant and finish it off. Leaves yellowing from the bottom up, dull off-color foliage, and growth that stalls for no visible reason. Whole shoots, or one side of the plant, collapsing while the rest still looks fine. Soft, dark, or mushy tissue at the base of the stem or at the crown, sometimes with a sour smell. Lift a failing plant and look at the roots: healthy ones are firm and pale, rotted ones are brown or black and slimy, and the outer layer slips off between your fingers leaving a thread of core behind. Seedlings that topple over at soil level are the same problem, called damping-off.

Prevent: Drainage is the whole defense. Match the plant to the site first - something that wants sharp drainage will not survive heavy clay or a low, water-collecting spot however well you tend it. Where the ground is heavy, plant on a raised bed, berm, or slope, or grow in a container. Set plants at the depth they were already growing, since burying the crown or the root flare is a common cause of rot, and keep mulch pulled back a few inches from the stem base instead of piled against it. Water the soil rather than the calendar: check that the top inch or two is dry before watering again, cut back hard in cool weather and winter dormancy, and never leave a pot standing in a full saucer. Do not plant or dig in soggy ground, and go easy on rich amendments for plants that want it lean. Rotate annual crops, and start with clean healthy plants and fresh mix.

Treat: There is no cure for tissue that has already rotted, so act on the conditions rather than looking for a spray. Stop watering at once and fix the drainage - open up compacted soil, or move the plant to a raised, sharply drained position or a container. Lift a badly affected plant, cut away every soft dark root and rotted section with a clean blade back to firm pale tissue, and replant only the healthy parts into fresh free-draining soil or mix. Often the better move is to give up on the plant and save its offspring instead: cuttings, offsets, or divisions taken from firm healthy growth root readily and give you a clean start. Bin the rotted material rather than composting it, and correct the drainage before you replant, because the rot comes straight back in the same wet spot.

The single most common way home growers lose a cassava crop. Grow on ridges or raised beds in loose, freely drained ground, and never plant into a low spot that holds water after rain - a season's growth can rot away underground in a fortnight of standing water.

Spider mites are not insects but tiny sap-feeding arachnids, smaller than a grain of salt, and you almost always notice the damage before you notice them. They live on the undersides of leaves and drain the cells one at a time, which is why the leaf goes finely stippled with pale dots before it bronzes and dries. They breed explosively in hot, dry, dusty, still air - a generation can pass in a week at high temperature - so a barely visible population becomes a webbed, bronzed plant within a fortnight. Drought-stressed plants and plants wintered indoors in dry heated air are the classic hosts. Broad-spectrum insecticides make matters worse rather than better, because they kill the predatory mites and lady beetles that normally hold mites in check.

Watch for: Fine pale stippling or speckling across the upper leaf surface, as though the color had been sandblasted out of it, and later a dull bronze or rusty cast over the whole leaf. Delicate webbing across leaf joints, shoot tips, and undersides - that comes with a heavy infestation and means you caught it late. Leaves that dry, curl, and drop early while the plant looks thirsty no matter how much you water it. Hold a leaf over a sheet of white paper and tap it: the specks that fall and then start walking are mites. With a hand lens, look on the undersides for the mites themselves, pale or reddish, and their round translucent eggs. Damage that shows up first on the hottest, dustiest, most sheltered side of a plant, or on a pot sitting near a radiator indoors.

Prevent: Do not let plants get drought-stressed - that is the single strongest trigger, and a plant watered steadily through heat is far less likely to have a mite problem at all. Hose the foliage down, undersides included, during hot dry spells: it knocks mites off, washes away the dust they thrive in, and raises the humidity around the plant for a while. Indoors and under cover, keep the air from going hot, dry, and stagnant, wipe or rinse the leaves occasionally, and keep pots away from radiators and heating vents. Inspect any plant carefully before you bring it indoors for winter or set it among others, since mites almost always arrive on something else. Avoid broad-spectrum insecticides: they wipe out the predatory mites, lacewings, and lady beetles that do most of this work for you, and reliably leave you with a worse outbreak than you started with.

Treat: Start with water. A strong jet aimed at the leaf undersides, repeated every few days for a couple of weeks, knocks populations down and breaks the cycle - on many plants that alone ends it. On anything that regrows quickly, shearing back badly infested growth resets the plant to clean foliage. If it keeps building, spray insecticidal soap or horticultural oil directly onto the undersides where the mites actually live, and repeat every five to seven days for three rounds: contact sprays do not kill the eggs, so a single application always fails. Anything you spray must be labeled for the plant you are treating - follow the label and observe its pre-harvest interval on anything you eat. Predatory mites are an effective release in a greenhouse or on an indoor plant. Above all, correct the heat, dust, and drought stress that caused it, or the mites simply come back.

Cassava green mite and red mite are among the most damaging cassava pests worldwide, and heavy mite defoliation in the bulking months translates directly into a smaller dig. Hose the undersides down through hot dry spells and keep the plants from going drought-stressed.

Cyanogenic Glycosides (Raw Cassava) High Disorder

Every part of a cassava plant contains cyanogenic glycosides - chiefly linamarin - which release hydrogen cyanide when the tissue is crushed, chewed, or damaged. This is not a contaminant or a disease but the plant's own chemical defense, present in every root of every variety. The level varies enormously: sweet varieties carry low amounts concentrated in the peel and core, while bitter varieties carry high amounts throughout the flesh. The peel, the woody central core, and the leaves are always the most concentrated parts, and drought-stressed plants raise their levels. Acute poisoning causes dizziness, headache, vomiting, rapid breathing, and in severe cases collapse; chronic exposure from poorly processed bitter cassava causes konzo, a sudden and permanent paralysis of the legs.

Watch for: A bitter or soapy taste in raw or cooked cassava, or a tingling or numbing sensation in the mouth - that is the warning, and it means stop and discard. Roots that were not peeled deeply enough, so the pinkish layer under the brown bark is still attached. Pieces still firm in the middle after boiling. Cassava leaves simmered a few minutes rather than boiled long and hard. Any cassava eaten raw, in any quantity, by anyone. Peelings, cores, or trimmings left where children, pets, or livestock can reach them.

Prevent: Grow sweet (low-cyanide) varieties for the table and treat bitter varieties as a specialist processing crop. Peel every root completely, taking off both the brown bark and the thick layer beneath it, and cut out the woody core. Cut the flesh small - chunks, slices, or gratings - so processing reaches the middle. Soak several hours in changed water, or ferment one to three days for bitter types. Then boil until soft all the way through and discard the cooking water before frying, roasting, or mashing. Boil leaves at least 15-20 minutes. Never taste raw cassava to judge it, and keep the raw crop, peelings, and cores away from children and animals.

Treat: There is no home remedy and no way to cook bitterness out - discard any cassava that tastes bitter or numbs the mouth, the whole root, not just the piece. If someone has eaten raw or undercooked cassava and has dizziness, headache, confusion, vomiting, rapid breathing, or weakness, call Poison Control (1-800-222-1222 in the United States) or emergency services immediately and say that cyanide exposure is possible; do not wait to see whether it passes. Do not feed raw peelings, cores, or leaves to livestock or poultry - they are poisoned the same way, and wilted cassava foliage is a known livestock killer.

This is the defining fact about growing cassava. The processing is not refinement, it is what turns the plant into food, and it has been part of every cassava-eating culture for thousands of years.

Tiny white sap-sucking insects that cluster on leaf undersides and lift off in a cloud when the foliage is brushed. They weaken growth, and the honeydew they excrete coats the leaves below in a sticky film that blackens with sooty mold. Some species also transmit plant viruses. They breed fast in warm, still, sheltered air, which is why they are far more trouble under cover and on plants overwintered indoors than on the same plant outside.

Watch for: Clouds of tiny white insects rising when you shake the plant, flat scale-like nymphs stuck to the leaf undersides, a sticky shine on the leaves below them, black sooty mold over that, and yellowing, weakened growth.

Prevent: Inspect the undersides of any new plant before it joins the others, and quarantine anything you are bringing under cover or indoors for winter. Avoid crowding and heavy nitrogen feeding, which produce the soft growth they prefer. Hang yellow sticky traps early to catch the build-up while it is still small, and encourage lacewings, ladybugs and parasitic wasps outdoors.

Treat: Hose off light infestations, then spray insecticidal soap or horticultural oil onto the leaf undersides where they actually sit. Sprays do not kill the eggs, so repeat every few days for two or three weeks or the population simply rebuilds. Yellow sticky traps knock back the adults, and outdoors natural enemies usually finish the job.

Whiteflies are the vector for the cassava mosaic and brown streak viruses that devastate African and Asian crops. Those viruses are not present in the United States, and keeping it that way is exactly why cassava planting material must not be carried across borders.

Cassava Hornworm Medium PestJun, Jul, Aug, Sep, Oct

The large caterpillar of a sphinx moth (Erinnyis ello) that feeds only on cassava and its relatives. Full-grown larvae reach four inches, come in green, grey, or almost black forms, and carry the characteristic hornworm spike at the tail. A population can strip a plant of leaves in a few days, and repeated defoliation during the bulking months cuts the root harvest sharply.

Watch for: Big pellets of dark frass on the leaves and soil under the plant - usually the first thing you notice. Upper leaves reduced to stubs and bare leaf stalks. Fat green or grey caterpillars with a tail horn, resting along the leaf stalks and stems where they are surprisingly hard to see. Sudden, rapid loss of canopy over a few days rather than gradual nibbling.

Prevent: Walk the patch weekly through the warm months and look for frass before you look for caterpillars. Leave the parasitic wasps and predatory bugs alone - they take a heavy toll on hornworm eggs and small larvae - and avoid broad-spectrum sprays that remove them. Clear the ground of pupation sites in a small patch by cultivating lightly between plants at the end of the season.

Treat: Hand-picking works and is the practical answer in a home planting - the caterpillars are large, easy to spot once you follow the frass, and there are rarely many. Bt (Bacillus thuringiensis var. kurstaki) is effective on small larvae and harmless to the plant, but does little against big ones, so treat early. A defoliated plant usually refoliates and still makes a crop if it happens once; repeated strippings are what cost you the harvest.

Chiefly a problem in Florida, the Gulf coast, and the tropics, where the moth overwinters. A single plant defoliated once will normally recover.

Cassava Bacterial Blight Medium DiseaseJun, Jul, Aug, Sep

A bacterial disease (Xanthomonas axonopodis pv. manihotis) that is the most serious cassava disease in the Americas. It starts as angular water-soaked spots between the leaf veins, spreads into blight and wilt, and moves down into the stems, where it causes gumming, dark internal streaking, and shoot dieback. It survives in infected stem cuttings and in crop debris, and spreads by rain splash, tools, and handling wet plants - which means the fastest way to plant a diseased crop is to take stakes from a diseased one.

Watch for: Angular, water-soaked spots on the leaves, confined between the veins, that brown and merge. Leaves wilting, browning at the edges, and dropping from the bottom up. Amber or brown gum oozing from stems and leaf scars. Dark streaks in the pith when a stem is cut lengthwise. Shoot tips dying back, and whole plants collapsing in a wet season.

Prevent: Everything turns on clean planting material: take stakes only from vigorous, symptom-free plants, and cut a stem lengthwise to check for dark pith streaking before you use it. Do not move cuttings from an affected patch. Disinfect saws and loppers between plants, never work the patch when the foliage is wet, space plants for airflow, and remove and destroy crop debris at the end of the season rather than leaving it to overwinter. Rotate to fresh ground where you can.

Treat: There is no cure and no spray worth using in a garden. Rogue out badly affected plants and destroy them - do not compost the stems - and above all do not save planting stock from them. Where the whole patch is affected, harvest what roots you have and start the next season with clean stakes from a different source on different ground.

The variegated ornamental cassava widely sold across Florida, the Gulf coast, and Hawaii as tapioca plant or golden tapioca, grown for the striking cream-and-gold splashed foliage on red-pink stalks. It is the same species as the food crop and just as cyanogenic - the point worth knowing is that a plant bought purely as an ornamental is not a snack, and its small roots are not worth digging. Grow

Plant 8-12 inch stem cuttings into warm, loose, freely drained ground in spring, 3-4 feet apart in full sun, and give them the whole frost-free season.

Cassava is grown from stem cuttings, called stakes, not from seed. Cut mature, firm, at least thumb-thick stems from last season's plants into pieces 8 to 12 inches long, each carrying five or six buds, and plant them once the soil is warm and frost is past. Push the stake two-thirds of its length into the ground at a slant with the buds pointing up, or lay it horizontally under a few inches of soil; shoots come from the buds above and roots from the buds below.

Space plants 3 to 4 feet apart in full sun. Soil texture matters far more than fertility: cassava wants loose, deep, freely drained ground, because the crop is a set of roots that must swell without meeting hardpan or standing water. Sandy loam, ridges, or raised beds are ideal; heavy wet clay rots the stakes and then the roots. Go easy on nitrogen — it grows a tall leafy shrub and small roots — and a little potassium helps the roots fill.

Water the stakes in and keep the ground moist for the first month while they sprout. After that cassava is one of the most drought-tolerant crops there is, and moderate steady water simply grows a better dig than a dry season does.

Care

Weed hard for the first three months, then mostly leave it alone: sun, warmth, drainage and time are what make the crop.

The first two to three months are the only demanding part. Young cassava grows slowly and loses badly to weeds, so keep the bed clean until the canopy closes over; after that the shrub suppresses most competition on its own. Feeding is light. Cassava is ready when the lower leaves yellow and drop, the stems have gone woody, and eight to twelve months have passed since the stake went in. Because the crop is invisible, scrape the soil away from one plant's crown and look: roots two to three inches thick and a foot or more long are worth digging. Harvest everything before the first frost, which kills the tops and starts rot travelling down into the roots.

Cut the stems off about a foot above ground — save them, they are next year's planting stock — then loosen a wide circle with a fork and lift the whole crown. Handle them gently, because every break is a place spoilage starts.

Then move fast. Cassava roots begin to deteriorate within 24 to 72 hours of harvest — a physiological browning that spreads through the flesh in blue-grey streaks — which is why supermarket yuca comes coated in wax. Peel and process what you will eat within a day or two, and freeze the rest.

Storage

The shortest shelf life of any root crop: peel and cook, peel and freeze, or dry into flour within a couple of days - or leave roots in the ground and dig as needed.

Fresh cassava keeps worse than almost anything else you can grow. Left on the counter, an intact root browns and turns off-tasting within two or three days, and refrigeration in a sealed bag stretches that only a little. Plan the harvest around what you can process, not around what you can store.

The reliable options are all forms of processing. Freezing is easiest: peel, quarter, cut out the woody central core, and freeze the pieces raw or blanched — frozen yuca keeps a year and cooks straight from the freezer. Drying is the traditional route: peel, slice or grate, soak or ferment, dry thoroughly, then mill into flour. Grated, pressed and toasted, it becomes gari; washed and settled out, the starch becomes tapioca.

In frost-free zones the ground itself is the best store. Roots can be left on the plant and dug as needed over several months, which is exactly how cassava has served as a famine reserve for centuries, though they slowly go woodier. One thing storage does not do is make cassava safe: chilling and freezing do nothing to the cyanogenic compounds, and while drying and fermenting reduce them substantially, the peeling, coring and thorough cooking are still required at the end.

In the kitchen

Never raw, never undercooked: peel deeply, cut out the core, soak or ferment, then boil until soft through and discard the water - and throw out anything that tastes bitter.

Every cassava dish in the world begins with the same non-negotiable steps. Peel the root completely — both the brown outer bark and the thick pinkish layer beneath it, which is where most of the cyanogenic compounds sit. Cut out the woody central core. Cut it small, into chunks, slices, or gratings, so the processing can reach the middle. Then soak it in fresh water for several hours, changing the water, or ferment it for one to three days as traditional African and Amazonian methods do. Finally cook it through: boil until a fork meets no resistance and discard the cooking water, before frying, roasting, or mashing.

Sweet (low-cyanide) varieties — what is normally sold and grown for the table — need peeling, coring and thorough boiling, with a soak as a sensible extra margin. Bitter varieties require the full grate-soak-ferment-cook treatment and are not a beginner food. If a piece of raw or cooked cassava tastes bitter or numbs your mouth, spit it out and throw the whole root away: bitterness is the plant telling you the glycoside level is high.

Done properly it is wonderful. Boiled yuca dressed with garlic-lime mojo, twice-cooked yuca fries that go glassy outside and fluffy within, Brazilian farofa, West African fufu and gari, Filipino cassava cake, and the tapioca pearls in bubble tea all start from the same root. The leaves are a staple green too — but they are the most cyanogenic part of the plant, and must be pounded or finely chopped and boiled at least 15 to 20 minutes in water you then discard.

Propagation & seed saving

The harvest supplies next year's crop: save a bundle of mature stems, keep them dry, shaded and frost-free, and cut them into stakes in spring.

Cassava propagates from stem cuttings, so digging the crop automatically supplies next year's planting stock. At harvest, select stems from your healthiest, most productive plants — mature, firm, at least thumb-thick, taken from the middle of the stem rather than the soft green tip or the oldest woody base. Cut them into manageable lengths, bundle them, and stand them upright somewhere shaded, dry, and frost-free. They stay viable for one to three months; much longer and sprouting gets patchy.

At planting time cut each stem into stakes 8 to 12 inches long using a clean saw or loppers, keeping five or six buds on each and making square cuts rather than crushing the ends. Discard any piece that is dried out, hollow, or shows dark streaking in the pith. Cassava does flower and set seed, but seedlings are wildly variable and take far longer to crop — seed is for plant breeders, not for gardeners.

One practical caution: cassava planting material is a regulated pathway for pests and diseases. Do not carry stems across international borders, and check with your state department of agriculture before shipping or moving planting stock, particularly into or out of Florida, Hawaii, and Puerto Rico.

Troubleshooting

A big leafy plant with thin roots means too much nitrogen or too short a season; rotten roots mean wet ground; bitter flesh means the processing was not enough.

Tall lush plant, few or thin roots: too much nitrogen, too much shade, or simply not enough season — cassava needs eight warm months minimum, and every week short of that costs root weight. Roots rotted in the ground: waterlogging, heavy soil, or wounds from cultivation — grow on ridges or raised beds in loose, freely drained ground and keep the hoe away from the crown. Stakes never sprouted: planted into cold or soggy soil, planted upside down (buds point up), or cut from immature, dried-out, or hollow stems. Leaves finely stippled, bronzed, with fine webbing: spider mites, which explode on cassava in hot dry weather — hose the undersides down and treat early. Upper leaves stripped overnight, big frass pellets below: cassava hornworm — hand-pick, or use Bt while the caterpillars are small. Angular water-soaked leaf spots, gumming stems, wilting shoots: cassava bacterial blight, which travels on cuttings — never propagate from an affected plant. Blue-grey streaks inside a root days after digging: normal post-harvest deterioration, not disease — process within a day or two. Cooked cassava tastes bitter or numbs the mouth: stop eating and discard it — the processing was insufficient, or the variety is a bitter one.

Growing across climates

A frost-free crop: zones 10 and up grow it easily, zone 9 gets a real if smaller harvest, zone 8 is an experiment, and nothing colder will finish a root.

Zones 3-7: not a crop. Cassava needs eight to twelve continuous frost-free months and there is no way to force that in a temperate garden. Grown in a large container under glass it makes a handsome foliage shrub, but not a harvest. Zone 8: marginal — sprout stakes in pots under cover in late winter, plant out into warmed soil, choose an early sweet variety, and dig at the first frost warning. Treat small roots as a success. Zone 9: the practical northern edge in the United States. Plant in March, dig in November, and expect a real if modest crop. Zones 10-11: cassava country — south Florida, the lower Rio Grande Valley, Hawaii, and warm coastal southern California grow it easily, and roots can be left in the ground and dug as needed. Zones 12-13: ideal; the plant crops year-round and doubles as a hedge or windbreak.

Everywhere it grows, the two limits are frost and drainage. Cassava shrugs off drought, heat, and thin soil — it is one of the crops most often named as climate-resilient — but it will not survive a freeze or a waterlogged root zone.

Nutrition

Pure energy: a dense, gluten-free source of starch with almost no protein - a staple to build a meal around rather than a complete food on its own.

Cassava is a carbohydrate crop and an outstanding one: roughly 38 grams of starch and about 160 calories per 100 grams of cooked root, naturally gluten-free, easy to digest, with useful vitamin C, potassium, and resistant starch. Per acre it yields more food energy than almost any other crop, which is exactly why it feeds so much of the tropics.

What it does not have is protein — barely a gram per 100 — or much beyond vitamin C in the way of vitamins. The leaves are the counterweight: cassava leaves are genuinely protein-rich, around a quarter of their dry weight, and high in vitamin A, iron, and calcium, which is why traditional cuisines eat the root and the leaves together. Treat the root the way you would treat rice or a potato: the starch base of a meal that gets its protein from somewhere else.

One nutrition point is really a safety point. Poorly processed bitter cassava has caused konzo, an irreversible paralysis of the legs, in populations eating it during drought and famine — and the risk is worst where dietary protein is low, because the body needs sulfur-containing amino acids to detoxify cyanide. Process properly and eat a varied diet, and cassava is a safe and valuable food.

History

Domesticated in the Amazon at least 8,000 years ago, carried worldwide by Portuguese ships along with the processing know-how, and now a staple for close to a billion people.

Cassava was domesticated in southwestern Amazonia — the Brazilian state of Rondônia is the strongest current candidate — at least 8,000 years ago, and Indigenous peoples across South America built an entire processing technology around it. The tipiti, a woven tube press that squeezes the toxic liquid out of grated bitter cassava, is one of the great pieces of pre-Columbian food engineering; the pressed liquid, boiled down until it is safe, becomes tucupi, a sauce still used in Amazonian cooking today.

Portuguese traders carried cassava to Africa in the sixteenth century along with that know-how, and it spread across the continent and on into Asia. It became a famine crop of the first order: it stores in the ground rather than in a barn, survives drought and locusts, and grows on soil too poor for grain. Today it feeds something like 800 million to a billion people, and Nigeria, not Brazil, is the world's largest producer.

The names follow the trade routes: yuca in the Spanish-speaking Americas (nothing to do with the ornamental yucca), manioc and mandioca from Tupi, cassava by way of the Taíno, and tapioca from the Tupi word for the starch that settles out of the pressed liquid.
